2 heads garlic, top of bulbs trimmed off so tops of cloves are exposed
1 ball pizza dough, store-bought or homemade
2 tablespoons olive oil, divided
½ cup prepared pizza sauce
1 ½ cups cooked and pulled/chopped chicken
4 ounces Stella® Fresh Mozzarella Cheese, thinly sliced
1 tablespoon everything bagel seasoning
1 cup spinach leaves, torn

Steps:

  • Preheat oven to 400 degrees F.
  • Wrap garlic heads in foil and place on small rimmed baking pan. Transfer to oven and cook 1 hour or until garlic is dark golden brown and very soft. Remove from oven and let stand for 5 minutes or until cool enough to touch. Squeeze garlic cloves from their skin into a small bowl.
  • Preheat grill for two-zone grilling: half of grill should be set to medium-high; other half should be off (indirect heat).
  • Stretch and shape dough into 14-inch circle and place on pizza pan or large tray. Brush one side of dough with 1 tablespoon oil. Use hands to transfer dough to direct heat side of grill, oiled side down. Do not worry if dough becomes a little misshapen during the transfer. Cook 2 minutes, or until the dough releases itself from the grates (do not disturb dough before it releases).
  • Brush top side of dough with remaining 1 tablespoon oil, then use tongs to flip dough. Cook 2 minutes or until dough releases from grates. Continue cooking dough 3 to 4 minutes longer or until dough is firm and grill-marked in all areas, flipping and rotating frequently but keeping grill closed when not flipping.
  • Remove dough from grill and spread with sauce. Top with chicken, Stella® Mozzarella Cheese, everything bagel seasoning, and roasted garlic cloves.
  • Transfer pizza back to grill on indirect heat side. Close grill and cook 8 to 10 minutes or until toppings are warmed through and crust is fully cooked.
  • Remove pizza from grill and top with spinach. Cut and serve immediately.

Use whatever toppings you normally like on regular pizza, but the barbeque chicken is always a crowd pleaser! The dough never makes a perfect rectangle, but we have fun guessing what it looks like ('That looks like America!'). For the chicken, I use the grilled chicken pre-cooked at the store.

1 cup chopped cooked chicken
½ cup barbeque sauce, divided
1 (13.8 ounce) package refrigerated pizza dough
2 tablespoons olive oil, or as needed

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix chicken and 2 tablespoons barbeque sauce together in a bowl until evenly coated.
  • Roll dough onto a work surface and cut in half to form 2 rectangles. Brush the top of each rectangle with olive oil.
  • Place dough, oil-side down, onto the grill; cook until bottom of dough is browned and top is bubbling up, about 5 minutes. Brush the tops of each dough with oil and flip.
  • Spread the remaining barbeque sauce over each crust; top with chicken, Colby-Monterey Jack cheese, and tomatoes.
  • Close the lid of the grill and cook pizza until cheese is melted, 2 to 3 minutes. Remove pizza from grill and cool before slicing, 2 to 3 minutes.

6 rhodes texas rolls or 9 rhodes dinner rolls, thawed to room temperature
vegetable oil
1 large boneless chicken breast, cut into strips
orange
yellow pepper
2 slices red onions
salt and pepper
1/2-2/3 cup salsa
1 1/2 cups grated monterey jack and cheddar cheese blend
1 tablespoon chopped fresh cilantro

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12-inch pizza crust. Cover with plastic wrap and let rest.
  • Brush chicken, peppers and onions with oil and sprinkle with salt and pepper. Grill for about 8 minutes or until chicken is cooked. Cut peppers into strips and set aside with chicken and onions.
  • Remove wrap from dough and brush one side with oil. Carefully place oil side down on grill. Brush top of dough with oil. Grill 3-4 minutes on each side. Remove crust from grill and spread with salsa. Sprinkle half the cheese over the salsa. Top with chicken, peppers and onions and sprinkle with remaining cheese.
  • Place back on grill and cover to melt the cheese, about 3-5 minutes. Remove from grill and sprinkle with cilantro.

1 (16-ounce) tube pizza dough, store-bought
Flour, for work surface
1 cup shredded mozzarella
1 cup shredded sharp Cheddar
1 cup Guacamole, recipe follows
1 cup Lime Chipotle Salsa, recipe follows
1/2 cup sour cream
1/4 cup chopped fresh cilantro leaves
1 tablespoon freeze-dried onions
1 tablespoon freeze-dried garlic
1 teaspoon freeze-dried oregano
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon coarsely ground black pepper
1 teaspoon cayenne
1 teaspoon ground cumin
1 tablespoon salt

1 avocado, halved, pitted and flesh diced small

Steps:

  • Preheat grill to medium-high heat.
  • Pound out chicken breast between 2 pieces of plastic wrap and place in a shallow dish. Combine the oil and Taco Rub in a small bowl and sprinkle over the chicken. Let marinate for 30 minutes. Grill chicken on both sides until cooked through, about 8 minutes total. Transfer to a cutting board and allow to cool. Dice chicken into bite-sized pieces and set aside.
  • Cut pizza dough into 3 even pieces. On a lightly floured work surface, roll out each piece until it's very thin. Brush the dough with olive oil and lightly dust with Taco Rub. Grill on both sides until crisp and set aside.
  • In a medium bowl, mix mozzarella and Cheddar cheeses.
  • Evenly distribute 1/3 of the mozzarella and Cheddar cheese mixture on each pizza. Then top with 1/3 of the diced chicken. Return pizzas to the grill, cover and cook until cheese is bubbly and melted. Remove from grill. and place on serving plates. Top the pizzas with Guacamole, and Lime Chipotle Salsa, in desired amounts. Dollop sour cream on top and garnish with chopped cilantro.
  • In a small bowl, mix all ingredients together and reserve. Can be stored, covered, up to 1 month in a sterilized container.

1 large skinless, boneless chicken breast half
2 pinches Montreal steak seasoning, or to taste
⅓ cup hot pepper sauce (such as Frank's RedHot®)

1 teaspoon olive oil, or as needed
½ cup blue cheese dressing (such as Marie's®), or to taste

Steps:

1 large chicken breast, grilled and diced

1/2 teaspoon dried parsley

1 prepared pizza crust
2 grilled chicken breasts
1 cup baby arugula
1 sweet onion, sliced
1/3 cup blue cheese

fresh ground pepper, to taste

  • Place pizza crust in medium bowl and allow to come to room temperature. Preheat oven to 400 degrees. Drizzle with 1 Tbsp olive oil and turn to coat. Add oregano and garlic powder and continue turning. Coat a cookie sheet in corn meal and press pizza dough into a circle on cookie sheet.
  • Bake pizza crust at 400 degrees until lightly brown. Poke with fork as it bakes if dough bubbles form. In the meantime, sautee onions in 1 Tbsp olive oil until soft and golden.
  • Remove crust from oven and drizzle with 1 Tbsp of olive oil. Cover with sauteed onions. Cover with arugula. Drizzle top with 1 Tbsp olive oil and lemon juice. Slice chicken and place on arugula. If chicken is still warm from the grill, it is even better as it slightly wilts the arugula. Crumble bleu cheese over top. Then add freshly ground pepper. Right before serving, drizzle with balsamic vinegar.
  • As an alternative, drizzle with low fat caesar dressing instead of balsamic vinegar.
  • Slice and enjoy!

Two 8-ounce balls prepared pizza dough, each rolled into a thin circle
2 cups shredded chicken (I use a rotisserie chicken)
1/2 cup Buffalo sauce (or 1/4 cup hot sauce, such as Frank's, mixed with 1/4 cup melted unsalted butter)
2 cups shredded mozzarella
1/2 cup blue cheese crumbles
1 tablespoon minced chives
Celery leaves, for garnish

Steps:

  • Preheat a grill to medium-high heat for indirect grilling.
  • Place the dough circles on the hot side of the grill. Let cook for 1 minute, then flip with tongs, moving to a cooler spot on the grill (about medium heat) until the dough begins to pull away from the grill, about 1 minute. Remove to a platter or baking sheet.

1 small red onion (about 3 ounces), cut into 1/4-inch-thick slices
1 pound boneless, skinless chicken breast, cut into 1/2-inch-thick slices
8 fajita-size tortillas, warmed
Guacamole, pico de gallo, hot sauce and sour cream, for serving

Steps:

  • Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
  • Meanwhile, make the marinade. Mix the olive oil, chili powder, chipotle in adobo sauce, cumin, garlic powder, lime juice, 2 teaspoons salt and a few grinds of black pepper in a medium bowl. Transfer half of the mixture (about 1/4 cup) to another medium bowl. Add the peppers and onions to one bowl and mix to combine. Add the chicken to the other bowl and mix to combine.
  • Place the chicken on one half of the pizza stone and the peppers and onions on the other half. Close the grill and cook until the chicken is cooked through, has a nice char on the bottom and the vegetables are softened and caramelized on the bottom, 10 to 12 minutes (3 to 5 minutes if using a charcoal grill).
  • Transfer the chicken and vegetables to a platter and serve in the tortillas with the guacamole, pico de gallo, hot sauce and sour cream, if desired.

FOR THE WHITE SAUCE
1/2 c skim milk
1/2 c fat free half & half
1/4 tsp salt
1/8 tsp white pepper
1/8 tsp ground nutmeg
2 Tbsp all purpose flour
1/4 c fresh grated parmesan cheese
FOR THE CRUST
1 tsp jarred yeast
2 Tbsp warm water
1 tsp honey
1/2 c cold water
1/4 tsp salt
1 1/2 c whole wheat flour
FOR THE TOPPINGS
1 bag(s) (8 oz.) part skim, low moisture mozzarella cheese
1 large chicken breast, grilled to perfection
3 large mushrooms, thinly sliced
1 c asparagus, diagonlly sliced into 2 inch pieces

Steps:

  • 1. In a large bowl, stir together the yeast & warm water, add honey and set aside for 10 minutes.
  • 2. Meanwhile in a glass measuring cup, combine the cold water, oil and salt. Add the cold water mixture to the yeast and stir in flour.
  • 3. Knead the dough on a heavily floured board until smooth and elastic (about 8 minutes)
  • 4. Put the dough in a lightly greased bowl and turn to coat. Let the dough rise, covered loosely with plastic food wrap in a warm, draft free place for 1 hour.
  • 5. Preheat oven to 425 degrees.
  • 6. While dough is rising, whisk together 2 Tbsp. flour and skim milk until perfectly smooth. Pour all ingredients for white sauce into small saucepan and heat over medium heat until cheese has melted and sauce is thickened. Remove from heat, salt to taste. Set aside.
  • 7. Press your crust into a greased pizza pan.
  • 8. Ladle and spread your white sauce onto pizza crust and sprinkle with 1/2 teaspoon minced garlic.
  • 9. Top with a layer of grilled chicken, then a layer of mushrooms and asparagus.
  • 10. Sprinkle with mozzarella cheese
  • 11. Bake until crust and cheese are golden brown, usually 12-15 minutes.

1 pound grilled chicken (sliced into small pieces)
1 cup Alfredo sauce
1 cup baby spinach (washed and chopped thin)
2 Roma tomatoes (finely chopped)
1 green pepper (finely chopped)
Chopped onion, optional topping
2 cups Mozzarella Cheese
Parmesan cheese, for topping
Olive oil, for topping
Garlic salt, for topping

Steps:

  • Roll out pizza dough according to directions on package (mine was on a 15x10x1" baking sheet) and cook for about 5 minutes at 375 degrees (if the directions differ on your pizza dough packaging, follow those directions instead).
  • Take pizza dough out of oven and spread Alfredo sauce over the entire top of dough. Sprinkle cheese, toppings, and chicken over the top of the sauce.
  • Brush some olive oil (a used not quite a tablespoon) around the crust edges and sprinkle with Parmesan cheese and garlic salt (I also sprinkled the entire pizza with a little bit of Parmesan cheese and garlic salt).
  • Put pizza in oven and bake for another 10 minutes (or until cheese is melted and crust is done).

1 Tbsp asian zing sauce (bww)
1 Tbsp shredded mont jack cheese
1 Tbsp roasted red bell pepper, diced

Steps:

  • 1. cook pizza crust. grill chicken & dice up. Top pizza crust with asian zing sauce. Place mont jack cheese around edge of pizza to help hold in sauce and put some in the middle. Top with chicken and red bell pepper. Cover with mozzerella cheese. Cook until cheese is melted and all is hot.
  • 2. I use a pizza cooker. Buffalo Wild Wings sell their asian zing sauce. Also good with 4 oz cooked, crumbled ground beef. Use more sauce if you like.

2 Tbsp ranch dressing with bacon (if desired)

Steps:

  • 1. Preheat grill on medium setting. 2. Place sausages on an oiled grill rack, set 4 to 5 inches over heat. Grill, using the direct grill method, turning links with tongs, until cooked throughout, about 7 to 9 minutes or until the internal temperature reaches 165 degrees F. Cool slightly and cut into 1/4 to 1/2-inch slices. 3. Brush both sides of pizza crust with olive oil. Gently place pizza crust, top-side down on grill rack. Grill for 2 to 3 minutes until crust is warm. Turn crust over. 4. Quickly spread pizza sauce on cooked side of pizza crust, then arrange sliced sausage on top of crust. 2 Tbsp butter or margarine
3 c halved, thinly sliced sweet onions (i use vidalia)
1 tsp sugar
1 tsp fresh thyme (less if using dried)
2 oz cream cheese
1 pkg 12 in. prebaked pizza crust (i use boboli) or make your own
1/3 c alfredo sauce
1 c shredded rotisserie chicken, tyson already-grilled chicken or make your own

Steps:

  • 1. In 10-inch skillet, melt butter over medium heat. Cook onions and sugar in butter 20 to 25 minutes, stirring frequently, until deep golden brown and caramelized; stir in thyme leaves.
  • 2. Heat gas or charcoal grill. Spread cream cheese evenly over pizza crust. Top with Alfredo sauce, shredded chicken and onions, in that order.
  • 3. Place on grill over medium-low heat. Cover grill; cook 8 to 10 minutes or until hot. Avoid the temptation to grill the pizza at a higher grill temperature. The crust will burn before the toppings heat through. NOTE: When it's not nice enough to grill outdoors, I put the pizza on a pizza stone and stick it in a 450 degree oven for 8-10 minutes.
  • 4. For extra flavor, substitute garlic-and-herbs spreadable cheese for the cream cheese.
