- 1. Dissolve jello in boiling water; chill for 20 minutes or until it begins to just gel. Whisk together cottage cheese,sweetened condensed milk,mayonnaise, Goddess dressing and pepper, then fold in vegetables.
- 2. Fold mixture into jello and Pour into 9x9 inch square pan or mold. Chill until set.

GREEN GODDESS CHICKEN SALAD

- For the dressing: Place the mayonnaise, Greek yogurt, milk, spinach, basil, parsley, garlic and lemon zest in a blender with a pinch of salt and pepper. Blend until smooth, then taste and adjust seasoning as needed. Set aside.
- For the salad: Add the chicken, grapes, walnuts, scallions and cucumber to a large bowl. Pour the dressing over the salad ingredients and toss to combine. Transfer to a serving bowl and garnish with the basil and parsley. Serve on a bed of lettuce, in a sandwich or wrap, or cover and chill until needed.

- Strain off pineapple juice, reserve juice and place pineapple in a large bowl. Set aside. In a medium bowl add Jell-O powder, 2 cups boiling water and stir until dissolved. Add 1 cup cold water and 1 cup reserved pineapple juice. Add cider vinegar. Let pre-set in the freezer for a few minutes (only until it sticks to the sides). In an electric mixer combine cream cheese and crushed pineapple. Add jello mixture, mix until smooth. In a separate bowl whip cream until it holds soft peaks. Gently fold cream into jello. Transfer to a pretty bowl that is not too deep. Refrigerate for at least 2 hours or until set.;
GREEN JELLO WITH COTTAGE CHEESE AND PINEAPPLE
I don't know where Grandma got this recipe. It, and many like it, were popular back in the 1950's and 60's. It may have originated with the Jello Company. Every church supper and family gathering had a similar dish and everyone had their variations. This was one of my Grandma's favorites.

- 1. Combine the dry lime jello, mandarin oranges, and pineapple or fruit cocktail in a bowl. Set the bowl in the refrigerator to set for about 2 hours. Remove the bowl from the fridge and stir in the cottage cheese and Cool Whip, stirring until well blended.
- 2. Serve immediately, or store in the refrigerator until serving.
