BAKED SWEET POTATO WITH GREENS



Baked Sweet Potato with Greens image

Top your baked sweet potato with a Swiss chard and onion mix with avocado slices.

2 pricked sweet potatoes
1 tablespoon extra-virgin olive oil
1 thinly sliced small onion
1 stemmed and chopped bunch Swiss chard
Coarse salt
1 sliced avocado, divided
Cayenne
Lemon

Steps:

  • Heat oven to 400 degrees. Bake sweet potatoes until tender, about 45 minutes.
  • Heat oil in a large skillet over medium heat. Add onion and cook until tender, about 6 minutes. Add chard and cook, stirring, until bright green and wilted, about 5 minutes. Season with salt.
  • To serve, split potatoes and top each with the greens and 1/2 sliced avocado. Season with cayenne, salt, and a squeeze of lemon.

This is a moist, spice-type cake...a good way to use some of those extra green tomatoes before frost hits. Sprinkle the finished cake with confectioners' sugar or frost with your favorite caramel or cream cheese frosting.

4 cups chopped green tomatoes
1 tablespoon salt
½ cup butter
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
¼ teaspoon salt
½ cup raisins
½ cup chopped walnuts

Steps:

  • Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • Cream butter and sugar. Add eggs and beat until creamy.
  • Sift together flour, cinnamon, nutmeg, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be very stiff. Mix well.
  • Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch pan.
  • Bake for 40 to 45 minutes in the preheated oven, or until toothpick inserted into cake comes out clean.

1 cup cornmeal
1 tablespoon dried dill weed
salt to taste
ground black pepper to taste
5 medium green tomatoes, thinly sliced

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
  • In a small bowl, mix the cornmeal, dill, salt, and pepper. Dip tomato slices into the mixture, coating both sides. Arrange coated slices in a single layer on a medium baking sheet.
  • Bake 45 minutes in the preheated oven, until crisp and golden brown.
