Time 1h20m

Yield 4

Number Of Ingredients 12

2 tablespoons red wine vinegar
2 cloves garlic, minced
1 tablespoon cracked black pepper
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon dried oregano
¼ teaspoon kosher salt
¼ cup olive oil
1 ½ pounds flat iron steak
3 tablespoons softened unsalted butter
1 ounce crumbled blue cheese
1 tablespoon chopped fresh chives
⅛ teaspoon cracked black pepper

Steps:

  • Whisk together vinegar, garlic, 1 tablespoon black pepper, rosemary, oregano, and kosher salt in a bowl along with the olive oil. • Mash together the butter, blue cheese, chives, and 1/8 teaspoon of black pepper; set aside. Cook the steak on the preheated grill to desired degree of doneness, about 5 minutes per side for medium-rare. Allow the steak to rest in a warm place for 10 minutes before slicing thinly across the grain. Serve with a dollop of blue cheese-chive butter.

Grilled Rib-Eye Steak with Brown Butter and Blue Cheese image

Provided by Bobby Flay

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 5

Two 2-inch-thick boneless rib-eye steaks
Canola oil, for brushing
Kosher salt and freshly ground black pepper
1 stick unsalted butter, cut into pieces
8 ounces blue cheese, such as Cabrales or Maytag Blue, crumbled

Steps:

  • Remove the steaks from the refrigerator 30 minutes before grilling and let sit on a kitchen counter, loosely covered.
  • Heat the grill to high. Set a cast-iron skillet large enough to hold both steaks on one side of the grill. Brush the steaks with canola oil and season very liberally with salt and pepper. Grill until well charred on the first side, 2 to 3 minutes; flip and grill until well charred on the second side, another 2 to 3 minutes. (The steaks should still be raw at the center at this point.) Transfer to a cutting board.
  • Slice the steaks across the grain about 1 1/2-inches thick; don't separate the slices. Keeping the steak slices together, transfer the steaks to the skillet and top with the butter. Cover the grill and cook the steaks for 5 minutes for medium rare. Transfer the skillet to a trivet.
  • Arrange the steak slices on a platter so that the interior of the slices is facing up. Top each slice with some blue cheese. Pour the hot brown butter from the skillet over the steak. Serve immediately.

GRILLED RIB-EYE STEAK WITH BLUE CHEESE

Grilled Rib-Eye Steak with Blue Cheese image

Here I'm pairing a rich steak with a light, bright arugula salad. I'll give you tips on using a charcoal grill and show you how to make a delicious, versatile blue cheese dressing.

Provided by Jonathan Waxman

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 10

1/2 cup cream cheese
1/2 cup heavy cream
1/4 cup sour cream
1 cup Gorgonzola, crumbled
1/4 cup chopped scallions
2 12-ounce rib-eye steaks, preferably grass-fed
2 tablespoons extra-virgin olive oil
Sea salt
Freshly ground black pepper
2 ounces arugula, about 3 cups

Steps:

  • For the blue cheese dressing, combine the heavy cream, cream cheese, sour cream, Gorgonzola, and scallions in a large bowl and gently crush together with a fork. Set aside.
  • Preheat a charcoal grill until the coals are white. Rub both sides of the steak with 1 tablespoon (15ml) olive oil and season liberally with salt and pepper. Put the steak in the center of the grill and cook 6 to 7 minutes per side, turn 90-degrees once on each side. If the grill is too hot and the steak is cooking too fast, transfer the steak to indirect heat and cover. Remove the steaks from the grill and rest for about 10 minutes. Meanwhile, toss the arugula with the remaining olive oil and season with salt.
  • Serve the steaks with the arugula and the blue cheese dressing.

¾ teaspoon freshly ground black pepper, or to taste, divided
2 tablespoons extra-virgin olive oil, divided

1 bunch broccolini, or more to taste
sea salt and ground black pepper to taste
¾ cup sour cream
3 ounces crumbled creamy blue cheese
½ teaspoon Worcestershire sauce
1 lemon, halved

An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

GRILLED PESTO MARINATED SKIRT STEAK WITH BLUE CHEESE FONDUE

Grilled Pesto Marinated Skirt Steak with Blue Cheese Fondue image

Cook's note: You can make this sauce a couple of hours in advance but reheat it very slowly to prevent separation. A number of cheeses can be substituted for the Cambozola; try Brie, Blue cheese or aged English Cheddar. Alternatively, use this sauce as a base for lasagna, tossed with pasta and steamed asparagus, or spooned over grilled steak for a stunning accent.

Time 40m

Yield 6 servings

Number Of Ingredients 10

1 1/2 pound skirt steak, cut lengthwise into 1/2-inch slices, room temperature
2 cups jarred pesto
Gray salt and freshly ground black pepper
Blue Cheese Fondue, recipe follows
1 tablespoon unsalted butter

1/4 teaspoon freshly ground black pepper

Steps:

  • Soak 15 wooden skewers in cold water for 30 minutes. Heat the grill.

Add the cream, raise the heat to medium, and bring the cream to a simmer. Cook until the cream is reduced by 1/3. Lower the heat to maintain a slow simmer. GRILLED STEAK WITH BLUE CHEESE POTATOES

Grilled Steak With Blue Cheese Potatoes image

In this meat-and-potatoes dish, everything is grilled at the same time; the steak is first marinated for added flavor, and the potatoes are boiled so they will be fluffy and tender inside their crisp grilled exteriors. Blue cheese is a classic steakhouse offering; place it on the potatoes as soon as they come off the grill, so the cheese will begin to melt.

1 small bunch of watercress, trimmed and cleaned
4 tablespoons sour cream

  • Mix together the garlic, grill seasoning, Worcestershire sauce, salt, and pepper. Whisk in the EVOO. Pour into a 9 x 13-inch glass dish or a sealable plastic bag. Add the flank steak and coat it evenly in marinade. Let stand for 10 minutes.
  • While the steak is marinating, prepare the biscuits. Place the biscuit mix in a bowl, add the blue cheese crumbles, and mix with a fork to distribute. Add water, according to the package directions. Once combined, dump the biscuit mix out on a cutting board. Using your fingertips, press out the mix into a 1-inch-thick square. • Thinly slice the tomato and coarsely chop the watercress; reserve.
  • To serve, thinly slice the rested meat on an angle, cutting against the grain. (To make easy work of the slicing, use a sharp knife.) Split each of the four biscuits in half. Arrange a slice or two of tomato on the bottom of each biscuit. Season the tomatoes with salt and pepper. Top the tomatoes with some of the sliced steak. GRILLED FLANK STEAK STUFFED WITH SPINACH AND BLUE CHEESE

GRILLED FLANK STEAK STUFFED WITH SPINACH AND BLUE CHEESE image

Categories     Beef

Yield 4-6 servings

Number Of Ingredients 4

1¾- to 2-pound flank steak
4 ounces crumbly blue cheese
2 ounces baby spinach
Salt and freshly ground black pepper to taste

Steps:

  • Prepare a gas or charcoal grill for indirect grilling. If charcoal, set the coals on one side of the charcoal grate, leaving the other side cool. If gas, turn one or two burners on high, leaving the other side cool. Lay the steak on a cutting board, and pound it out until it is about ¼-inch thick. Sprinkle with salt (keeping in mind that the blue cheese is a little salty) and pepper. With one long side toward you, cover the steak with spinach to within an inch of the other edge. Top with crumbled blue cheese. Working from the long side that is toward you, roll the steak, tucking the spinach and blue cheese in as you go. Set seam side down on the cutting board, and tie, at about 2-inch intervals, with kitchen twine. Make sure the roll is tied close to both ends to keep the stuffing in. Season with salt and pepper. Oil the grill grate using tongs and a paper towel soaked in oil. Sear the stuffed steak directly over the coals, about 3 minutes per side, treating it as if it had 4 sides. Once it's seared, move the steak to the cool side of the grill and lower the lid. Let it cook for 25 to 35 minutes, or until it's reached an internal temperature of 130 degrees for medium rare. Remove the steak to a warm platter, and tent with foil for 10 minutes before slicing. Slice the steak into ½-inch pinwheels, 2 to 3 per person.

Number Of Ingredients 9

steak (i used new york strips)
steak seasoning you like
olive oil, extra virgin
BLUE CHEESE BUTTER
2 oz blue cheese, crumbled
4 oz cream cheese, room temperature
2 oz garlic spread (i used italian rose brand)
pinch salt
1/4 tsp coarse pepper

Steps:

  • 1. Remove steaks from fridge about 30 minutes prior to grilling; brush olive oil over steaks and season to your liking. I used kosher salt, black pepper and Everglades All Purpose seasoning.
  • 2. Using a hand mixer, combine all ingredients for blue cheese butter; beat at medium speed until creamy. Spoon into small container with lid or cover with plastic wrap until ready to use.
  • 3. Grill steaks to desired doneness (4 to 5 mins on each side for medium rare); spread about a tablespoon of blue cheese butter over hot steaks and serve.
  • 4. Photo is the Garlic Spread I used to make my Blue Cheese Butter. I found this spread in the bakery section of the grocery store where the fresh bread are located. Leftover Blue Cheese butter will keep well in refrigerator. This butter would be good on a baked potato too.
