GRILLED CHICKEN WITH BALSAMIC PEACH MARINADE
I haven't tried this yet, but it sounds delicious! It was in our local paper and is from the New Jersey Peach Promotion Council. Cooking time does not include time to marinate, and varies depending on whether you use boneless chicken breasts.

Steps:
- Combine vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended, then add olive oil and mix.
- Just before you are ready to marinate chicken, stir in peaches.
- Pour over chicken breasts. Allow to marinate for at least 2 hours and grill.

Another recipe I saved from Taste of Home magazine. I adapted it a little for our tastes. This is so quick and easy, just 30 minutes for marinading and its ready for the grill.

Steps:
- In a large resealable plastic bag, combine the vinegar, oil, lemon juice, garlic and lemon-pepper; add chicken. Seal bag and turn to coat; refrigerate for 30 minutes.
- Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, covered, over medium heat or broil 4 inches from the heat for 5-7 minutes on each side or until a meat thermometer reads 170°.
