Favorite Green Salad with Sweet Poppyseed Dressing is the perfect salad to make and take or just have on hand for a delicious lunch!

1/2 cup white granulated sugar
1/3 cup fresh lemon juice
1 teaspoon Dijon mustard
3 green onions (chopped (white and green parts))
1/2 teaspoon salt
1 teaspoon poppy seeds
2/3 cups vegetable oil
Lettuce greens of your choice (torn to bite size)
1 cup cashews lightly chopped
1 cup craisins
6 cherry tomatoes (cut in half)
optional ingredients include shredded cheese or chicken, cubed fruit or veggies

Steps:

  • Combine dressing ingredients and mix well. Right before serving, combine salad ingredients and drizzle with dressing. Reserve any extra dressing in the refrigerator for future use.

Mandarin oranges add the color and the dressing adds the zing to this mixture of greens. You can use spinach or iceberg lettuce in place of romaine, or use a combination of any of them.

2 heads romaine lettuce, torn into bite-size pieces
3 (15 ounce) cans mandarin oranges, drained
1 bunch green onions, chopped
5 ounces slivered almonds
¾ cup white sugar
½ cup apple cider vinegar
1 tablespoon salt
1 teaspoon dry mustard
1 cup vegetable oil
1 ½ tablespoons poppy seeds

Steps:

  • Mix lettuce, oranges, green onions, and almonds in a large mixing bowl.
  • Blend sugar, vinegar, salt, and mustard in a blender. Stream oil into the dressing while blending. Continue to blend until the dressing emulsifies. Add poppy seeds and blend briefly to mix. Drizzle dressing over the salad and toss to coat.

1/4 cup sugar
1/3 cup slivered almonds
1 bunch romaine, torn (about 8 cups)
1 small onion, halved and thinly sliced
2 cups halved fresh strawberries
DRESSING:
1/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon sour cream
1 tablespoon 2% milk
2-1/4 teaspoons cider vinegar
1-1/2 teaspoons poppy seeds

Steps:

  • Place sugar in a small heavy skillet; cook and stir over medium-low heat until melted and caramel-colored, about 10 minutes. Stir in almonds until coated. Spread on foil to cool. , Place romaine, onion and strawberries in a large bowl. Whisk together dressing ingredients; toss with salad. Break candied almonds into pieces; sprinkle over salad. Serve immediately.

I always get rave reviews when I serve this simple salad with a zesty poppy seed dressing! I often don't use the full amount of dressing, as I prefer less.

6 slices bacon
⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil
1 teaspoon poppy seeds
10 cups torn romaine lettuce leaves
1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place vinegar, sugar, red onion, mustard powder, and salt into the bowl of a blender. Cover, and puree on high until smooth. Reduce blender speed to medium-low; slowly pour in the vegetable oil and blend until incorporated and the dressing is creamy. Stir in the poppy seeds and set aside.
  • To serve, toss the romaine in a large bowl with the crumbled bacon, Mandarin oranges, and enough dressing to moisten. Place onto salad plates and sprinkle with toasted almonds.

POPPY SEED DRESSING:
1/3 cup red wine vinegar
3/4 cup sugar
1 teaspoon ground mustard
3/4 cup teaspoon salt
3/4 cup vegetable oil
1 tablespoon poppy seeds
SALAD:
2 cups pineapple chunks
2 cups green grapes
2 medium firm bananas, sliced
2 cups sliced fresh strawberries
Floral Ice Bowl
Lettuce or lemon leaves, optional

A friend shared a recipe with me for a salad similar to this a while back. I lost the recipe, but adapted the dish to my family's tastes. We love this refreshing twist on a healthy salad.

1 lemon, juice of
2 teaspoons balsamic vinegar
1/3 cup sugar
1 tablespoon olive oil
1 teaspoon poppy seed
1/4 cup toasted nuts (walnuts, cashews, almonds)
1 1/2 cups strawberries, cleaned and sliced
6 ounces fresh spinach
6 ounces fresh leaf lettuce (red leaf, green leaf, or boston)
1 cup chopped cooked chicken
1/2 cucumber, sliced
1/2 red onion, diced
1/2 cup sliced radish

Steps:

  • In a bowl, add juice from one lemon, 2t balsamic vinegar, 1/3 c sugar, 1 tablespoon of olive oil. and 1 teaspoon of poppy seeds. Whisk until well blended.
  • Wash and dry salad greens. In a large salad bowl, arrange greens, optional ingredients, strawberries, and toasted nuts. Pour dressing over top and toss well. Serve immediately.
