This gourmet BLT recipe with thick, crispy bacon, juicy tomatoes, and creamy avocado is simple and fresh. The best BLT you've ever eaten!

6 slices thick-cut bacon
4 to 8 tender green lettuce leaves (washed and spun dry)
1 ripe heirloom tomato (cut into 1/2-inch thick slices (if tomatoes are not in season, use small on the vine tomatoes instead))
2 teaspoons red wine vinegar
Kosher salt
Ground black pepper
4 slices good quality (sturdy whole wheat bread (I like sourdough))
4 tablespoons nonfat plain Greek yogurt
1/2 ripe avocado (sliced)

Steps:

  • Preheat the oven to 400 degrees F.
  • For easy clean up, line a baking sheet with foil. Place a baking wire rack on top, coat the rack with non-stick spray, then arrange the bacon on the rack in a single layer. Bake for 15 to 25 minutes, until the bacon is crisp. Transfer to a paper towel-lined plate and pat dry.
  • Arrange the tomato slices in a single layer and drizzle with the vinegar. Sprinkle lightly with salt and pepper.
  • Towards the end of the bacon's cooking time, place the bread slices on a sheet pan (or directly on the oven rack) and toast in the oven for 5 minutes. Flip the slices over and toast for 1 additional minute, until the bread is evenly browned. Then place 2 slices of the toasted bread on a cutting board or plate. Spread each slice with 1 tablespoon of yogurt.
  • Place a layer of lettuce on top. Add the tomatoes on top of the lettuce, lightly shaking off excess juice.
  • Add 3 slices of bacon (tear the bacon in half as needed to help it fit).
  • Add the avocado, then sprinkle with an additional pinch of salt and pepper. Spread each of the remaining slices of toasted bread with 1 tablespoon of yogurt. Place, yogurt-side down, on top. Cut the BLT sandwiches in half and serve.

3 strips thick-cut, naturally cured bacon (see note)
2 slices high-quality sandwich bread, such as shokupan
2 tablespoons (30ml) homemade or store-bought mayonnaise (see note)
1 1/2 cups finely shredded iceberg lettuce (see note)
4 thick slices ripe tomato (see note)
Coarse sea salt, such as fleur de sel or Maldon
Freshly ground black pepper

Steps:

  • Place a griddle or skillet over medium-low heat. Add bacon and place a bacon press, skillet, or masonry trowel on top of it to keep it flat as it cooks. Cook until lightly browned on first side, about 5 minutes, then flip, cover again, and continue cooking until bacon is browned on both sides and fat has rendered, about 3 minutes longer. Transfer bacon to a paper towel-lined plate and set aside.
  • Place bread on same skillet or griddle and toast in bacon fat over medium-low heat, swirling occasionally, until evenly browned on first side. Flip and brown second side.
  • Lay toasted bread on a work surface and spread mayonnaise on both top faces. Divide lettuce evenly between both pieces of bread. Layer tomato slices on 1 piece of bread and sprinkle generously with coarse salt and freshly ground pepper.
  • Break bacon slices in half and layer them onto the sandwich in 2 layers of 3 half slices each, alternating the orientation of bacon in each layer for more structural stability. Close sandwich and cut in half diagonally. Serve immediately.

  • Line a large rimmed baking sheet with aluminum foil. Place a cooling rack on top. Place bacon on rack, making sure no pieces are overlapping.

One 13.8-ounce pop-tube pizza dough
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh rosemary
2 cloves garlic, grated on a rasp
Kosher salt and freshly ground black pepper
1 tablespoon light brown sugar
1/4 teaspoon cayenne pepper
Zest of 1 lemon
Freshly ground black pepper
4 slices thick-cut bacon
Two 1-inch slices beefsteak tomato
One 1-inch slice iceberg lettuce or 1 heart of romaine, sliced lengthwise
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
1 teaspoon honey
1 teaspoon lemon juice
1 teaspoon sriracha seasoning

Steps:

  • For the bread: Preheat the grill to 400 degrees F.
  • Lay out the dough on a work surface and sprinkle with the olive oil, parsley, rosemary, garlic, a pinch of salt and a few grinds of pepper. Fold it over itself and roll out or just press with your hands to make a square that could fit four slices of bread, because that's the goal. (You will eventually want to cut this into fourths to serve.) Place on the direct heat of the grill and cook until it releases from the grill and is slightly golden brown, 3 to 5 minutes. Flip and cook until done, 5 to 8 minutes.
  • For the bacon: Mix the brown sugar, cayenne pepper, zest and a few grinds of black pepper in a bowl. Press the bacon into this mixture and place on a piece of nonstick aluminum foil on the grill. Cook, without flipping, until the bacon is crispy, 18 to 20 minutes. Remove from the grill and roughly chop.
  • For the tomatoes and lettuce: Brush the tomato slices and lettuce with olive oil and sprinkle with a pinch of salt and pepper. Place the tomatoes and lettuce directly on the grill and cook, flipping halfway through, until the tomatoes and lettuce are slightly charred, 3 to 5 minutes.
  • Build the sandwiches: Mix the mayonnaise, honey, lemon juice and sriracha seasoning in a small bowl. Chop the grilled tomatoes and lettuce. Add the chopped tomatoes to the bread and press them slightly into the bread, then add the chopped bacon and piles of lettuce. Drizzle with the sriracha mayonnaise. Cut into four pieces and serve.

18 slices thick cut applewood smoked bacon, divided
2 1/2 tablespoons honey
2 teaspoons molasses
2 teaspoons sherry vinegar
Pinch ground cayenne
4 leaves radicchio
2 tablespoons extra-virgin olive oil
1/2 tablespoon sherry vinegar
1/2 tablespoon Dijon mustard
1 large ripe tomato
1/2 teaspoon smoked paprika
1 clove garlic
3/4 cup mayonnaise
Kosher salt and freshly ground black pepper
2 pounds ground chuck
1/4 teaspoon finely chopped fresh tarragon leaves
2 teaspoons kosher salt
1/8 teaspoon freshly ground black pepper
Vegetable oil, for grill pan
6 ounces Comte, shredded (can substitute Gruyere)
6 classic white bakery buns, split

Steps:

  • Preheat a nonstick grill pan over medium-high heat.
  • Roughly chop 6 of the bacon slices, and add to the grill pan. Cook, stirring occasionally, until the bacon just barely begins to turn crispy, about for 3 to 4 minutes. Add the cooked bacon to a food processor and process for 4 to 5 seconds. Set aside for later use, (in the patties).
  • Honey Molasses-Glazed Bacon:
  • In a small mixing bowl combine the honey, molasses, vinegar, and cayenne and mix until well combined. Brush the remaining 12 bacon slices on both sides with the honey mixture. Heat a large fireproof nonstick skillet on the grill. Add 1/2 the bacon and cook over medium-high heat until crispy, about 5 minutes, flipping once. Drain on paper towels. Repeat with remaining bacon.
  • To make Grilled Lettuce: Soak the radicchio leaves, for about 10 minutes, in an ice bath to lessen the amount of bitterness. Remove the leaves from the ice bath and pat dry with paper towels. Brush the leaves with 1 tablespoon oil. Put on the grill and cook briefly on each side. Transfer to a cutting board and cut into 1-inch wide strips. In a large mixing bowl, whisk together the remaining 1 tablespoon of oil, the sherry vinegar, and Dijon mustard. Add the radicchio and toss to coat.
  • Smoky Tomato Mayo: Put the tomato on the grill and cook for 6 to 8 minutes, turning occasionally, until most of the skin has blackened. Transfer to a small bowl and cover with plastic wrap. After 10 minutes, squeeze the tomato into a strainer to remove the seeds and most of the skin (you can leave a little bit of the burnt skin). Discard the seeds and skin. In the bowl of a food processor, combine the tomato, smoked paprika, garlic, and mayonnaise and puree. Season, to taste, with salt and pepper.
  • Patties: Combine the beef, reserved bacon (that has been chopped in the food processor), tarragon, salt, and pepper in a large bowl. Mix well, handling the meat as little as possible to avoid compacting. Divide the mixture into 6 equal portions and form into patties to fit the size of the buns.
  • Brush the grill pan with vegetable oil. Arrange the patties in the pan and cook, turning once, just until done, about 4 minutes on each side for medium-rare. During the last few minutes of cooking, top with equal amounts of cheese and put the buns, cut side down, on the outer edges of the grill to toast lightly.
  • To assemble the burgers, spread a generous amount of the Smoky Tomato Mayo on the cut side of the buns. Top the bun bottoms with 2 slices of Honey Molasses-Glazed Bacon, a cheese-topped patty, and equal amounts of Grilled Lettuce. Cover with the bun tops and serve.

GRILLED CHICKEN BLT SANDWICHES

2 boneless skinless chicken breasts
1/2 teaspoon dried Italian seasoning
4 slices sourdough or Vienna bread, toasted
2 tablespoons mayonnaise
2 lettuce leaves
1 small tomato, sliced

Steps:

  • Heat closed contact grill 5 minutes. When grill is heated, place bacon on bottom grill surface. Close grill; cook 4 to 6 minutes, turning once, until crisp. Drain on paper towels.
  • Meanwhile, place 1 chicken breast, boned side up, between 2 sheets of plastic wrap or waxed paper. With flat side of meat mallet or rolling pin and working from center, gently pound chicken until 1/4 inch thick; remove wrap. Repeat with remaining chicken breast. Sprinkle chicken with Italian seasoning.
  • Place chicken on bottom grill surface. Close grill; cook 4 to 6 minutes or until fork-tender and juices run clear.
  • Spread toasted bread slices with mayonnaise. Layer lettuce, tomato, chicken and bacon between toast slices.
