Angel Hair Pasta and Chicken with Creamy Garlic Sauce - in one pan image

If you love garlic and dislike washing up then this will become a firm favourite to add to your quick to get dinner on the table recipes. Super tasty and economical. It's a winner!

3 medium chicken breasts
60 gms butter
1/4 cup extra virgin olive oil
6 large cloves of garlic finely minced - see notes
6 cups chicken stock - 1.6 quarts (we used chicken stock cubes)
500g angel hair pasta (1 pound)
120 gms grated parmesan cheese 4 1/4 oz
375 ml pouring cream 1 1/2 cups
1/4 cup chopped flat leaf parsley
salt
freshly milled black pepper

Steps:

  • season chicken with salt and pepper
  • on a medium heat add half the butter and oil to a large frypan and when the butter melts and gently foams add the chicken and cook for 3-4 minutes a side
  • remove chicken onto a plate and cover with alfoil - see step 3 in the notes below
  • add the remaining butter and oil to the pan and gently fry the garlic for a minute or two until the garlic is transparent but not browned
  • add stock and bring to the boil
  • add pasta and stir briefly to prevent sticking then stir occasionally while the pasta is cooking until most of the stock has been absorbed. Pasta is not fully cooked at this point
  • add cream, parmesan and parsley
  • mix and gently simmer until pasta is almost cooked, remove from heat- see step 8 in the notes below
  • slice chicken and add to pasta tossing to coat the chicken
  • serve and enjoy!

This is so simple and so good. I make this on an indoor grill, but it can be made on an outside grill or in a stovetop grill pan. This is adapted from a recipe in Everyday Food Magazine (#3), and the original recipe is pasta and cheese-less and also includes grilled chicken. Sometimes I also make it that way.

4 ounces uncooked angel hair pasta
1 1/2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon dried basil
2 small yellow squash or 2 small zucchini, halved lengthwise
3 medium tomatoes, halved
salt, to taste
1/4 teaspoon fresh ground black pepper
2 tablespoons parmesan cheese, grated

Steps:

  • Cook pasta according to package, drain.
  • In a medium bowl, combine squash, tomatoes, oil, garlic, salt, basil, and pepper.
  • Set aside.
  • Heat up grill (medium-high heat if you have temperature control, mine has just the one temperature setting).
  • Grill the vegetables 3-5 minutes per side until they are slightly softened and browned (it takes more like 20 minutes total in my grill, so you may really need to experiment with cooking times).
  • Remove from grill and allow to cool enough for you to handle.
  • Cut the veggies into bite-sized pieces.
  • Toss pasta and vegetables together in a large serving bowl.
  • Top with cheese.

1 pound boneless skinless chicken breasts, cut into 1-inch pieces
2 tablespoons olive oil, divided
2 medium carrots, sliced diagonally
1-1/2 cups fresh broccoli florets
2 to 3 teaspoons minced garlic
1-1/3 cups chicken broth
1/2 cup grated Parmesan cheese
2 teaspoons dried basil
1/2 teaspoon salt
Additional grated Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute chicken in 1 tablespoon oil for 4-5 minutes or until no longer pink; drain. Remove and keep warm., In the same skillet over medium heat, cook carrots in remaining oil for 3 minutes, stirring occasionally. Add broccoli and garlic; cook 2 minutes longer. Stir in the chicken, broth, cheese, basil and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until vegetables are tender., Drain pasta; serve with chicken mixture. 1 (2 1/2 pound) butternut squash - peeled, seeded, and cubed
3 tablespoons olive oil, divided
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
sea salt and ground black pepper to taste
2 skinless, boneless chicken breasts, pounded flat
1 (16 ounce) package whole grain penne pasta
½ cup grated Parmigiano-Reggiano cheese
2 tablespoons olive oil

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine squash, 2 tablespoons olive oil, rosemary, sage, thyme, oregano, basil, sea salt, and pepper in a large bowl; toss until squash is coated with herbs. Transfer to a sheet pan.
  • Place in the preheated oven and cook until squash pieces turn golden brown on the bottom, 15 to 20 minutes. Remove from oven, flip with spatula, and cook until tender, 15 to 20 more minutes.
  • While squash is cooking, preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Brush chicken with remaining 1 tablespoon olive oil and season with sea salt and pepper.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to a plate and cut into thin slices.
  • While chicken is cooking, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. 14 oz chicken broth
Kosher Salt

14 oz vegetable broth in place of 14 oz chicken broth
Omit chicken
K for P and Gluten-Free Substitutes:
1 package quinoa pasta
4 glatt kosher chicken breasts
14 oz kosher chicken broth

Steps:

  • Preparation (20 minutes): 1. Fill a large pot with water, a dash of olive oil, and salt. Bring to a boil. 2. Heat grill to 350 ºF (176 ºC) 3. Peel and mince 2 garlic cloves and set aside. 4. Season the chicken with olive oil, salt, pepper, and chopped garlic. Set the chicken aside for about 20 minutes to absorb flavors. 5. Cut zucchini, yellow squash, and eggplants in lengthwise halves or quarters and season with salt, pepper, and olive oil. Cooking (15 minutes): 6.Place chicken, zucchini, yellow squash, and eggplant on the grill. Cook for 2 minutes on each side. 8. Remove the chicken and veggies from the grill and chop into thick, chunky pieces. Set aside and cover. 9. Add broth to a gigantic mixing bowl. 10. Add pasta to boiling water and cook for 4-5 minutes. 10 cups water
1/2 cup olive oil
4 garlic cloves
5 medium zucchini (try to get long skinny ones, no more than an 1 1/2 inches in diameter)
1 lb angel hair pasta (capellini)
2 tablespoons salt
romano cheese, to your taste

Steps:

  • Put the water on to boil.
  • In a large skillet, heat the oil over medium high heat.
  • Peel the garlic cloves and smash lightly with the side of a knife to release some of the oils.
  • Add the garlic to the oil.
  • Wash and dry the zucchini.
  • Cut off the ends and use a peeler to make zebra stripes down the length of the zucchini (leaving some of the skin adds flavor to the pan).
  • Cut the zucchini crosswise into rounds a little less than 1/4-inch in thickness.
  • When the garlic has browned lightly remove it from the pan and carefully add in the zucchini slices in one layer.
  • Fry until a nice dark brown on one side.
  • Use tongs or two forks to turn them over. When they are brown on the second side remove them to your serving bowl.
  • Continue frying the zucchini in batches.
  • By now the water should be boiling.
  • Add the salt and then stir in the pasta.
  • Once the water comes back to the boil the pasta will be done in a minute or so.
  • Do not overcook; drain the pasta.
  • Empty the oil from the skillet and pour in the drained pasta.
  • Stir the pasta to coat with the oil and to pick up flavors from the bottom of the pan.
  • Put the zucchini slices on top and then slide the whole thing back into your serving bowl.
  • Serve with lots of grated Romano cheese.
