The best grilled chicken sausages with grilled zucchini, summer squash, red onions, and eggplant. Super easy, good for you, and delicious.

4 chicken sausages (or turkey)
2 zucchini, sliced
1 summer squash, sliced
2 tomatoes, sliced
1 eggplant, sliced
1/2 cup basil
2 tbsp. olive oil
3 tbsp. balsamic vinegar
Salt and pepper

Steps:

  • Toss the vegetables with the olive oil, salt, and pepper.
  • Cook the sausages on the grill until fully cooked or warmed through. For raw sausages, this will take 6-8 minutes per side. For precooked sausages, they take 3-4 minutes per side.
  • Cook the vegetables on the grill or in a grill basket.They should take 3-4 minutes per side. Roughly chop.
  • Drizzle with vegetables with balsamic vinegar and toss with fresh basil. Season with salt and pepper as needed. Serve alongside sausages.

Thick, hearty lentil and sausage soup (or stew?) with a little spiciness. Simple and delicious, very easy to make.

3 cups water
1 ½ cups dry brown lentils, rinsed and drained
1 tablespoon olive oil
½ large yellow onion, diced
6 cloves garlic, minced
1 ¾ cups low-sodium chicken broth, divided
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon red pepper flakes
3 medium plum tomatoes, diced
5 links pre-cooked chicken sausage, cut into 1-inch cubes

Steps:

  • Bring water to a boil in a medium pot. Add lentils to the boiling water, then reduce heat to a simmer. Cover and let cook until soft, 25 to 30 minutes.
  • Puree the lentils into a thick paste using a food processor or blender.
  • Heat olive oil in large pot over medium-high heat. Add onion and garlic; cook and stir, 1 to 2 minutes. Add 1/4 cup chicken broth and continue to cook until the onion starts to soften, 1 to 2 minutes more.
  • Add turmeric, cumin, chili powder, and red pepper flakes to the broth and stir until the liquid is very orange. Stir in tomatoes and another 1/2 cup of broth. Cover and cook, 3 to 4 minutes.
  • Add remaining broth. Gradually stir lentil puree, a little at a time, until it is all mixed in. The mixture should be thick and creamy. Stir in chicken sausage. Cover the pot, reduce heat to low, and cook, checking and stirring occasionally, 15 to 20 minutes. Remove from heat, let cool for 2 minutes, then serve warm.

I found this while searching for a recipe for a package of chicken sausages that I got on sale one day. This is a very flexible recipe....throw whatever you want on the grill along with the sausages, such as peppers, zucchini, etc.

2 tablespoons olive oil
1 carrot, chopped
1 small red onion, chopped
1 cup lentils
1 (14 1/2 ounce) can chicken broth
1 cup water
1 bay leaf
1/2 teaspoon salt
fresh ground pepper
1 tablespoon orange zest
4 chicken-apple sausages
3 green onions

Steps:

  • Heat oil over medium-high heat in a medium pot; cook carrots and onion until just softened, about 5 minutes; add lentils, broth, water, bay leaf, salt and pepper to taste; heat to a simmer, cook, uncovered, until lentils are done, about 20 minutes; remove bay leaf, stir in orange zest; set lentils aside and keep warm.
  • Meanwhile, grill, broil or microwave sausages according to package instructions.
  • If grilling add green onions to grill and cook until limp and dark marks appear, chop and set aside.
  • Remove sausages to a cutting board; slice.
  • Place lentils on plates; top with chopped green onions, arrange sliced sausages on top.

One-pan lentil stew with sausage, fennel, and aromatics like onions, garlic, and carrots. Hearty in the best way possible, this sausage and lentils is finished with a splash of red wine vinegar and a silky drizzle of good extra virgin olive oil! 1 cup green lentils, (black lentils will work as well)
extra virgin olive oil
8 ounces chicken or pork sausage, (casings removed (about 2 to 3 sausages))
1 fennel bulb large or 2 small, (thinly sliced)
1 to 2 large cloves garlic, (grated)
1 yellow onion, (finely chopped)
1 carrot, (grated)
1/2 teaspoon fennel seeds
1/2 cup broth
2 tablespoons red wine vinegar

Steps:

  • In a saucepan, combine the lentils with 3 cups of water. Bring to a boil, then lower the heat and cover part-way to simmer for about 10 minutes (the lentils should be cooked just part-way through (there should be some liquid in the pan still).
  • In a large skillet, heat 1 to 2 tablespoons of extra virgin olive oil. Add the sausage and cook over medium-high heat, tossing regularly and breaking the sausage up with a wooden spoon, until fully cooked and browned.
  • Push the sausage to one side of the skillet and add the fennel, garlic, onion, carrots, and fennel seed. Add broth and red wine vinegar.
  • Add the par-boiled lentils to the sausage and fennel skillet. Bring to a boil, then lower the heat and let simmer, partially covered, for 15 to 20 minutes.
  • Taste and adjust seasoning. To serve, drizzle a bit of extra virgin olive oil on top. Serve immediately with your favorite crusty bread

1 cup french green lentil, rinsed and picked over
3 cups water
1/4 teaspoon baking soda
1 1/2 lbs garlic sausages
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
5 tablespoons extra-virgin olive oil
1/2 cup walnuts, toasted and chopped
1/4 cup chopped fresh parsley
salt and pepper

Steps:

  • Place the lentils, water and baking soda in a microwave-safe bowl. Cover and microwave until the lentils are soft, about 20 minutes. Drain, then rinse under cold water.
  • Meanwhile, grill the sausages over medium fire, turning frequently, until browned on all sides and cooked through, about 7-9 minutes.
  • Whisk the mustard, vinegar and olive oil together in a bowl. Toss the lentils, walnuts and parsley with the dressing and season with salt and pepper to taste.
  • Serve the grilled sausages over the salad.

Update the great British banger with a side of creamy green lentils - a great storecupboard alternative to potatoes

8 good quality pork sausages
1 onion
2 carrots
1 celery stick
2 tbsp sunflower oil
2 streaky bacon rashers, chopped
2 fresh thyme sprigs or a pinch if dried
200ml hot vegetable stock (a cube is fine)
410g can green lentil
4 tbsp crème fraîche or double cream

Steps:

  • Preheat the grill. Grill the sausages for 15-20 minutes, turning occasionally, until they are evenly browned and cooked through.
  • Meanwhile, chop the onion, carrots and celery into small pieces. (A food processor can make short work of this.) Heat the sunflower oil in a medium pan. Fry the bacon for 2 minutes, then stir in the chopped vegetables and thyme. Cook over a medium heat for 8 minutes, stirring occasionally, until the vegetables have softened and are beginning to brown.
  • Pour in the stock and simmer for 8 minutes until the carrots are tender. Drain the lentils, then stir into the vegetables. Heat through for a couple of minutes, then season and stir in the créme fraiche or cream. Serve with the grilled sausages.
