This tangy take on grilled cheese is a meal in itself, but would be great with a side of chicken chili. -Leslie Neely, Albuquerque, New Mexico

1/4 cup mayonnaise
8 slices whole wheat bread
4 slices process American cheese
4 slices Monterey Jack cheese
1 can (4 ounces) chopped green chilies
8 teaspoons butter

Steps:

  • Spread mayonnaise over four slices of bread; layer with cheese slices and green chilies. Top with remaining bread., Butter outsides of sandwiches. In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

Many years ago I worked for the Women's, Infants and Children's (WIC) Nutrition Program in Texas. We were always teaching the parents how to prepare different foods for their families that were tasty and nutritious. After all, what good does it do us to give them food if the kids won't eat it? One of my clients favorites was this recipe for Grilled Chili Cheese Sandwiches. I have to admit, everyone in the office loved when we prepared these bacause they got to eat, too!

Number Of Ingredients 5

2 slice(s) bread, your choice
1 slice(s) cheese, your choice
1 slice(s) onion
- butter or margarine for bread
- chili powder to taste

Steps:

  • Preheat skillet over medium heat. Using a small amount of vegetable oil or butter, sautee onion until desired doneness / carmalization. (I like mine well carmalized and sweet! So do most kids!) Remove onion from skillet.
  • Melt enough butter in skillet to cover both sides of 2 slices of bread. Let brown on one side and turn slices. Place a slice of cheese on top of one of the slices of bread. Sprinkle Chili Powder over the cheese. Top with onions.
  • Place the other slice of bread on top of the sandwich. Lightly press down on top. Continue to heat in skillet over medium heat, turning frequently until heated through. Remove from skillet and place on plate. Cut in half. Serve with tomato soup for a fast, satisfying meal.
  • Please remember, this recipe was tested for items our clients could easily obtain. Using different types of bread / cheeses can make for some very tasty sandwiches and or appetizers! The possibilities are endless!
