Grilled Artichoke, Green Garlic, and Goat Cheese Bruschetta image

Green garlic bulbs look like scallions-they're available at many farmers' markets in the spring. If you can't find them to make this Italian appetizer, substitute the peeled cloves from a head of regular garlic and the green top of a scallion.

3/4 cup extra-virgin olive oil
5 bulbs green garlic, bottoms trimmed, and 1/4 cup thinly sliced tender green tops, plus more tops for serving
3 sprigs fresh rosemary (each 6 inches long)
2 lemons, halved
4 large artichokes, such as globe
Coarse salt
8 ounces soft goat cheese
1/4 teaspoon red-pepper flakes, plus more for serving
8 slices (1/2 inch thick) country bread, preferably sourdough

Steps:

  • Combine oil, garlic bulbs, and rosemary in a small saucepan; bring to a simmer over medium. Reduce heat to low; simmer until garlic is golden, about 15 minutes. Remove from heat; let cool.
  • Squeeze 2 lemon halves into a large bowl of water; add rinds. Working with 1 artichoke at a time, remove tough outer leaves closest to stem end, then trim pointy tips of remaining outer leaves with kitchen shears. With a serrated knife, cut off top 1 inch; with a paring knife, trim and peel stem. (Transfer to lemon water as you work to prevent discoloration.)
  • Set a steamer basket in a large pot; add enough water to reach just below basket and bring to a boil. Squeeze remaining 2 lemon halves into pot. Add artichokes, season with salt, and cover. Steam until hearts are easily pierced with the tip of a knife, 30 to 35 minutes. Transfer to a plate; let stand until cool enough to handle, then cut in half lengthwise and scoop out and discard fuzzy chokes.
  • Strain infused oil; discard rosemary. Mash garlic bulbs into a paste and stir into goat cheese with 1/4 cup infused oil, green garlic tops, and red-pepper flakes. Season with salt.
  • Heat grill to high. Brush artichokes with infused oil; season with salt. Grill, brushing with more oil and turning a few times, until charred in places, 8 to 10 minutes. Grill bread, turning once, until charred in places, 1 to 2 minutes. Lightly brush bread with infused oil.
  • Remove artichoke leaves from bottoms; cut bottoms into slices and reserve leaves for eating separately. Slather grilled bread with goat-cheese mixture and top with sliced artichokes. Drizzle with more infused oil, sprinkle with more red-pepper flakes and green garlic tops, and serve.

1/4 cup olive oil mixed with 4 cloves crushed garlic
1 cup Monterey Jack cheese, finely grated
8 ounces soft goat cheese
2 tablespoons coarsely ground black pepper
2 tablespoons finely chopped oregano

Steps:

  • Preheat grill. Brush each slice of bread with the garlic oil. Grill, oil-side-down until lightly golden brown. Turn each slice over and top with 2 tablespoons of Monterey Jack, 1-ounce of goat cheese, black pepper and oregano. Grill until cheese just begins to melt.

4 large boneless/skinless chicken breasts
1 c reduced-fat itallian dresing
(bottled/store-bought)
1/4 c extra virgin olive oil
4 large ripe tomatoes seeded and diced
1 large bunch fresh basil chopped
1 to 2 cloves garlic minced
2 tablespoons balsamic vinegar
Sea salt and fresh pepper to taste
1(4oz)pakage of goat cheese

Steps:

  • Marinate chicken breasts in itallian dressing for 2 to 3 hours. While chicken is marinating, prepare fresh bruschetta in a medium glass bowl by combining extra virgin olive oil with next 5 ingredients. Mix bruschetta well, cover and refrigerate for 1 to 2 hours. Prepare grill. Remove goat cheese from refrigerator and let it sit at room temperature to soften. Grill the marinated chicken breats over medium-high heat, turning 1/2 way through. Remove from grill, spread each breast with about 1 oz of goat cheese and top with heaping scoops of fresh bruschetta. Serve with fresh grilled aspargus and garlic bread.

Blue cheese and bacon don't get any better! When you add in the grilled pineapple and the cranberries, you get a touch of sweetness. This makes a party-perfect appetizer great for the holidays.

1 1/2 can(s) sliced pineapple, 8 oz each (only use 6 slices)
1/2 - baguette sliced 3/8" on diagonal
5 slice(s) bacon, cooked and crumbled
8 ounce(s) Neufchatel cheese, softened
5 ounce(s) crumbled blue cheese, softened
1/3 cup(s) raisins or dried cranberries
2 stalk(s) celery, finely chopped
3 teaspoon(s) scallions, finely chopped
2 teaspoon(s) pineapple juice from canned pineapple slices
2 teaspoon(s) Worcestershire sauce
- parsley or mint for garnish

Steps:

  • Cook bacon, crumble and set aside. Heat your grill (or indoor grill pan which is what I use). Grill bread slices on both sides and set aside.
  • Grill 6 slices of drained pineapple on both sides (save the liquid) and set aside. When the slices are cooled, finely chop 4 of the rings, and set those aside - they'll be going into the cheese mixture.
  • In medium-size bowl combine the Neufchatel and blue cheese. I use a flexible spatula to do this. Add pineapple juice (from sliced canned pineapple) and Worcestershire sauce. Now add the scallions, celery, raisins (or cranberries), crumbled bacon, and chopped pineapple.
  • To plate, place a heaping tablespoon of cheese mixture on grilled bread. For a fun garnish, cut the remaining 2 slices of grilled pineapple into 4 pieces so they look like little fans. Place 1 "fan" atop each bruschetta, then add a sprig or two of parsley or mint.
