GRILLED AMBERJACK SANDWICHES WITH SPICY TARTAR SAUCE



Grilled Amberjack Sandwiches with Spicy Tartar Sauce image

Number Of Ingredients 11

Four 4- to 6-ounce amberjack fillets, cleaned of all skin and bones (mahi does well as a substitute)
2 tablespoons olive oil
2 teaspoons fish rub, such as Emeril's Fish Rub
1 cup mayonnaise, homemade or store-bought
2 tablespoons minced fresh cilantro or dill
2 tablespoons dill pickle relish
2 teaspoons minced garlic
Sea salt and cracked black pepper
1 to 2 tablespoons hot sauce of choice, preferably Louisiana-style or Sriracha
4 medium hamburger buns or rolls of choice
4 large leaves romaine lettuce

Steps:

  • Heat a grill or grill pan to medium heat.
  • Brush the fillets with the olive oil and sprinkle on all sides with the fish rub. When the grill is hot, place the fillets evenly spaced on the grill. Cook until the fish is just cooked through, about 5 minutes per side. Flip only once if possible.
  • While the fish is cooking, combine the mayonnaise, cilantro, relish, garlic and a sprinkle of salt and pepper in a medium bowl. Start with a generous tablespoon of hot sauce, then stir and taste to assess the heat. If more is preferred, add up to 1 more tablespoon. Set aside.
  • Slice the buns and place face-down on the grill until toasted, or toast in the oven. Spread the desired amount of the tartar sauce, around 2 tablespoons, on the top half of each bun. Place the grilled fish on the bottom halves.
  • If desired, quickly grill the romaine leaves until some light charring occurs. Top each sandwich with 1 leaf and enjoy!

Healthy, delicious, thick sauce made with simple fresh ingredients reminiscent of a bruschetta topping cover a grilled mild white fish. I like to serve it with brown rice that has been mixed with butter and Parmesan cheese. If you are watching fat and calories, omit the butter and cheese.

2 tablespoons olive oil, divided
2 large cloves garlic, chopped
1 (14.5 ounce) can diced tomatoes
salt and ground black pepper to taste
1 cup baby spinach
3 tablespoons chopped fresh basil
2 tablespoons capers
4 (4 ounce) fillets amberjack, cut 3/4-inch thick

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-low heat. Add garlic; cook and stir until softened, 2 to 4 minutes. Add tomatoes, salt, and pepper; cook and stir over medium heat until heated through, about 5 minutes. Stir in spinach, basil, and capers. Cook until most of the liquid has evaporated and sauce is thick and chunky, 10 to 20 minutes.
  • Preheat grill for medium heat.
  • Rub remaining 1 tablespoon oil over amberjack fillets. Sprinkle salt and pepper on top. Grill fillets until opaque and flaky, 3 to 4 minutes per side.
  • Serve fillets topped with sauce.

This is my boyfriends recipe. We go deep sea fishing once or twice a year in the Gulf of Mexico and catch amberjack. You will love this recipes it's quick and easy.

1 amberjack filet
season salt
garlic salt
paprika
1/4 c butter, melted

Steps:

  • 1. Melt butter and brush over Amberjack. Sprinkle season salt, garlic salt and paprika over Amberjack. Grill over medium ash coal 5 to 7 minutes on each side until done.

6 amberjack steaks -- (4-ounce ea)
1/3 cup lemon juice
1/3 cup red wine vinegar
1 tablespoon sugar
1 teaspoon minced thyme
1/8 teaspoon salt
3 cloves garlic -- minced
3 tablespoons cracked pepper
Vegetable cooking spray
Fresh thyme sprigs -- (optional)

Steps:

  • Place amberjack in a shallow dish. Combine lemon juice and next 5 ingredients in a small bowl; stir well. Pour over fish, turning to coat. Cover and marinate in the refrigerator 30 minutes, turning occasionally. Remove fish from marinade, discarding marinade. Sprinkle pepper evenly over both sides of fish, pressing pepper into fish. Coat grill rack with cooking spray. Place on grill over medium coals (300F to 350F). Place fish on rack; grill, covered, 4 to 6 minutes on each side or until fish flakes easily when tested with a fork. (Do not overcook or the fish will be dry.) Transfer fish to individual serving plates. Garnish with thyme sprigs, if desired.
