1/2 fresh pineapple, trimmed and cut into 1-inch chunks
3 medium nectarines, cut into 1-inch chunks
3 medium pears, cut into 1-inch chunks
3 medium peaches, cut into 1-inch chunks
3 to 4 medium plums, cut into 1-inch chunks
10 apricots, halved
3 tablespoons honey or light corn syrup, warmed

Steps:

  • Thread fruit alternately onto metal or soaked wooden skewers. Grill, uncovered, over medium-hot heat until fruit is heated through, about 6 minutes, turning often. Brush with honey or corn syrup during the last minute of grilling time.

½ cup margarine
¼ cup honey
3 fresh peaches, pitted and quartered
3 fresh plums, pitted and quartered
3 bananas, cut into 4 pieces each
12 strawberries, hulled
12 skewers

Steps:

  • Preheat an outdoor grill for medium heat and place a large sheet of foil onto the grate.
  • Melt the margarine and honey together in a small saucepan over medium heat. Reduce heat to low and cook gently, stirring occasionally, until slightly thickened, about 5 minutes. Do not let the sauce boil.
  • Thread a peach quarter, a plum quarter, a banana piece, and a strawberry onto each skewer. Place the skewers onto the foil on the preheated grill; spoon margarine-honey mixture over each skewer.
  • Grill until the fruit is softened and the sauce has thickened and cooked onto the fruit, about 5 minutes. Flip the skewers, spoon more margarine-honey sauce over each, and grill for about 5 more minutes on the other side.

4 (10-inch) skewers
1/2 cup brown sugar
1/4 cup water
1 teaspoon ground cinnamon
1/2 orange, juiced, plus remaining half zested, reserved from Chicken Satay recipe
1 (20-ounce) can pineapple chucks, reserve the juice and 4 pieces for cocktail
2 nectarines, cut into 1-inch chucks
1 mango, peeled, flesh cut into 1-inch chucks
1 (8-ounce) container vanilla yogurt

Steps:

  • If you are using wooden skewers, soak them in water for at least 30 minutes.
  • In a small pot combine the brown sugar with 1/4 cup water, cinnamon and orange zest. Bring to a boil over medium heat. Remove from heat and set aside to cool to room temperature.
  • Preheat the grill or grill pan over low heat.
  • Thread 2 pieces of each type of fruit onto each skewer. Grill the skewers until the fruit is warm and lightly charred about 6 minutes giving the skewers a quarter turn every 1 1/2 minutes. Make sure to brush with the brown sugar syrup after each turn.
  • While the fruit is grilling, make the dipping sauce. Whisk together the yogurt, orange juice, and 1 tablespoon of the brown sugar syrup in a serving bowl. Reserve 2 tablespoons for the Online Round 2 recipe Sweet and Spicy Chicken Wraps.

2 nectarines
2 plums
Fresh mint leaves
1 cup maple syrup
1 cup cocoa powder
1/4 teaspoon orange extract

Steps:

  • Cut the fruit into bite sized chunks. Thread a piece of each fruit onto a skewer along with a mint leaf. Set aside.
  • In a small saucepan over medium heat, add the maple syrup. Whisk in the cocoa powder until the mixture is smooth. Stir in the orange extract and cook until hot. Don't let it come to a boil. Spoon into a serving dish and serve immediately as a dipping sauce with the fruit skewers.

1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

1/2 cup pure maple syrup
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
4 cups fruit chunks such as pineapple, peaches, and/or bananas

Steps:

  • Build a charcoal fire for direct grilling. Soak the bamboo skewers in a bowl of water and set aside.
  • Combine the glaze ingredients in a medium bowl and mix well. Add the fruit and toss gently to coat with the glaze. Cover and refrigerate.
  • Thread the fruit on the soaked skewers, alternating each fruit type. Place the skewers on the grill and cook directly over medium-high heat for 1 1/2 minutes on each side, or until browned and caramelized. Serve warm.

1 medium ear fresh or frozen sweet corn, thawed and quartered
1 small zucchini, quartered
1/4 small red onion, halved
4 cherry tomatoes
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the corn on a microwave-safe plate. Cover with waxed paper. Microwave on high for 2 minutes. , On two metal or soaked wooden skewers, alternately thread the corn, zucchini, onion and tomatoes. Lightly coat vegetables with cooking spray. In a small bowl, combine the seasonings; sprinkle over vegetables. , Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
