CHILI FRIES

1/2 bag (about 16 ounces) french-fried potatoes (recommended: Ore-Ida Golden Crinkles)
1 pound ground beef
1 (12-ounce) bottle chili sauce (recommended: Heinz)
1 packet chili seasoning (recommended: Lawry's)
1/2 cup water
1 teaspoon Worcestershire sauce
1 tablespoon yellow mustard
1/2 teaspoon onion powder
Shredded Cheddar, optional (recommended: Kraft)

Steps:

  • Preheat oven to 450 degrees F.
  • Lay fries in a single layer on a baking sheet. Bake in preheated oven for 20 to 25 minutes, turning halfway through cooking, until crisp and golden.
  • In a large pot over medium heat, break up ground beef and brown, stirring constantly to break up all the clumps to fine ground.
  • Add remaining ingredients through the onion powder. Bring to boil. Lower heat and simmer for 30 minutes. Serve hot fries on a plate smothered with chili and topped with shredded cheese, if using.

3 pounds Idaho potatoes
1/2 cup canola oil
2 tablespoons ancho chili powder
1 tablespoon kosher salt
2 teaspoons ground cumin
Ketchup, for serving

Steps:

  • Cover the potatoes with cold water in a large saucepan and cook until almost tender. Drain and dry the potatoes. Cut each potato lengthwise into quarters. Place the potatoes on a baking sheet and brush both sides of the potatoes with oil. Combine the chili powder, salt, and cumin in a small bowl, and sprinkle over the potatoes. Grill the potato wedges for 3 to 4 minutes per side until golden brown. Serve with ketchup.

1 medium onion, chopped
1 medium carrot, finely chopped
2 pounds beef stew meat (cut into 1/2-inch pieces)
3 tablespoons all-purpose flour, divided
2 tablespoons canola oil
1 can (14-1/2 ounces) Mexican diced tomatoes
1 envelope (1.25 ounces) chili seasoning mix
1 can (15 ounces) pinto beans, rinsed and drained
1 medium green pepper, chopped
1 jalapeno pepper, seeded and finely chopped
2 packages (32 ounces each) frozen french-fried potatoes
2 cups shredded sharp cheddar cheese
Optional toppings: Sour cream and sliced jalapeno peppers

Steps:

  • Place onion and carrot in a 5-qt. slow cooker. Toss beef with 2 tablespoons flour. In a Dutch oven, heat oil over medium heat; brown beef in batches. Transfer meat to slow cooker. , Drain tomatoes; reserving liquid. In a small bowl, whisk drained liquid, chili seasoning and remaining flour until blended; pour over beef. Stir in the tomatoes, beans and peppers. Cook, covered, on low until meat is tender, about 6 hours., Prepare fries according to package directions. Serve chili over fries; sprinkle with cheese. If desired, top with sour cream and jalapeno slices.

6 large Yukon gold potatoes, scrubbed
1/4 cup canola oil
Kosher salt and freshly ground black pepper, for seasoning
Chile-Cheese Sauce, recipe follows
Fresh chopped cilantro leaves
Serving suggestions: Bobby's Mexican Fry Seasoning or Spanish Paprika Mayo Sauce, recipes follow
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 1/4 cups whole milk, heated
10 ounces grated white Cheddar
3 jalapeno chiles, grilled, peeled, seeded and finely diced
Pinch chile de arbol
Salt and freshly ground black pepper
1 1/2 tablespoons ancho chile powder
1 teaspoon ground cumin
1 teaspoon granulated onion
1/2 teaspoon dried oregano
2 teaspoons kosher salt
1 cup mayonnaise
1 tablespoon aged sherry vinegar
2 cloves finely chopped garlic
1 grilled plum tomato
2 teaspoons smoked Spanish paprika
Salt and freshly ground black pepper
2 tablespoons finely chopped flat-leaf parsley, plus leaves for garnish

Steps:

  • Place the potatoes in a large pot and cover with cold water. Bring the water to a boil, over medium heat, then reduce heat to a simmer and add 2 tablespoons of salt. Cook until potatoes are tender, but still firm, about 10 minutes. Drain, let cool and cut each potato lengthwise into 8 slices.
  • Heat grill to medium-high. Brush the potatoes with the oil and season with salt and pepper. Grill until golden brown and cooked through, about 2 to 3 minutes per side. Transfer the potatoes to a platter and drizzle with the sauce, garnish with fresh cilantro or serve sauce, on the side, as a dip.
  • Melt the butter in a small saucepan over medium heat, add the flour and cook for 1 minute. Slowly whisk in the milk and cook until thickened, about 3 minutes. Whisk in the cheese a little at a time until smooth.
  • Add the jalapenos, chile de arbol and season with salt and pepper. Keep warm.
  • Combine all ingredients in a small bowl.
  • Put mayonnaise, vinegar, garlic, tomato and paprika in food processor and process until smooth; season with salt and pepper. Scrape into a bowl and stir in the parsley.

BAKED SMOKED CHILI FRIES

4 medium baking potatoes, washed, cut into 1/8's lengthwise
1 teaspoon smoked chili powder
1 1/2 teaspoons coarse salt
Cracked black pepper
2 teaspoons olive oil

Steps:

  • Preheat oven to 450 degrees F. Place potatoes, chili powder, salt, pepper, and oil in plastic bag. Shake vigorously to coat potatoes evenly with all ingredients. Spread out on a cookie sheet. Do not over crowd or overlap potatoes or they will steam. Bake 20 to 25 minutes, turning once, until golden and cooked through.
  • Remove from oven and let stand 5 minutes. They will come off tray easily.

BAKED FRESH CHILI FRIES

6 large jalapeno peppers
4 large poblano peppers
1 cup all-purpose flour, plus 2 tablespoons
3 large eggs, beaten
1/4 cup milk
2 tablespoons spicy mustard (recommended: Gulden's)
1 cup bread crumbs
1/2 cup grated Parmesan or Romano
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the seeds from all of the peppers and cut into 1/2-inch lengthwise strips.
  • Set up a breading station: 1 pan of 1 cup of flour, 1 pan of eggs beaten with milk, 2 tablespoons of flour and mustard, and 1 pan of bread crumbs seasoned with cheese, and salt and pepper, to taste.
  • Coat the peppers in the flour, then in the egg mixture and then in the bread crumbs.
  • Arrange the chili fries on a nonstick baking sheet and roast for 18 minutes, turning once.
  • Remove from the oven and transfer to a serving platter.

SEASONED GRILLED FRIES



Seasoned Grilled Fries image

Here is a nice technique for grilling fries that is pretty low calorie and also tasty. The whole family liked these, and next time we want "French Fries" I will probably make these. They are easier and healthier and yummier. From Bobby Flay and "Boy Meets Grill" on Food Network. I don't have "ancho chili powder", so I just used regular chili powder.

3 lbs idaho potatoes
1/2 cup canola oil
2 tablespoons dried ancho chile powder
1 tablespoon kosher salt
2 teaspoons ground cumin

Steps:

  • Put the potatoes, unpeeled, into a large pot and cover with cold water. Bring to a boil and simmer until almost tender, about 15-20 minutes. Do not overcook, or they will fall apart and you won't be able to cut them into fries.
  • Drain and dry the potatoes and allow to cool enough to handle.
  • Carefully cut each potato lengthwise into about 6 wedges. (Original recipe said 4 wedges, but those are too thick in my opinion.) You do have to be careful, since they are already cooked, that they could crumble or fall apart.
  • Place the wedges on a baking sheet and brush both sides of the potatoes with oil.
  • In a small bowl combine chili powder, salt and cumin. Sprinkle over the potatoes.
  • Grill the potato wedges for 3 to 4 minutes per side, until golden brown.
