This grilled cilantro lime chicken recipe delivers lots of flavor thanks to a quick marinade, and with just 7 ingredients and 3 steps, it's easy enough to cook any night of the week.

3 pounds skinless chicken thighs
4 limes (, zested and juiced)
1 cup roughly chopped cilantro leaves and stems
1/2 cup extra virgin olive oil
2 tablespoons honey
1 tablespoon cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
extra cilantro (, for garnish)

Steps:

  • Trim any fat from the chicken thighs and place in a large freezer bag. To the bowl of a food processor, add the lime juice, lime zest, cilantro, olive oil, honey, cumin, salt and pepper and whiz to combine, about 30 seconds. Reserve 1/3 cup of the marinade and pour the rest into the bag with the chicken. Refrigerate for 30 minutes up to overnight.
  • Prepare a grill on medium high at 450°F, leaving one side of the grill on low or off. Grill the chicken for 5-6 minutes per side, basting each side the last time it's turned. Once each side has seared, if the chicken pieces seem to be getting too charred, move the chicken pieces to the cooler side of the grill to cook.
  • To redistribute the juices, let the chicken sit for 5 minutes before serving. Serve with lime wedges and additional cilantro and drizzle the rest of the reserved marinade before serving.

2 tablespoons extra-virgin olive oil
1 1/4 pounds skinless, boneless chicken thighs
Kosher salt and freshly ground pepper
2 teaspoons ground cumin
1 onion, chopped
1 poblano chile pepper, seeded and chopped
3 cloves garlic, minced
4 cups low-sodium chicken broth
3 cups frozen chopped collard greens, thawed
1 15-ounce can white chili beans
1 cup canned or jarred crushed tomatillos
2 scallions, thinly sliced

Steps:

  • Heat a large pot over high heat and add 1 tablespoon olive oil. Season the chicken with salt, pepper and 1 teaspoon cumin. Working in batches if necessary, add the chicken to the pot and cook until golden, 4 to 5 minutes per side. Remove to a plate.
  • Add the remaining 1 tablespoon olive oil, the onion and poblano to the pot and cook, stirring occasionally, until softened, about 2 minutes. Add the garlic and remaining 1 teaspoon cumin; cook until golden, 30 seconds. Stir in the chicken broth, collards, chili beans and tomatillos. Stir in the chicken and any juices from the plate. Cover and bring to a boil, then uncover and reduce the heat to a steady simmer. Cook until the chicken is tender, about 15 minutes.
  • Shred the chicken in the pot with 2 forks. Divide the chili among bowls and top with the scallions.

8 boneless skinless chicken thighs (1.6 kg or 3.5 lbs)
2 teaspoons coriander seeds (or cilantro seeds)
4 small fresh red Thai chile, chopped coarsely
1 teaspoon ground cumin
2 whole cloves
2 cardamom pods, bruised
1/4 teaspoon ground turmeric
10 cm stick lemongrass (3.94 inches or 20 g or .7 oz. wt.)
2 medium brown onions (300 g or 10 oz. wt., chopped coarsely) or 2 medium yellow onions (300 g or 10 oz. wt., chopped coarsely)
4 garlic cloves
1/3 cup lime juice (80 ml)
2 teaspoons coarse salt
2 tablespoons peanut oil

Steps:

  • MAKE CORIANDER AND CHILI PASTE:.
  • Blend or process ingredients until mixture forms a smooth paste.
  • MARINATE CHICKEN THIGHS:.
  • Pierce chicken all over with a sharp knife. Combine chicken and paste in a large bowl. Rub paste into cuts.
  • Cover. Refrigerate overnight.
  • COOK CHICKEN:.
  • Cook chicken, covered in heated, oiled grill pan, 5 minutes.

1 tablespoon extra-virgin olive oil, plus more for brushing
1 small clove garlic, finely grated
1 1/2 teaspoons ancho chile powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon paprika
1/4 to 1/2 teaspoon chipotle chile powder
4 teaspoons fresh lime juice, plus lime wedges for serving

2 tomatoes, diced
3 tomatillos, husked, rinsed and diced
1/4 cup finely diced red onion

Steps:

  • Butterfly the chicken: Slice each breast almost in half horizontally (do not cut all the way through); open like a book so the chicken lies flat.
  • Combine the olive oil, garlic, ancho chile powder, cumin, coriander, paprika, chipotle chile powder, 1 teaspoon lime juice and 1 1/4 teaspoons salt in a large bowl. Add the chicken and turn to coat. Cover and refrigerate at least 30 minutes and up to 2 hours.
  • Preheat a grill to medium. Meanwhile, make the salsa: Toss the tomatoes, tomatillos, red onion and the remaining 3 teaspoons lime juice in a bowl; season with salt. Cover and refrigerate until ready to serve.

2 skinless chicken breasts
1 tbsp vegetable oil
1 ½ tbsp sriracha chilli sauce (see tip below)
2 tsp grated ginger
2 tbsp clear honey
2 tbsp rice vinegar
240g pack Tenderstem broccoli
1 tbsp sesame seeds , toasted

Steps:

  • Slice each chicken breast lengthways into 2 thin pieces. Rub with the oil and season on both sides. Heat a grill pan and cook the pieces for 2-3 mins each side.
  • While the chicken is cooking, mix the chilli sauce, ginger, honey and vinegar with a little seasoning in a small bowl. Brush over the chicken as it cooks - wait until it is grilled on one side first before brushing, or it will burn.
  • Blanch the broccoli, divide between the plates and pour over the remaining sauce. Top with the chicken and sesame seeds.

3/4 cup loosely packed fresh cilantro sprigs
1/4 cup olive oil
2 shallots, chopped (1/2 cup)
1 large garlic clove, chopped
1 teaspoon finely grated fresh lemon zest
2 teaspoons fresh lemon juice
1 fresh serrano chile, minced, including seeds
1 teaspoon ground coriander
1 teaspoon sugar
3/4 teaspoon salt
1 (3- to 3 1/2-lb) chicken, rinsed and patted dry
1/4 teaspoon black pepper
1 tablespoon unsalted butter, melted and cooled
Special Equipment
kitchen string; a large chimney starter (if using charcoal); an instant-read thermometer

Steps:

  • Purée cilantro, oil, shallots, garlic, lemon zest and juice, chile, coriander, sugar, and 1/2 teaspoon salt in a food processor until it forms a paste. Leave any fat in opening of chicken cavity and sprinkle cavity with pepper and remaining 1/4 teaspoon salt. Starting at cavity end, gently slide an index finger between skin and flesh of breast and legs to loosen skin (be careful not to tear skin). Using a small spoon, slide cilantro purée under skin over breast and drumsticks, using your finger on outside of skin to push purée out of spoon and distribute evenly. Tie legs together with kitchen string and tuck wing tips under. Brush outside of chicken all over with butter.
  • Prepare grill for cooking over indirect heat with medium-hot charcoal (moderate heat for gas); see "Grilling Procedure< >."
  • To cook chicken using a charcoal grill: Lightly oil grill rack, then put chicken on rack with no coals directly underneath and cook, covered with lid, until thermometer inserted into fleshy part of thigh (do not touch bone) registers 170°F, 40 to 50 minutes. (Add more briquettes during grilling if necessary to maintain heat.) Transfer chicken to a platter and let stand 15 minutes.
  • To cook chicken using a gas grill: Lightly oil grill rack, then put chicken above shut-off burner. Grill, covered with lid, turning chicken 180 degrees halfway through cooking if using a 2-burner grill, until thermometer inserted into fleshy part of thigh (do not touch bone) registers 170°F, 35 to 45 minutes.
