GRILLED ARTICHOKES

Grilled Artichokes image

Provided by Food Network

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 17

4 large artichokes
1 lemon, halved
4 tablespoons butter
4 tablespoons olive oil
2 tablespoons white wine
2 tablespoons lemon juice
Salt and freshly ground black pepper
Spicy Smoked Tomato Mayonnaise, recipe follows
2 tomatoes, halved
2 pasilla peppers, halved
1/4 cup garlic cloves
1/2 pound onions, large, sliced thin
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
2 cups mayonnaise

Steps:

  • Preheat an outdoor grill to medium heat.
  • Break off the artichokes' small outside leaves. Cut off the top with a knife and trim the sharp points of the leaves with scissors, rubbing with cut lemon as you go to avoid discoloration. Squeeze the lemon halves into a bowl of cold water, soak the artichokes for 10 minutes, then wash with cold water to remove sand.
  • Place artichokes in a large steamer insert over simmering water and steam until heart is tender, about 25 to 35 minutes depending upon size. Allow to cool. Cut in half lengthwise and remove choke with a spoon.
  • Meanwhile, in a small saucepan over medium heat, melt the butter with the olive oil. Stir in the white wine and lemon juice, keep warm.
  • Grill the artichokes, basting with the butter mixture, until until golden on the surface and heated through, about 5 to 10 minutes. Season with salt and pepper. Serve with the Spicy Smoked Tomato Mayonnaise.
  • Special equipment: smoker/dehydrator
  • Chef's Note: If you do not have access to a smoker/dehydrator, you can substitute 4 sun-dried tomatoes and 2 teaspoons ancho or pasilla powder for the tomatoes and pasillas, eliminating the tomatoes and pasilla peppers from the recipe.
  • Dry the tomatoes and pasilla peppers in an oak smoker/dehydrator overnight.
  • Preheat an outdoor grill, preferably wood fired with oak wood, for indirect heat cooking.
  • Wrap garlic and onions loosely in 2 separate foil packets and roast/grill over indirect heat until they are soft, being careful not to burn them. The garlic should take about 1 to 1 1/2 hours; the onions should take about 30 to 45 minutes.
  • In a food processor, puree the smoked pasilla peppers and tomatoes with the garlic and onions. Add the cayenne, chili powder, paprika and salt. Mix in the mayonnaise. Leftover mayonnaise will keep, refrigerated, for up to 3 or 4 days.
  • Prep Time: 15 minutes
  • Cook Time: 1 to 1 1/2 hours
  • Inactive Prep Time: 8 hours

4 veal chops, each 3/4 pounds and 1-inch thick
1 pound fresh shiitake mushrooms, stems removed
1 yellow onion, cut crosswise into 1/2-inch thick slices
3 tablespoons olive oil
Salt and freshly ground pepper
2 plum tomatoes, seeded and cut into 1/2-inch dice
2 yellow tomatoes, seeded and cut into 1/2-inch dice

Remove the artichokes from the pan, season with salt and pepper and grill for 4 to 5 minutes until lightly golden brown on both sides.

HOUSTON'S GRILLED ARTICHOKES WITH REMOULADE

Houston's Grilled Artichokes With Remoulade image

Houston's is one of my favorite restaurants, if anything, for the simplicity and consistency of their dishes. Here is one of my favorites. You can serve these without the remoulade and they are just as good!

Categories     Low Protein

Time 35m

Yield 4 serving(s)

Number Of Ingredients 15

2 large artichokes
1 lemon, quartered
3/4 cup olive oil

  • Remoulade:.
  • In a medium bowl, combine all the ingredients and mix well.

Grilled Artichokes with Bagna Cauda image

Provided by Giada De Laurentiis

Categories     side-dish

Time 35m

Yield 4 servings

Number Of Ingredients 13

1 cup dry white wine
4 sprigs thyme
2 sprigs rosemary
1 bay leaf
Kosher salt
1 lemon, halved
2 artichokes, halved, outer leaves removed, tips trimmed, stems and bases peeled
1 tablespoon olive oil
1/4 cup olive oil
3 cloves garlic, smashed
1 teaspoon anchovy paste
3 tablespoons unsalted butter, cut into cubes
Kosher salt

Steps:

  • For the grilled artichokes: In a medium Dutch oven, combine the white wine, thyme, rosemary, bay leaf, 1/2 teaspoon salt and 1 cup water. • For the bagna cauda: Place a small saucepan over medium heat. Add the olive oil, garlic and anchovy paste to the hot pan and stir with a wooden spoon, mashing the anchovy paste into the oil. Cook for about 3 minutes, or until the garlic is fragrant and just beginning to toast. Stir in the butter, one piece at a time, until completely incorporated. Season with a pinch of salt. Keep warm over low heat.
  • To finish the grilled artichokes: Preheat a grill pan over medium-high heat. Drizzle the artichokes with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon salt.
  • Place the artichokes on the grill, cut-side down; grill until nicely browned, 4 minutes. Turn the artichokes and grill for another 2 minutes, pressing down gently for even browning.

Grilled Artichokes With Sesame Dipping Sauce image

I love artichokes (see all of the recipe's I have posted) This is from Walt's Wharf in Seal Beach. All the food is superb and beautifully presented, but we always look forward to sharing the delicious grilled artichoke appetizer. The artichokes can be steamed in advance and thrown on the grill just before serving, which makes them perfect for entertaining. COOKS NOTES: You many want to reduce the amount of sesame oil, depending on your tastes. Please note: this is an adopted recipe and I hope to make it soonest. If you make it before I do, I would appreciate feedback, Thanks ! ZWT REGION: United States of America.

Yield Makes 6 (side dish) servings

Number Of Ingredients 9

1/2 cup extra-virgin olive oil
6 flat anchovy fillets, drained, patted dry, and minced
2 1/2 tablespoons drained capers, rinsed and finely chopped
1/4 cup finely chopped mint

Trim pointed tips of leaves with kitchen shears, then cut a thin slice from end of stem to expose a fresh cross section. • Toss artichokes with oil in a bowl. Oil grill rack, then grill artichokes, cut sides down, covered only if using a gas grill, turning once, until golden brown in spots, 6 to 8 minutes. Serve drizzled with sauce.

COPYCAT HITCHING POST GRILLED ARTICHOKES

Copycat Hitching Post Grilled Artichokes image

This is the recipe for The Hitching Post's coveted grilled artichokes, courtesy the chef and owner Frank Ostini. The sauce is time-consuming, but I think they're wonderful even without the sauce if you don't feel like making it. It also makes a lot of sauce so you may want to cut it in half if you're only making 4 artichokes. The cook and prep time include the mayonnaise sauce. BTW- Cutting the artichokes in half and cutting out the choke BEFORE steaming them, makes the process go a lot faster! And the faster you steam 'em, the faster you can grill 'em and eat 'em!!! =)

Time 2h45m

Yield 4-8 serving(s)

Number Of Ingredients 17

4 large artichokes
2 lemons, halved
4 tablespoons butter
4 tablespoons olive oil
2 tablespoons white wine
2 tablespoons lemon juice
kosher salt (or Garlic Salt is good, too!)
fresh ground black pepper
2 tomatoes, halved
2 pasilla chiles, halved
1/4 cup garlic clove
1/2 lb onion, large, sliced thin
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
2 cups mayonnaise

Steps:

  • Preheat an outdoor grill to medium heat.
  • Break off the artichokes' small outside leaves. Cut off the top with a knife and trim the sharp points of the leaves with scissors, rubbing with cut lemon as you go to avoid discoloration. Cut the artichokes in half and also rub with lemon to avoid discoloration. Squeeze the lemon halves into a bowl of cold water, soak the artichokes for 10 minutes, then wash with cold water to remove sand.
  • Place artichokes in a large steamer insert over simmering water and steam until heart is tender, about 25 to 35 minutes depending upon size.
  • Allow to cool then remove choke with a spoon.
  • Meanwhile, in a small saucepan over medium heat, melt the butter with the olive oil. Stir in the white wine and lemon juice, keep warm.
  • Grill the artichokes, basting with the butter mixture, until golden on the surface and heated through, about 5 to 10 minutes. Season with salt and pepper. Serve with the Spicy Smoked Tomato Mayonnaise.
  • Instructions to make the Spicey Smoked Tomato Mayonnaise:.
  • Special equipment: smoker/dehydrator.

Time 1h15m

Yield 4 servings

Number Of Ingredients 15

4 medium/large artichokes
Water
1/4 cup olive oil
1 tablespoon garlic salt
1 teaspoon chipotle powder
2 lemons, juiced
1/3 cup Braggs liquid amino acids
6 cloves minced garlic
1 teaspoon red chili powder, such as New Mexican
Chipotle Mayonnaise Dipping Sauce, recipe follows
3 heaping tablespoons mayonnaise
1 teaspoon Dijon mustard
3 cloves minced garlic, lightly sauteed in olive oil
1 teaspoon chipotle chili powder
1/2 lemon, juiced

Steps:

  • Cut the tops off the artichokes and trim the leaves so that they will fit into a large covered pot. Fill a large pot with water so that the water comes midway up the artichokes. Add the olive oil, garlic salt and chipotle powder and bring to a boil over medium heat. Cook the artichokes in the boiling water, covered for approximately 30 minutes, starting with the base up, then turning once. The artichokes are done when a knife inserts easily into the base, and the leaves pull away with only a little resistance.
  • Add the marinade ingredients to a small bowl and stir to combine.
  • Heat grill to medium-high.
  • Remove the artichokes from the pot to a cutting board and let cool. Pour the marinade over the cut top of the artichokes and work the garlic gently into the leaves. You can cut and grill them immediately or leave them in the refrigerator overnight. When you are ready to grill, slice the artichokes lengthwise down the center and remove the choke. Put on a hot grill, and cook until they have good coloration on all sides. Transfer to a serving platter and serve with Chipotle Mayonnaise Dipping Sauce.
  • Combine all ingredients in a small bowl. The chipotle can be adjusted according to taste.

Grilled Artichokes With Worcestershire Aioli image

My husband and I had a dish similar to this on our anniversary. It is simply divine! The recipe is very easy, and it's the dipping sauce that sets this one apart from the rest! You might want to double the sauce if you want to go hogwild with it!

Grilled Baby Artichokes with Mint Salsa Verde image

Provided by Food Network Kitchen

Categories     side-dish

Time 40m

Yield 4 servings

Number Of Ingredients 11

1 lemon, halved, plus 3 tablespoons lemon juice
2 pounds baby artichokes (14 to 18)
2 cups fresh mint, chopped
1 cup fresh parsley, chopped
1 small Fresno chile pepper, seeded and finely chopped
1 tablespoon capers, drained and chopped
2 oil-packed anchovy fillets, chopped
1 small clove garlic, finely chopped
1 teaspoon dijon mustard
1/2 cup extra-virgin olive oil
Kosher salt

Steps:

  • Preheat a grill to medium. Fill a large bowl with cold water and squeeze in the halved lemon; reserve the halves. Remove the outer dark green leaves from the artichokes until only light green and yellow leaves remain. Cut off the top 1/2 inch of the artichokes. Using a paring knife, trim the stem and lightly peel around the bottom of the base where it meets the stem. Cut the artichokes in half, rub with the lemon halves and add to the lemon water.
  • Make the salsa verde: Combine the mint, parsley, chile pepper, capers, anchovies, garlic and mustard in a medium bowl. Stir in the lemon juice and 6 tablespoons olive oil to make a thick, chunky sauce; season with salt. Set aside at room temperature.
  • Drain the artichokes and pat dry. Toss the artichokes in a large bowl with the remaining 2 tablespoons olive oil; season with salt. Grill the artichokes, turning occasionally, until tender and charred in spots, 6 to 10 minutes, depending on their size. Toss with the salsa verde while still warm.
