BACON WRAPPED GREEN BEAN BUNDLES

Ditch that old, soggy green bean casserole this holiday season, and cook up these sweet and savory Bacon Wrapped Green Beans for your next holiday meal!

1 ½ pounds green beans (trimmed)
4 strips bacon (cut in half)
3 Tablespoons butter (melted)
½ cup brown sugar
2 cloves garlic (minced)
2 teaspoons soy sauce
1/2 teaspoon cracked black pepper

Steps:

  • Bring a large pot of water to a boil. Submerge the green beans in the water, cover with a lid, and boil for 8 minutes. Drain the water from the pan and cool the green beans completely.
  • In a large bowl combine the butter, brown sugar, garlic, and soy sauce. Toss the cooled green beans in the butter and brown sugar mixture.
  • Taking 8-10 green beans in a bundle, wrap tightly with a strip of bacon around the center. Secure with a toothpick if necessary. Sprinkle each bundle with cracked black pepper. Repeat with the remaining bacon and green beans.
  • When ready to cook, start your pellet grill on the smoke setting with the lid open for 4-5 minutes to establish the fire. Close the lid and set the temperature to the highest setting (about 400-425 degrees). Allow the grill to preheat for 10-15 minutes.
  • Place the green bean bundles on the grill and cook for 10-15 minutes, turning as needed, until the bacon is crisp and the green beans are tender. Serve immediately.

1 lb fresh green beans
4-6 slice thick bacon
4-6 slice portabello, sliced, opt
4-6 slice onion slices, opt
4-6 slice red bell slices, opt

Steps:

  • 1. Blanche green beans for about 5 minutes, then place in ice water to stop the cooking process.
  • 2. Lay a pcs. of bacon flat, in the middle place 6ish green beans, a slice of mushroom, red bell & onion. Wrap bacon around securing with toothpicks.
  • 3. Cook on grill on upper rack over low heat for approx. 15 mins. with lid closed.

8 oz green beans, fresh
1 Tbsp lemon juice
1 Tbsp olive oil, extra virgin
1 tsp garlic powder
1/2 tsp salt
pepper to taste
parmesan cheese

Steps:

  • 1. Mix all ingredients except the parmesan cheese in a large ziplock bag. Let flavors marinate for 10 minutes or so.
  • 2. Put on a grill over medium heat, turning frequently until crisp tender. About 10 minutes. (Use one of those special grill skillets or a cast iron skillet if you are worried about losing beans through the cracks.)
  • 3. Remove beans from heat, sprinkle with parmesan cheese. Easy!

Steamed and then baked, these scrumptious green beans take on great flavor, because they are wrapped in bacon and bathed in a savory sauce. This recipe is best when you marinate the bundles overnight.

10 slices bacon
1 pound fresh green beans
1 cube beef bouillon
4 tablespoons Worcestershire sauce
2 teaspoons soy sauce
2 tablespoons butter
2 tablespoons brown sugar
½ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until partially cooked. Drain, cut each piece in half, and set aside.
  • Bring a large pot of water to a boil. Place the green beans on a rack or special steamer basket over the boiling water. Cover with a lid so that the steam does not escape. Steam for a few minutes until the green beans are done. Set the green beans aside. Reserve about 2 cups of the water and dissolve the bouillon cube in it.
  • Take a bundle of green beans (4 or 5) and wrap them with a piece of bacon. Secure with a toothpick if necessary. Place the bundles in a shallow baking dish.
  • In a saucepan over medium heat, combine the reserved stock with the Worcestershire sauce, soy sauce, butter, brown sugar, and garlic powder. Stir until the sugar is dissolved.
  • Pour the sauce over the bundles and bake in a preheated 350 degrees F (175 degrees C) oven for 20 minutes or until the bacon is done.

We have so many garden vegetables right now and this is a nice way to use up some of them. This would make a nice appetizer or a side dish for a cook out. The sauce makes these little bundles. You may also have some left over zucchini and squash depending on how small they are.

10 slices deli ham, cut in half
5 peeled baby carrots, quartered in strips
1 small zucchini, cut into 1 inch strips
1 small yellow squash, cut into 1 inch strips
1 small red onion, sliced
2 cups water
4 tablespoons dry sherry
4 tablespoons light soy sauce
2 teaspoons sugar
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger

Steps:

  • For the sauce combine the last 5 ingredients and set aside.
  • In medium saucepan bring 2 cups of water to a boil.
  • Add carrots and boil for 2 minutes.
  • Add onion and boil another minute.
  • Add zucchini and squash and boil for 30 seconds.
  • Remove from stove and drain and rinse with cold water.
  • On a work surface place 1/2 piece of ham and in the center add 2 zucchini strips, 2 squash strips 1 onion strip and 1 carrot strip. Fold the lower end over the vegetables and then the other end.
  • Place bundle on metal skewers with the folded side first and repeat until you have all the ham used up.
  • Place them touching each other slightly on the skewers.
  • Preheat your grill to medium heat.
  • Coat the cooking grate with oil.
  • Brush each bundle with the sauce and place on grill.
  • Cook with lid open for 15-20 minutes until the ham turns slightly brown, basting with the sauce every 5 minutes and turning gently 4 times.
  • Remove from the grill and enjoy.
