Nonstick cooking spray, for the grill grates
3 to 4 large russet potatoes, cut lengthwise into 1/4- to 1/2-inch oval slices
Kosher salt and freshly ground black pepper
Garlic Oil, recipe follows
4 cloves garlic
3/4 teaspoon kosher salt
1 cup extra-virgin olive oil
2 tablespoons finely diced fresh chives
2 tablespoon chopped fresh parsley
Juice of 1/2 lemon

Steps:

  • Heat grill to medium heat and oil the grates with cooking spray.
  • Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
  • Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

6 medium red skinned potatoes, scrubbed
6 tbsp unsalted butter
6 tbsp chopped fresh chives
1 tsp finely grated lemon peel

Steps:

  • 1. Cook whole potatoes in two steamer bags for 6 minutes in Microwave or if you don't have steamer bags- Cook potatoes in a large pot of boiling salted water until tender, 25-30 minutes. Drain or remove from steamer bags, Cool slightly, then cut in half;place cut side up on a rimmed baking dish. Press each potato gently with fork to flatten slightly 2.Stir butter, chives, lemon peel in a medium saucepan over medium heat until butter melts. Season with Salt and Pepper to taste. Brush chive butter over potatoes 3. Coat grill rack with Pam. Prepare barbeque( medium high heat). Grill potatoes cut side down until cut side is crsip and brown, 10-12 minutes. rewarm remaining chive butter. Transfer potatoes, cut side up to platter. Drizzle with warm chive butter NOTE: These are a great side to the chicken kabobs

Steps:

  • Poke each potato with the tines of a fork. Place the potatoes in a microwave oven, and cook on high power for about 5 minutes. Check about halfway through, and turn potatoes over for even cooking. Slice each potato in half the long way and cook potatoes another 2 minutes on high power.
  • Preheat a grill for medium heat.
  • Brush the potato tops with olive oil, and season with salt and pepper to taste.

5 medium red potatoes, sliced into 1/4 inch slices
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons minced chives, plus more for garnish
1/4 teaspoon kosher salt, plus a pinch more
1/4 teaspoon pepper
1/2 teaspoon garlic, powde

Steps:

  • Place sliced potatoes in pot and cover with water. Bring to a boil and cook just until fork tender, 3 - 4 minutes. Drain.
  • In a bowl combine mayonnaise, sour cream, chives, salt, pepper and garlic powder. Mix well.
  • Preheat grill.
  • Reserve 1/4 cup of chive sauce. Dip boiled potatoes into remaining chive sauce, coat completely. Repeat until all potatoes are coated.
  • Place potatoes on the grill and cook until browned and tender.
