ROASTED APRICOTS WITH MASCARPONE AND PISTACHIOS



Roasted Apricots with Mascarpone and Pistachios image

6 ripe apricots, cut in half and pit removed
2 tablespoons extra-virgin olive oil
1/4 cup granulated sugar
Kosher salt
1/2 cup cold heavy cream
1 tablespoon confectioners' sugar
1/2 teaspoon vanilla extract
1/2 cup mascarpone cheese
1/4 cup crushed pistachios, toasted

Steps:

  • Preheat the broiler and line a medium baking sheet with aluminum foil.
  • Transfer the apricot halves to the prepared baking sheet and drizzle with the olive oil. Sprinkle with the sugar and some salt. Broil until the apricots are warmed through and the sugar is caramelized on top, 4 to 6 minutes.
  • Meanwhile, whip the cream, confectioners' sugar and vanilla in the bowl of a stand mixer fitted with a whisk attachment. Whisk on medium-high until the cream is fluffy and soft peaks form, about 2 minutes.
  • In a separate bowl, whisk the mascarpone by hand until soft and creamy. Fold in the whipped cream gradually until the two are combined.
  • Remove the apricots from the oven and transfer to a serving plate. Spoon 2 teaspoons of the whipped mascarpone into the cavity of each. Sprinkle with crushed pistachios and serve immediately.

2 tablespoons balsamic vinegar
1 tablespoon clover honey
Juice of 1/2 orange
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more for brushing
12 fresh figs, halved
4 ounces mizuna
6 ounces feta, crumbled
1/2 cup chopped pistachios

Steps:

  • Whisk together the vinegar, honey, orange juice and some salt and pepper to combine. Slowly whisk in the olive oil until emulsified. Set aside.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the figs with some olive oil, season with salt and pepper and grill, cut-side down, just until slightly charred. Remove to a plate.
  • Toss the mizuna with some of the vinaigrette. Transfer the mizuna to a platter and arrange the figs over top. Sprinkle with the feta and pistachios and drizzle some of the remaining dressing over top. Serve at room temperature.

1 refrigerated pie crust (half of 15-ounce package)
2 large navel oranges
1 8- to 8.8-ounce container chilled mascarpone cheese*
1/2 cup chilled heavy whipping cream
1/4 cup sugar
2 tablespoons honey, divided
1/4 teaspoon (generous) ground cardamom
2 tablespoons chopped pistachios
*Italian cream cheese; available at many supermarkets and Italian markets.

Steps:

  • To cool the crust quickly, place it on a rack, position a fan a few feet away (aiming toward the crust), and turn the fan on medium speed.
  • Preheat oven to 400°F. Press pie crust onto bottom and up sides of 9-inch-diameter tart pan with removable bottom; fold sides in and press to extend sides 1/4 inch above rim of pan. Pierce crust all over with fork. Bake until golden brown, about 24 minutes. Cool completely on rack.
  • Meanwhile, grate enough orange peel to measure 1 1/4 teaspoons. Cut off remaining peel and pith from oranges. Slice oranges into thin rounds, then cut rounds crosswise in half. Place orange slices on paper towels to drain slightly.
  • Combine mascarpone, cream, sugar, 1 tablespoon honey, cardamom, and orange peel in medium bowl. Using electric mixer, beat just until blended and peaks form (do not overbeat or mixture will curdle). Spread filling evenly in cooled crust. Arrange orange slices atop tart in concentric circles; sprinkle with pistachios. Drizzle with remaining 1 tablespoon honey and serve.

Pinch of coarse kosher salt
1/4 cup unsalted pistachios, toasted
1/2 cup mascarpone cheese
2 tablespoons heavy whipping cream
2 tablespoons orange blossom honey
1 teaspoon finely grated orange peel
12 fresh black Mission figs or other figs, stemmed, halved lengthwise

Steps:

  • Line baking sheet with foil. Stir sugar and 1 tablespoon water in small skillet over medium-low heat until sugar dissolves. Increase heat to medium-high; boil until syrup turns deep amber, occasionally swirling skillet and brushing down sides with wet pastry brush, about 5 minutes. Remove from heat; add salt and nuts. Stir to coat and transfer to prepared sheet. Cool.
  • Stir mascarpone, cream, honey, and orange peel in small bowl. Coarsely chop brittle. Arrange figs on plate. Spoon 1 teaspoonful mascarpone mixture atop cut side of each fig; garnish with brittle.
