1/2 cup vegetable oil
2 tablespoons Worcestershire sauce
2 teaspoons chile powder
3 cloves garlic, minced
Juice of 1 lemon
1 onion, chopped
Kosher salt and freshly ground black pepper
8 thin-cut chicken breasts, halved and flattened
8 Cheddar slices, halved
1 cup honey mustard
1 cup pico de gallo
8 cooked bacon slices, crumbled
2 tomatoes, sliced
1 red onion, sliced
16 slider rolls

Steps:

  • For the chicken and marinade: Mix up the oil, Worcestershire sauce, chile powder, garlic, lemon juice, onions and some salt and pepper in a bowl and pour into a resealable plastic bag. Add the chicken to the bag and marinate for at least 2 hours and up to 4.
  • Twenty minutes before cooking, fire up the grill.
  • For the sandwich bar fixins: Set out separate plates or bowls of the honey mustard, pico de gallo, crumbled bacon, tomatoes and red onions.
  • Grill the breasts for 2 to 3 minutes on the first side, then turn. Lay half a slice of cheese on each breast and grill until cooked through, a further 2 to 3 minutes.
  • Serve the chicken with rolls and fixins and let everyone build their own sliders.

4 (4 ounce) boneless, skinless chicken breasts
½ cup buffalo wing sauce, or more as needed
4 slices LAND O LAKES® Deli American, cut into quarters
8 slider buns, sliced
8 tablespoons blue cheese salad dressing
1 rib celery, cut into 2-inch thin sticks

Steps:

  • Cut each chicken breast in half; place into large resealable plastic food bag. Flatten each to about 1/2-inch thickness with meat mallet.
  • Pour desired amount of buffalo wing sauce into bag; seal bag. Gently shake to coat chicken; refrigerate at least 30 minutes.
  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Remove chicken from hot sauce; discard sauce.
  • Place chicken onto grill. Grill, turning once, 10-12 minutes or until internal temperature reaches at least 165 degrees F and chicken is no longer pink in center. Brush with additional buffalo wing sauce while cooking, if desired. Top each chicken piece with 2 quarters cheese during last minute of cooking.
  • Place buns, cut-side down, onto grill. Cook 1-2 minutes or until toasted.
  • Spread dressing onto cut-sides of toasted buns. Place celery sticks and chicken onto bottom half of buns; cover with top half of buns.

1 1/2 lbs skinless boneless, chicken thighs
3/8 teaspoon ground red pepper
1/2 teaspoon ground black pepper
1/8 teaspoon salt
3 apricots, halved and pitted
1 tablespoon water
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
2 garlic cloves, chopped
8 mini sandwich buns

Steps:

  • Combine first 3 ingredients in a small bowl.
  • Sprinkle chicken with pepper mixture.
  • Place a large grill pan over medium high heat, and coat with cooking spray.
  • Add chicken to pan, cook 5 minutes on each side or until done.
  • Cool slightly, and shred meat.
  • Recoat pan with cooking spray, and place apricots cut side down on pan, and cook 6 minutes on medium-high heat or until tender and lightly browned, turning after 4 minutes.
  • Place apricots and add water, cider vinegar, mustard, and garlic cloves in a food processor, and process until smooth.
  • Spread 1/2 teaspoon apricot chutney over cut side of each sandwich bun half.
  • Place 1/3 cup chicken on bottom bun, and cover with other half of bun.

6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup vegetable oil
1 teaspoon ground cumin
Zest of 1 lime plus 1 tablespoon fresh lime juice
1/4 cup loosely packed fresh cilantro leaves
4 strips crisp-cooked bacon, chopped
3 avocados, flesh mashed
2 Roma tomatoes, seeded and chopped
1 tablespoon hot sauce (I like Cholula here), optional
Kosher salt
2 onions, thinly sliced
1/4 cup olive oil
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
12 slider buns
3 slices pepper Jack cheese, cut into quarters to make 12 squares

Steps:

  • For the chicken and marinade: Gently press each thigh between 2 pieces of plastic wrap to flatten (do this with a rolling pin, it's less brutal than pounding). Season the chicken on both sides with salt and pepper. Place the chicken in a large resealable plastic bag with the oil, cumin and lime zest and juice. Seal the bag and squish everything around until everything is coated by everything. Rest on the counter for 1 hour.
  • For the spread: In a medium bowl, add the cilantro, bacon, avocado, tomatoes and hot sauce if using. Fold to combine gently so the tomatoes don't get mashed, then taste and season with a pinch of salt if needed. Cover by placing plastic wrap directly on the top of the spread and refrigerate until using.
  • For the caramelized onions: In a large pot on low heat (or in a pot over the indirect heat area of a grill), add the onions, olive oil, butter, a pinch of salt and a few grinds of pepper. Cook, stirring every other minute or so, until the onions are tender and a deep golden brown, about 30 minutes.
  • Preheat a grill or grill pan to medium-high heat.
  • Remove the chicken from the bag, shaking off excess marinade. Place the chicken over the direct heat of the grill (or on the grill pan). Once the chicken releases from the grill and can be flipped, flip it to the indirect heat side of the grill (or lower the heat on the grill pan) and grill until cooked through, just 3 to 4 minutes more. Remove the chicken to a cutting board and cover with aluminum foil for 10 minutes. Roughly chop the chicken.
  • To assemble and serve. Build each burger in this order, starting at the bottom with: the bottom bun, slice of cheese, big scoop of chicken and caramelized onions and the top roll slathered with tons of avocado spread.

nonstick cooking spray, for greasing
3 boneless, skinless chicken thighs
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 package slider rolls, 12 count
1 cup shredded italian cheese blend
1 cup marinara sauce
4 oz pepperoni, sliced
½ teaspoon red pepper flakes
½ teaspoon dried Italian seasoning
2 cloves garlic, minced
2 tablespoons unsalted butter
2 fresh basil leaves, chopped

Steps:

  • Preheat the oven to 350°F (180°C). Line a baking sheet with foil and grease with nonstick spray.
  • Season both sides of the chicken thighs with a pinch of salt and pepper. Grill for 2-3 minutes per side, until golden brown. Remove from the grill and let cool slightly, then slice into strips.
  • Cut the sheet of slider rolls in half to separate the top and bottom, leaving the individual rolls intact. Transfer the bottom rolls to the prepared baking sheet and sprinkle evenly with half of the shredded Italian cheese, then dollop half of the marinara sauce on top. Top with the pepperoni, then the remaining ½ cup shredded Italian cheese, ½ cup marinara sauce, and the sliced grilled chicken. Place the top slider rolls on top.
  • Cover the sliders with foil, then transfer to the oven and bake for about 15 minutes, until the cheese has melted.
  • While the sliders bake, make the garlic basil butter,: In a small microwave-safe bowl, combine the garlic, butter, and basil. Microwave for 30 seconds, until the butter is melted. Stir to combine.
  • Remove the sliders from the oven, uncover, and spoon some of the garlic basil butter on top, then sprinkle with the red pepper flakes and dried Italian seasoning. Return the oven and bake for 5 minutes more, until the top is golden brown.
  • Brush with the remaining garlic basil butter, then serve immediately, slicing between the rolls or pulling apart to separate into individual sliders.

1 lemon, juiced
1 lime, juiced
1 tablespoon cider vinegar
salt and black pepper to taste
3 skinless, boneless chicken breast halves - cut in half
6 pineapple rings
2 tablespoons teriyaki sauce
6 slices red onion
6 Hawaiian bread rolls - split and toasted
6 lettuce leaves - rinsed and dried

Steps:

  • Whisk together the lemon juice, lime juice, cider vinegar, salt and pepper in a large glass or ceramic bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Grill the chicken for 5 to 7 minutes each side, or until juices run clear when chicken is pierced with a fork. Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.
  • Spread 1 teaspoon teriyaki sauce on the bottom half of a toasted roll; next add a lettuce leaf, a piece of chicken, a pineapple round, and an onion slice. Replace the top and repeat with the remaining rolls.
