BACON WRAPPED MEATLOAVES
Steps:
- Preheat the oven to 400 degrees F.
- Put the bread in a large bowl and pour the milk over. Let soak a few minutes, then squeeze through your fingers to combine. Add the egg, onion, parsley, dry mustard, caraway and coriander and mix well. Add the ground beef, ground pork, 1 1/4 teaspoons salt and several grinds of pepper. Mix well with your hands to combine.
- In a small bowl, stir together the ketchup, steak sauce, mustard and brown sugar.
- Divide the mixture into 6 equal portions and form into balls. Wrap each ball with 1 strip of bacon. Place, without touching, on a rimmed baking sheet or in a large braiser. Brush with a light coating of the glaze. Bake until the fat from the bacon has rendered, about 20 minutes.
- Increase the oven temperature to 425 degrees F.
- Brush the meatloaves with the remaining glaze. Continue to bake until the meatloaves are cooked through, the bacon is crisp and the glaze is shiny, 15 to 20 minutes more. Remove to a platter or plates to serve, leaving the drippings behind. (Save drippings for the Cheesy Mashed Potatoes & Gravy.)

- Heat gas or charcoal grill for indirect cooking as directed by manufacturer.
- Meanwhile, in large bowl, mix all ingredients except bacon. On work surface, pat mixture into 7-inch square. Cut into 4 (3 1/2-inch) squares. Top each square with 2 half-slices bacon; attach with toothpicks.
- Carefully spray grill rack with cooking spray. Place patties on unheated side of two-burner gas grill or over drip pan on charcoal grill (medium heat). (If using one-burner gas grill, cook over low heat.) Cover grill; cook 20 to 25 minutes or until slightly pink in center.
- Using spatula, turn patties over. Cover grill; cook 5 to 8 minutes longer or until meat thermometer inserted in center of patties reads 160°F and bacon is crisp. Remove toothpicks before serving.

- Heat grill for indirect grilling. Light one side of grill, leaving other side unlit. Close lid; heat grill to 425ºF.
- Whisk eggs and milk in large bowl until blended. Add ground beef, stuffing mix, cheese, 1/4 cup barbecue sauce, garlic powder and onion powder; mix lightly. Shape into 8 balls, using about 1/2 cup meat mixture for each.
- Make an "X" with 2 bacon halves; place ball in center of "X". Bring ends of bacon up loosely over top; secure with toothpick. Place in single layer in disposable foil pan.
- Place foil pan on grate over unlit area; cover. Grill 40 min., monitoring grill for consistent temperature. Brush with remaining barbecue sauce; grill 5 min. or until meatloaves are done (160ºF). Remove toothpicks before serving.

- Whisk eggs and milk in large bowl until blended. Add all remaining ingredients except bacon; mix lightly. Shape into 6 (1-inch-thick) patties; wrap bacon slice around edge of each patty.
- Wrap individually in plastic wrap; place in freezer-weight resealable plastic bag. Seal bag. Freeze up to 3 months.
