Making grilled cheese for a crowd is easy with four ingredients, including cocktail rye bread. Have them ready in less than 30 minutes!

2 tablespoons butter or margarine
24 slices cocktail rye or sourdough bread
12 slices cracker-cut sharp Cheddar cheese (from 6-oz package)
3 slices (about 1 oz each) American cheese, cut into quarters

Steps:

  • Set oven control to broil. Place butter in small microwavable bowl; cover with microwavable paper towel. Microwave on High 30 to 50 seconds or until melted. Brush butter on 1 side of each bread slice.
  • On ungreased cookie sheet, place 12 bread slices, buttered sides down. Top each with 1 slice Cheddar cheese and 1 quarter-slice American cheese. Add remaining bread slices, buttered sides up.
  • Broil with tops 4 to 6 inches from heat 2 minutes. Turn sandwiches over. Broil about 1 minute longer or until golden brown and cheese is melted.

The trick to great grilled cheese sandwiches isn't in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start. There's no need to search out artisanal loaves or local cheese (though they won't hurt), but definitely do not use homemade mayonnaise. Mustard, chutney or even strawberry jam (believe it) can be dabbed on the cheese as it melts, or add ham, prosciutto or slices of apple or tomato (drain on paper towels first). You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.

2 slices bread, either soft sandwich squares or large peasant-style slices, not more than 1/2 inch thick
Butter
Mayonnaise
1 to 2 ounces grated cheddar (or other cheese), depending on size of bread

Steps:

  • Heat a heavy pan over medium-low heat.
  • Thinly spread one side of each bread slice with butter. Spread the other side of each slice with mayonnaise and place the bread, mayonnaise-side-down, in the pan. Divide the cheese evenly on top of the buttered slices. Adjust the heat so the bread sizzles gently.
  • When the cheese is about halfway melted, use a spatula to flip one slice over on top of the other, and press lightly to melt. Keep turning the sandwich, pressing gently, until the sandwich is compact, both sides are crusty, and the cheese is melted.

3 tablespoons butter, divided
2 slices Cheddar cheese

Steps:

  • Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.

1 (1 lb) package sliced sourdough cocktail bread or 1 (1 lb) package rye bread
1/4 cup butter, softened
1/4 cup orange marmalade or 1/4 cup raspberry preserves
6 ounces monterey jack cheese or 6 ounces mozzarella cheese, shredded

Steps:

  • Preheat oven to 400*F.
  • Lightly spread 1 side of each piece of bread with about 1/4 teaspoons butter.
  • Place half the bread slices onto foil-lined cookie sheets, buttered side down.
  • Top each with a dab of mustard and 1 tablespoons cheese; top with another bread slice, buttered side up.
  • Bake the sandwiches, turning once, for 10-13 minutes, or until golden and the cheese is melted.
  • Cut each sandwich in half diagonally and serve immediately.
