This recipe is simple to make, yet impressive. The marinade gives the fish a sweet taste that my family goes nuts for! If it's too cold out to grill it, you also may broil it.

1 teaspoon garlic powder
⅓ cup soy sauce
⅓ cup orange juice
¼ cup honey
1 green onion, chopped
1 (1 1/2-pound) salmon fillet

Steps:

  • In a large self-closing plastic bag, combine ginger, garlic, soy sauce, orange juice, honey, and green onion; mix well. Place salmon in bag and seal tightly. Turn bag gently to distribute marinade. Refrigerate for 15 to 30 minutes.
  • Preheat an outdoor grill for medium heat and lightly oil grate.
  • Remove salmon from marinade, shake off excess, and discard remaining marinade. Grill for 12 to 15 minutes per inch of thickness, or until the fish flakes easily with a fork.

8 baby bok choy (about 3/4 pound), bruised outer leaves removed
1 tablespoon Asian sesame oil
2 tablespoons sake or rice wine vinegar
2 tablespoons soy sauce
2 garlic cloves, minced
1 (1-inch) piece fresh ginger, peeled and minced
1 (2-pound) salmon fillet with skin
2 limes, cut into quarters
Special equipment: Gas or charcoal grill

Steps:

  • Prepare a gas or charcoal grill to moderately high heat.
  • Trim 1/8 inch from the bottom of each bok choy, then cut into quarters. Wash the bok choy in several changes of cold water and dry in a colander or salad spinner.
  • In a small bowl, whisk together the sesame oil, sake, soy sauce, garlic, and ginger.
  • On a large baking sheet, arrange 2 (12 by 24-inch) pieces of heavy-duty foil, overlapping them in the center to form a cross. Brush the entire surface of the salmon with the sesame oil mixture, then sprinkle with salt and pepper and place skin side down in the center of the foil. Arrange the bok choy on top of the salmon, then fold the foil into a packet, sealing in the salmon and bok choy.

1 1/4 teaspoons garam masala
2 tablespoons unsalted butter, cut into pieces
4 10-ounce skin-on salmon steaks (preferably wild)

Steps:

  • Preheat a grill to medium high. Grate the tomatoes on the large holes of a box grater into a medium bowl; discard the skins. Stir in 1/3 cup cilantro, the vinegar and ginger; season with salt and pepper. Set aside.
  • Spread the cauliflower florets on one half of a 24-inch-long piece of foil; sprinkle with 1/4 teaspoon garam masala and dot with the butter; season with salt and pepper. 2 tablespoons freshly coarse-ground black pepper
1/2 cup hoisin sauce
1/4 cup scallions, white and green parts, thinly sliced
3 tablespoons sesame seeds, toasted

Steps:

  • In medium bowl, stir together plums, ginger, and vinegar. Refrigerate until ready to serve.
  • Prepare grill for cooking: If using charcoal grill, open vents on bottom, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 4 to 5 seconds. If using gas grill, preheat burners on high with hood closed 10 minutes, then turn down to moderately high.

1⁄3 cup balsamic vinegar

4 cloves garlic, peeled and minced
½ to ¾ tsp hot-red-pepper flakes

1 (3-lb) side of salmon, skin on, boned
3 to 4 Tbsp extra-virgin olive oil

  • 1. Prepare a charcoal fire, or preheat a gas grill for direct grilling over medium flame. 2. In a small bowl, mix together the first six ingredients. 3. Using a pastry brush, coat both sides of the salmon with olive oil. 4. Place the salmon, flesh side down, on the grill. Cook until it loosens its grip on the grill, 7 to 8 minutes. Turn carefully, then spoon the sauce over the cooked side of the fish. Grill until the sauce has formed a glaze and the salmon flakes with a fork but is still a bit opaque in the center, about 4 to 5 minutes. 5. Remove from the grill and serve.

30 ounces salmon, skin and pin bones removed (6 5-oz portions)
olive oil
salt
pepper
6 tablespoons creole mustard
6 tablespoons honey
6 tablespoons corn syrup
3 tablespoons fresh ginger, grated
2 tablespoons lemon juice
1 tablespoon fresh dill, chopped

Steps:

  • Salmon:.
  • Heat your grill to medium-high heat. Lightly coat your salmon with a little olive oil and lightly season with salt and pepper. Start cooking your salmon with the inner side down. Grill over medium-high heat for 2 minutes, then rotate 45 degrees and sear for 2 more minutes. (To create a crosshatch pattern). Flip fillets and finish grilling. After 2 minutes turn fillets 45 degrees, then grill 2 minutes more until they are medium-rare.
  • One minute before removing from the grill, spoon 1-2 tbsp of the Creole mustard-ginger glaze over the crosshatched fillets.

2 (5 ounce) boneless skinless salmon fillets
1 red chili pepper, deseeded and finely chopped
3/4 cup fresh cilantro, chopped
1 lime, halved, for serving
2 tablespoons olive oil
10 1/2 ounces water
1 onion, chopped
1 teaspoon fresh ginger, finely chopped
1 garlic clove, thinly sliced
4 ounces basmati rice

Steps:

  • Heat 1 tablespoon oil in a pan and at the same time put the water in another pot and bring to a boil.
  • Fry the onion for a few minutes until lightly browned.
  • Stir in the ginger and garlic for 1 minute, then stir in the rice.

  • Grill/broil again for just 4-5 minutes until the salmon is cooked through.
  • Serve with the rice and line halves for squeezing over.

  • Pour remaining lime juice mixture over salmon and turn to coat.
  • Marinate at room temperature for 15 minutes, turnig once (Do not marinate longer than 30 minutes or the salmon will go mushy).
  • Preheat bbq to medium high and grease grill.
  • Bbq salmon turning once, until cooked through, about 3 to 4 minutes on each side.
  • Remove to platter and spoon reserved lime juice mixture over salmon.
  • Serve immediately.
  • If you wish to broil salmon, place on a rack set over a pan.
  • Broil about 4 inches from heat, turning once, until salmon is cooked through, about 3 to 4 minutes per side.

I found this recipe in a book called Cook This Not That. It is supposed to be a lower calorie, fat and sodium replacement for PF Chang's Asian Grilled Salmon dish.

2 tablespoons butter, unsalted and softened
1/2 tablespoon chives, chopped
1/2 tablespoon ginger, fresh grated
1 -2 tablespoon lemon juice
1/2 tablespoon soy sauce, low sodium
24 ounces salmon, 4 fillets
salt and pepper
1 tablespoon olive oil

Steps:

  • Mix the butter, chives, ginger, lemon juice and soy sauce and set aside.
  • Preheat a grill or grill pan. Season the salmon with s & p and rub with the oil. Wipe the grill grates clean and rub with a paper towel dipped in oil. Add the salmon skin side down and cook for 4-5 minutes, until the skin is lightly charred and crisp.
  • Flip the fish and cook for another 2-3 minutes on the flesh side until the flesh flakes with gentle pressure from your finger but is still slightly translucent in the middle. (This will cook it to medium for well done leave it on another 2-3 minutes).
  • Serve the salmon with a generous spoonful of the flavored butter, which should melt on contact.

One pound skinned salmon fillet
3 tbs. sesame oil
1/2 cup soy sauce
Fresh ginger slices
Powdered ginger
Oyster sauce

Steps:

  • Mix sesame oil and soy sauce. Add slices of fresh ginger. Pour mixture over skinned salmon fillets so that salmon is not totally covered but is well coated. Sprinkle ground ginger over fillets. Drip oyster sauce over fillets. Marinate for one to two hours Grill salmon fillets over hot grill (indirect method otherwise it will flame up), 3-4 minutes per side, shorter or longer depending on thickness of salmon -- it should remain creamy inside. Turn only once.
