4 cups salad mix, store bought
1 bartlett pear, cored and thinly sliced
6 fresh figs (green or purple), sliced in 1/2
4 tablespoons crumbled Gorgonzola
4 tablespoons toasted chopped pecans
Lemon Vinaigrette, recipe follows
1 cup extra-virgin olive oil
1/2 cup fresh lemon juice
1 teaspoon salt
1 teaspoon lemon extract
2 tablespoons lemon curd
1 tablespoon honey
1 teaspoon Dijon mustard

Steps:

  • Place a pile of greens on each salad plate. Arrange the fruits on top and sprinkle with cheese and nuts. Lightly drizzle with vinaigrette.;
  • Combine all the ingredients in a bowl and whisk to combine.

1 large ripe red pear, sliced
2 tablespoons butter, divided
1/2 cup coarsely chopped pecans
1/4 teaspoon salt, divided
2 cups mixed salad greens
2 tablespoons balsamic vinegar
2 tablespoons olive oil
Pepper to taste

Steps:

  • In a large skillet, saute pear in 1 tablespoon butter until lightly browned, about 7 minutes. In a small skillet, saute pecans in remaining butter until lightly browned, about 5 minutes; sprinkle with 1/8 teaspoon salt., Divide salad greens between two salad plates; arrange pears over greens. Sprinkle with pecans. In a small bowl, whisk the vinegar, oil, pepper and remaining salt. Drizzle over salad.

1/2 cup halved walnuts
1/2 cup Champagne
1/2 cup canned jellied cranberry sauce
1/4 cup minced shallots
1 teaspoon Dijon mustard
2 tablespoons olive oil
Salt and ground black pepper
6 cups mixed lettuce greens
2 pears, cored and diced
1/2 cup dried cranberries

Steps:

  • Toast walnuts in a small dry skillet over medium heat (it will take about 3 minutes).
  • In a small saucepan, combine Champagne, cranberry sauce, shallots, Dijon mustard and oil. Whisk together. Set pan over high heat and bring to a boil. Simmer until reduced to about 1/3 cup (about 5 minutes). Remove from heat and season to taste with salt and black pepper.
  • Place greens in a large bowl. Top with pears, toasted walnuts and dried cranberries. Drizzle over cranberry vinaigrette just before serving.

2 canned pear halves in natural juice, drained
3 tablespoons lemon juice
1 tablespoon white wine vinegar
2 tablespoons light olive oil
1/4 teaspoon salt
black pepper (15 grinds)
1/4 cup walnuts, finely chopped
1 (10 ounce) package mixed salad greens
1 small red bell pepper
1 ripe bosc pear
1/2 cup gorgonzola, finely crumbled

Steps:

  • To prepare the dressing:
  • In a blender or food processor, puree the.
  • drained pear halves with the lemon juice, vinegar, olive oil, salt and pepper until very smooth and silky.
  • Transfer to a jar, cover andrefrigerate.
  • To prepare the salad: Place the chopped walnuts in a small dry skillet. Toast over medium heat about 4 minutes, until fragrant. Remove from the pan and set aside.
  • Place the salad mix in a bowl and cover with a paper towel. Refrigerate until ready to serve.
  • Peel the tough outer skin from the bell pepper with a vegetable peeler. You probably won't be able to get all of the peeling off, especially in the crevices of the pepper. Stem, seed and finely sliver the pepper; put.

  • Just before serving, core and dice the pear and add to the salad with the walnuts and Gorgonzola. Add the dressing, toss to coat and serve.

1/3 c sugar
2/3 c pecans, toasted and chopped
cooking spray
1/2 tsp kosher salt, divided
2 Tbsp white balsamic vinegar
1 1/2 tsp dijon mustard
3 Tbsp extra-virgin olive oil
1 Tbsp capers, chopped
4 c green leaf lettuce, torn
4 c romaine lettuce, chopped
2 c radicchio, chopped
1 red anjou pear, ripe, thinly sliced
1/4 tsp black pepper, freshly ground

Steps:

  • 1. Place the sugar in a small, heavy saucepan over medium-high heat; cook until the sugar dissolves, stirring gently as needed to dissolve the sugar evenly (about 1 minute). Continue cooking 1 minute or until golden (do not stir).
  • 2. Remove from the heat; carefully stir in the nuts to coat evenly. Spread the nuts on a baking sheet coated with cooking spray; separate nuts quickly. Sprinkle with 1/4 tsp salt. Set aside until cool. Break into small pieces.
  • 3. Combine the vinegar and mustard, stirring with a whisk. Gradually add the oil, stirring constantly with a whisk. Stir in the capers.

6 tablespoons medium-dry Riesling
3 tablespoons fresh lemon juice
1 tablespoon chopped shallot
1 teaspoon Dijon mustard
1/2 cup vegetable oil
1/2 pound haricots verts or small green beans, trimmed
6 cups (packed) baby spinach leaves (about 6 ounces)
3 ripe Bartlett pears, quartered, cored, cut into 1/4-inch-thick slices
3/4 cup crumbled blue cheese
3/4 cup walnuts, toasted

Steps:

  • Purée diced pear, Riesling, lemon juice, shallot and Dijon mustard in food processor until smooth. With machine still running, gradually add vegetable oil through feed tube and blend mixture until smooth. Transfer to bowl. Season dressing to taste with salt and pepper.
  • Cook green beans in large pot of boiling salted water until just tender but still firm to bite. Drain well. Transfer beans to medium bowl filled with ice water and cool thoroughly. Drain well. (Dressing and beans can be prepared 1 day ahead. Cover separately and refrigerate.)
  • Toss green beans, spinach and sliced pears in large bowl with enough Riesling dressing to coat. Divide salad among plates. Sprinkle with crumbled blue cheese and toasted walnuts.

This is a salad that my sister tasted in England. We had to put our minds together to make a salad similar to it. Post this recipe for World Tour 2006.

100 g Stilton cheese, in crumbs
1 pear
10 g walnuts, chopped
3 tablespoons apple cider vinegar
2 tablespoons olive oil
1 teaspoon Dijon mustard
salt
pepper

Steps:

  • Wash and drain lettuce. Cut the pear in cubes. Mix well the ingredients of the dressing (vinegar-olive oil-mustard-salt-pepper).
  • Tear the lettuce in a large bowl, using hands, in large pieces. Add the pear.
  • Add half of the dressing.
  • Add the stilton, the walnuts and at last pour over the rest of dressing.
  • Serve quickly.

4 cups firm Bosc pears, thinly sliced
1 tablespoon lemon juice
4 ounces Gorgonzola or blue cheese, crumbled
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons Dijon mustard
1 large shallot, peeled and chopped
1 (5-ounce) bag spring-greens mix

Steps:

  • Preheat oven to 350°F. Wash beets, leaving wet, and wrap individually in foil. Arrange beets in roasting pan or on baking sheet; bake 90 minutes or until tender (poke a thin-bladed knife through foil to test). Cool in foil. (To cook on stovetop, place beets in saucepan and cover with water; bring to a boil and cook over medium heat until tender. Cool. This takes less time than baking--45 minutes to an hour.) Dice beets. Toss pears with lemon juice in a small bowl; cover, and refrigerate up to 2 hours. Place diced roasted beets and cheese in 2 separate bowls; cover, and refrigerate up to 2 hours.
