GREEN EGGS AND HAM

Steps:
- To die your eggs green, first separate the yolks from the whites. Do it carefully so that your yolk remains in tact. I put each component into a separate bowl. So for those 2 eggs I used 4 bowls.
- add a couple drops of green food coloring to the egg whites and whisk it in until the coloring is well incorporated. Carefully slide the egg yolk back onto the egg white.
- Melt a tablespoons or two of butter in a skillet over medium heat.
- Slide the egg onto the skillet. Cover with a lid or aluminum foil. Reduce heat to medium-low and cook for about 2 minutes.
- It is done when the whites are completely set on top around the yolk. If you want the yolk to set as well, just reduce the heat all the way to low and cook a couple minutes longer.

This recipe originated in a cookbook my childs' playschool put together as a fund raiser. Reading Dr Suess's Green Eggs and Ham prior to cooking is a "must do" to create a memorable experience. Amount can easily be doubled, tripled, etc.

Steps:
- Read green eggs and ham.
- Beat egg and milk together till frothy.
- Saute in small amount of oil the onions, peppers and chopped ham.
- Stir in spinach and add the egg mixture.
- Add salt and pepper and stir constantly with spatula.
- Serve with toast.

GREEN [& DEVILED] EGGS 'N' HAM
Just want Sam-I-Am to know I DO like Green Eggs 'n' Ham, & one of the easiest ways to enjoy 'em is by making a recipe like this! Obviously this recipe is for a group [or someone who REALLY, REALLY likes green eggs]! [I use ONLY Del Monte brand Sweet Pickle Relish, 'cause many of the other brands have a large amount of hig fructose corn syrup.] The 23-minute cooking time for the hard-cooked eggs is not included in preparation time.

Steps:
- Carefully cut eggs into halves lengthwise. Just as carefully, scoop out yolks & into a bowl.
- Mash yolks well, then mix in mayo, mustard & relish.
- Add green food color ONE DROP AT A TIME, mixing well after EACH drop, until desired intensity of green is achieved.
- Add chopped ham & lemon pepper & mix well.
- Carefully spoon & slightly mound yolk mixture into each hollowed egg white half.
- If using paprika, sprinkle lightly over the green deviled eggs & serve.

This kid pleasing meal is based on a family favorite and of course, inspired by story time with Dr Seuss. I adapted the recipe by using light cream instead of the usual sour cream and it turned out even better! Creamy, delicious goodness and a quick to make solution for busy family schedules!

Steps:
- Saute onions in butter.
- Add spices, stir in wine to deglaze pan.
- Stir in horseradish, if using, .
- and stir in the pan with the rest of the ingredients. Add the Parmesan, gently simmer while you cook the noodles.
- Cook and drain the noodles.
- Toss the noodles with the sauce, taste for seasonings, adjust if needed.
- Enjoy!
