1 cup sliced almonds
3 tablespoons red wine vinegar
⅓ cup olive oil
¼ cup fresh cranberries
1 tablespoon Dijon mustard
½ teaspoon minced garlic
½ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons water
½ red onion, thinly sliced
4 ounces crumbled blue cheese
1 pound mixed salad greens

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Arrange almonds in a single layer on a baking sheet. Toast in oven for 5 minutes, or until nuts begin to brown.
  • In a blender or food processor, combine the vinegar, oil, cranberries, mustard, garlic, salt, pepper, and water. Process until smooth.
  • In a large bowl, toss the almonds, onion, blue cheese, and greens with the vinegar mixture until evenly coated.

Mixed Greens with Dried Cranberries and Toasted Pecans image

1/2 cup pecans
4 cups romaine lettuce, torn into small pieces
4 cups mesclun (mixed baby greens), washed and spun dry
1/2 cup slivered red onion
About 1/3 cup Lemon-Soy Dressing, recipe follows
4 tablespoons dried cranberries
1 large garlic clove, minced
2 tablespoons lemon juice
1 tablespoon red wine vinegar
1 1/2 teaspoons tamari soy sauce
1/8 teaspoon salt
Generous seasoning freshly ground pepper
1/2 cup mild-flavored olive oil

Steps:

  • Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
  • Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
  • Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.

CRAISIN' GREEN SALAD WITH PEARS



Craisin' Green Salad With Pears image

I developed this to go along with Recipe#379227. Remember that pears ripen from the inside out, the best way to check for ripeness is to "check the neck for ripeness". To do this, gently press near the stem with your thumb. When it gives to gentle pressure it is ripe, juicy and ready to eat. If you wait until the pear is soft around the middle chances are it will be overripe. I have also used Recipe#369334 instead of olive oil, and subbed in goat cheese or bleu cheese -all of them are good! Radicchio is bitter so be careful that you are using just a smidgeon of it. The cooking time is the resting time in the refrigerator.

3 tablespoons olive oil
3 tablespoons blueberry pomegranate infused red wine vinegar
1 tablespoon honey
1 1/4 teaspoons Dijon mustard
3/4 teaspoon salt
1/8 teaspoon black pepper
1 head lettuce, torn into bite-size pieces
radicchio, a few leaves to give it some red
3 bosc pears, peeled cored and chopped
12 red grapes, halved
4 ounces feta cheese, crumbled
1 avocado, peeled, pitted, and diced
1 tablespoon red onion, chopped (optional)
1/4 cup almonds, sliced honey roasted
1/4 cup dried cranberries

Steps:

  • For the dressing, blend oil, vinegar, honey, mustard, salt, and pepper.
  • In a large serving bowl, layer lettuce, pears, feta cheese, avocado, and red onions.
  • Pour dressing over salad, sprinkle with almonds and dried cranberries, and let rest in refrigerator an hour before serving so that the flavors have a change to meld.
