Grilled Bratwurst is a simple, yet flavor-packed German sausage. It's the perfect choice for lunch, dinner, or anytime you're in the mood for a good, savory brat.

6 bratwursts
6 bratwurst buns
desired toppings

Steps:

  • Preheat your grill for Medium heat (325-350 degrees F) for two-zone cooking.
  • Place the bratwursts on the indirect side of the grill and cook for 15-18 minutes or until the internal temperature of the bratwurst reaches 150-155 degrees F. Turn occasionally to evenly cook the bratwurst.
  • Transfer the brats to the direct heat side of the heat and grill for 1-2 minutes to cook the exterior casing.
  • Place the buns slit side down on the grill and grill for a few seconds until they are crisp.
  • Remove the buns and the bratwursts from the grill. Place a brat in a bun, and top with your preferred toppings (mustard and sauerkraut for me!)

4 bratwurst
1 onion, halved and sliced
1 (12-ounce) bottle pilsner-style beer
1/2 medium head Savoy cabbage, sliced
1 (14.5-ounce) can diced tomatoes
Coarse salt and freshly ground black pepper
2 tablespoons chopped parsley, for garnish

Steps:

  • Heat oil in a large high-sided skillet over medium-high heat. Add bratwurst and cook, turning, until browned on all sides. Add onion and cook, stirring, until softened. Add beer, cabbage, and tomatoes; season with salt and pepper. Cover and cook until cabbage is tender, 10 to 15 minutes. Garnish with parsley and serve with cornbread.

2 teaspoons grainy mustard, plus more for the buns
3 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil, plus more for the grill
2 teaspoons sugar
Kosher salt
1 cup thinly sliced red cabbage
1/4 cup red grapes, thinly sliced
1/2 sweet onion, cut into 1/4-inch-thick rounds
4 fully cooked bratwursts (about 3 ounces each)
4 hot dog buns
Potato chips or pretzels, for serving

Steps:

  • Preheat a grill to medium high. Whisk the mustard, vinegar, olive oil, sugar and 1/4 teaspoon salt in a medium bowl. Add the red cabbage and grapes; toss to coat.
  • Oil the grill, then add the onion rounds and bratwursts. Cook the onion rounds, flipping halfway through, until softened and charred, 4 to 6 minutes. Remove to a cutting board. Cook the bratwursts, turning, until warmed through and charred all over, 8 to 10 minutes. Remove to a plate.
  • Open the hot dog buns and add them to the grill, open-side down; grill until toasted, about 30 seconds. Flip and grill the outsides. Chop the grilled onion.
  • Divide the hot dog buns among plates and spread with mustard. Fill with the bratwursts, slaw and grilled onion. Serve with potato chips or pretzels.

One 12-ounce bottle hard apple cider
1 1/2 cups beef broth
6 fresh bratwurst sausages (about 1 1/2 pounds total)
1 tablespoon olive oil
1 tablespoon unsalted butter
2 large sweet onions, thinly sliced
Kosher salt and freshly ground black pepper
6 pretzel rolls, split
Spicy brown mustard

Steps:

  • Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
  • Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
  • Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
  • Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.

2 pounds precooked bratwurst, pricked with a fork
6 cups German beer
2 tablespoons caraway seeds
2 tablespoons coriander seeds
2 tablespoons yellow mustard seeds
2 large onions, sliced
One 6-inch hand ginger, sliced into rough coins
2 tablespoons canola oil
1/2 head red cabbage, thinly sliced
4 tablespoons honey
1/4 cup cider vinegar
Salt and freshly ground black pepper
1/4 cup Dijon mustard
8 soft hoagie rolls

Steps:

  • Put the bratwurst, beer, 1 cup water, the caraway, coriander, mustard seeds, onions and ginger in a medium stockpot. Bring to a simmer over medium heat and cook for 5 minutes. Cover, remove from the heat, and let stand 15 minutes.
  • Transfer the brats to a bowl. Strain the cooking liquid into another bowl, and discard the solids.
  • Heat the oil in a large saute pan over medium heat, add the cabbage and toss to coat. Add 1 cup of the strained bratwurst liquid, and cook until softened, stirring frequently, about 15 minutes. Add 2 tablespoons of the honey, the vinegar and some salt and pepper. Toss to coat, and cook another 5 minutes. Transfer to a bowl.
  • Preheat the grill to high, with direct and indirect heat. Grill the sausages over direct heat until the casings are crisp and golden brown on all sides, about 2 minutes per side. Move the brats to indirect heat, cover the grill, and cook another 5 minutes.
  • While the brats cook, whisk the mustard, the remaining 2 tablespoons honey, some salt and pepper and a few tablespoons of the bratwurst liquid in a small bowl; the mixture should be syrupy. When the sausage are done, remove them to a platter and brush with the glaze.
  • Split the hoagie rolls and grill cut-side down until toasted, about 30 seconds. Put a brat in each roll and top with some cabbage, then serve.

1 large sweet onion
1 package (19-1/2 ounces) turkey bratwurst links, casing removed and cut into 1-inch pieces

  • Cut cabbage in half through the core. Remove core and cut cabbage into 1/4-in. slices; set aside. Cut onion in half and cut into 1/4-in. slices; set aside.
