2 hearts romaine lettuce, chopped
1 cup shredded carrots
4 scallions, cut into 3-inch lengths then thinly sliced into sticks
1 zucchini, cut into matchsticks
1 red bell pepper, cut into matchsticks
1 clove garlic
1/2 cup smoked almonds
4 soft sun-dried tomatoes, chopped
Handful fresh cilantro leaves
Handful fresh mint leaves
3 tablespoons red wine vinegar, eyeball it
Splash of water, 2 tablespoons
1/3 cup extra-virgin olive oil, eyeball it
Black pepper

Steps:

  • Place lettuce on large platter and scatter veggies across the top. Put the garlic, almonds, sun dried tomatoes, cilantro, mint and vinegar in food processor and turn it on - if you have trouble getting the dressing going, add a splash (2 tablespoons) of water then stream in extra-virgin olive oil. Process the dressing then season it with black pepper, to taste, and pour evenly over the salad and serve.

1/4 cup fresh lime juice
2 tablespoons honey
1 tablespoon red-wine vinegar
1 teaspoon minced garlic
1/4 cup olive oil
Salt and freshly ground black pepper
2 cups cubed mango, frozen/defrosted or jarred
1 head romaine (about 1 1/2-pounds), chopped
1/2 seedless cucumber, cubed

Steps:

  • Whisk together juice, honey, vinegar, and garlic. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.
  • Toss together mangoes, romaine, and cucumber with dressing, to taste.

2 each large sweet yellow, red and green peppers
1 small red onion, thinly sliced
6 tablespoons olive oil
3 tablespoons balsamic vinegar
1 tablespoon each minced fresh oregano, rosemary, basil and parsley
1 garlic clove, minced
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/4 teaspoon salt
1 cup cherry tomatoes, halved
1 carton (8 ounces) fresh mozzarella cheese pearls
5 fresh basil leaves

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a large bowl; cover and let stand for 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Cut peppers into thin strips; place in a large bowl. Add onion., In a small bowl, whisk the oil, vinegar, herbs, garlic, garlic powder, cayenne, pepper and salt; pour over pepper mixture and toss to coat. Cover and refrigerate for up to 4 hours., Before serving, allow peppers to come to room temperature. Place on a serving plate; top with tomatoes, cheese and basil leaves.

1 cup baby spinach
1/4 cup hummus
2 tablespoons olive oil
2 tablespoons pesto
1 tablespoon honey
1 teaspoon kosher salt

1 lemon, zested and juiced
4 cups chopped romaine lettuce
2 cups chopped kale
1 cup frozen peas, thawed
1/2 cup grated Pecorino Romano

2 roasted red bell peppers, drained well, chopped
Salt and pepper
1 small clove garlic, chopped
2 tablespoons balsamic vinegar, eyeball it
3 tablespoons extra-virgin olive oil, eyeball it
A drizzle of honey
4 romaine hearts
A handful pitted kalamata olives, chopped

Steps:

  • Place roasted red bell peppers in food processor bowl. Season them up with salt and pepper. Add garlic and vinegar to food processor. Turn processor on and stream in extra-virgin olive oil and some honey. When dressing is smooth and combined, stop and adjust seasonings.
  • Chop romaine into bite-sized pieces and put in a salad bowl then pour the dressing over lettuce, toss and serve. Garnish with chopped olives.

1 medium head raddichio
1 small bulb fennel
A generous drizzle of balsamic vinegar
3 tablespoons (3 turns around the salad bowl in a thin stream) extra-virgin olive oil

  • Shred romaine and raddichio and discard cores. Trim tops of fennel bulb and quarter lengthwise. Remove core from each quarter with an angled cut into each quarter. Slice fennel across into thin pieces and add to salad. Dress salad with vinegar, oil, salt, and pepper, to taste.

2 large green peppers, halved and seeded
2 large red peppers, halved and seeded
1 tablespoon olive oil
2 tablespoons sweet onions or 2 tablespoons yellow onions, finely chopped
1 1/4 cups ripe tomatoes, peeled seeded and cut into a 1/4 inch dice
1/2 teaspoon salt (to taste)
1 teaspoon cumin
1/4 teaspoon cayenne
1 tablespoon extra virgin olive oil
1/2 teaspoon balsamic vinegar
1 pinch salt
fresh ground black pepper

Steps:

  • Pre-heat oven to 425 degrees.
  • Place the peppers cut-side down on a baking sheet with a lip or a baking pan. Bake for 10 minutes. Turn peppers over and bake for an additional 5 minutes. Repeat previous step two more times. Total baking time is 25 minutes.
  • Remove tray from oven and cover with a clean dishtowel for 10 minutes. The peppers should be soft and tender and you can easily slip off the skins.
  • Cut the green peppers into a 1/4 inch dice. Slice the red pepper halves in half (now they will be quarters) and reserve.
  • Add 1 tablespoon of oil to a non-stick skillet over medium heat. Add onions and stir for a minute, then add garlic and stir for 30 seconds. Add the green peppers, lower the heat a bit and cook for 5 minutes. Add tomatoes, cumin and cayenne and mix well. Cook an additional 6 minutes looking for the mixture to loose some of its moisture.
  • Combine the ingredients for the dressing in a small bowl and whisk.
  • To assemble your salad, arrange the red pepper quarters on a serving platter -- a la spokes on a wheel or flower petals. Its fine if the overlap a bit. Drizzle dressing over the red peppers. Spoon the green pepper-tomato mixture into the center -- allowing some to casually spill over.
  • Alternately, you can arrange this on single serving platters with 2 red pepper quarters in a V-shape and the green pepper-tomato mixture placed where the two strips join together.
  • This salad can be served chilled or at room temperature.

SALAD:
8 to 10 cups torn salad greens
1 red onion, sliced into rings
1 cucumber, peeled and sliced
2 to 3 tomatoes, cut into wedges
1 green pepper, sliced into rings

Steps:

  • In a jar or bottle with tight-fitting lid, combine all the dressing ingredients; shake well. Chill. Just before serving, combine greens, onion, cucumber and tomatoes in a large salad bowl. Pour desired amount of dressing over salad; toss to mix. Top with the green pepper rings.
