2 pounds bone-in, skin-on chicken thighs (4 to 5)
Kosher salt and freshly ground pepper
1 stick (8 tablespoons) cold unsalted butter
2 cups chopped poblano chiles (from 2 large)
1 onion, diced (1 1/2 cups)
3 carrots, diced (1 1/4 cups)
1 stalk celery, diced (1/2 cup)
8 ounces white potato, peeled if desired and cut into 1/2-inch dice (1 1/2 cups)
1/2 teaspoon dried thyme
1 1/4 teaspoons chili powder
1 1/3 cups plus 1/4 cup unbleached all-purpose flour
1 cup frozen corn
6 tablespoons chopped cilantro, plus more for serving
1/3 cup finely ground cornmeal
2 teaspoons baking powder
3/4 cup whole milk
Lemon wedges, for serving

Steps:

  • Combine chicken, 2 teaspoons salt, and 4 cups water in a medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer, partially covered, until chicken is cooked, about 20 minutes. Transfer chicken to a plate; let cool 10 minutes. Discard skin and bones; shred meat into bite-size pieces (you should have 3 cups). Strain broth (you should have 4 cups; if not, add more water).
  • Melt 4 tablespoons butter in a large pot over medium-high heat. Saute chiles 5 minutes. Add onion, carrots, celery, potato, thyme, and chili powder. Cook, stirring, until onion is translucent, 3 to 4 minutes. Sprinkle with 1/4 cup flour; cook 30 seconds. Gradually stir in broth. Bring to a boil, then reduce heat to medium and simmer 2 minutes. Stir in chicken, corn, and 3 tablespoons cilantro. Season with salt and pepper.
  • Meanwhile, whisk together remaining 1 1/3 cups flour, cornmeal, 3 tablespoons cilantro, baking powder, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Cut in remaining 4 tablespoons butter. Stir in milk until dough holds together. Drop 8 heaping spoonfuls of dough on top of chicken mixture. Cover and simmer until dumplings are cooked through, about 12 minutes. Serve with more chopped cilantro and lemon wedges.

3 cups water
2 teaspoons salt
1 dash pepper
1/2 cup butter or 1/2 cup margarine
1/4 cup all-purpose flour
1/2 cup evaporated milk
1 (8 ounce) package refrigerated biscuits
onion salt

Steps:

  • Shell and wash peas; drain.
  • Combine water, salt, and pepper; bring to a boil. Add peas and simmer 5 minutes.
  • Melt butter in a heavy sauce pan over low heat. Add the flour and cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat stirring constantly until thick and bubbly. Stir the sauce into the peas.
  • Top with biscuits and sprinkle lightly with onion salt. Cover and cook 15 minutes or until the biscuits are done.

2 teaspoons canola oil
1 onion, chopped
1 red bell pepper, seeded and diced
1 carrot, chopped
6 scallions, finely sliced (3/4 cup)
3 cloves garlic, very finely chopped
5 cups chicken broth
2 tomatoes, peeled, seeded and chopped, or 1 cup canned tomato
5 tomatillos, husked, rinsed and diced (optional)
1 tablespoon fresh basil, chopped
1 cup chicken, cooked, shredded
to taste salt and black pepper, freshly ground
2 tablespoons canola oil
1/2 teaspoon salt
1/2 teaspoon cumin, ground
1/2 cup masa harina
1/2 teaspoon pure chile powder, ground
1 large egg
1 large egg white
1/4 cup fresh corn kernels, cooked or 1/4 cup frozen corn kernels, thawed and cooked

Steps:

  • Soup: Heat oil over medium heat. Add onions, bell peppers, carrots, scallions and garlic. Cook until softened, about 2 min.
  • Add broth, tomatoes, tomatillos and roasted chiles.
  • Bring to a bo il, reduce heat to low and add basil.
  • Simmer ~10 minutes.
  • Dumplings: In a saucepan, combine oil, salt, cumin and 1/2 cup water and bring to boil.
  • Sift in masa harina and stir with a wooden spoon until the mixture pulls away from the sides of the pan and no longer clings to spoon, 3 to 4 minutes.
  • Stir in chile powder and remove from heat. Beat in egg and egg white. Fold in corn.
  • With wet hands, form the dough into 16 dumplings.
  • Spoon the dumplings into the gently simmering soup and cook until no longer doughy, 3 to 5 minutes.
  • Add chicken and simmer until heated through.
  • Add salt and pepper to taste. (This recipe is best if prepared ahead of time and allowed to sit overnight to allow the flavors blend and develop.)

10 med. apples...................... ( preferably green bluff apples)
2 c flour
4 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
1/2 c butter
2/3 c milk
cinnamon
1 c sugar
2/3 c flour
1/4 tsp salt

Steps:

  • 1. Mix dry ingredients, cut in butter. Stir in milk. Roll out into a 10 inch log, cut into 1 inch pieces. Roll each 1 inch piece into a 8 inch circle. Peel and core apples. Place apple in center of dough circle, fill center of apple with 1 teaspoon sugar, sprinkle with cinnamon and add 1 teaspoon of butter. Fold dough up and over the apple. Bake on a greased baking sheet at 350F for 30-49 minutes untill apple is done. Serve with vanilla sauce or ice-cream.
  • 2. Vanilla sauce: Stir the 1 cup of sugar into 3 cups of cold water (use a wire whip) in saucepan. Stir and cook over medium heat until thick, add 1/4 cup butter a sprinkle of cinnamon and 2 teaspoons vanilla. Serve warm over dumplings. ENJOY

My friend Brandi Warren invited me over to dinner one evening and let me take pictures and write down her recipe as she went along. This is a very good recipe and a break from the regular Chicken and Dumpling recipe. Delicious...thanks for sharing...

2 - 3 skinless chicken breasts
1 tsp salt
1 tsp black pepper
2 clove garlic
3 can(s) cream of chicken soup
2 can(s) chopped green chilies
2 can(s) crescent rolls
1 - 2 clove garlic, thinly sliced
12 1-inch cubes veleeta cheese
butter-flavored non-stick cooking spray

Steps:

  • 1. Season chicken with salt and pepper. Place in a pot with garlic and enough water to cover. Boil until done (35 to 45 minutes depending on size of chicken breasts). Remove chicken from pot and reserve liquid.
  • 2. Let chicken cool a little and cut into bite size pieces.
  • 3. In a large bowl, combine chicken, 2 cans of soup and green chilies. Stir well to combine
  • 4. Prepare a 9 x 13 baking dish with non-stick cooking spray.
  • 5. Separate the crescent rolls into individual triangles.
  • 6. Take one piece of dough into the palm of one hand; place 1 cube of cheese in the center of the dough.
  • 7. Spoon large spoonful of chicken mixture into the center of the dough.
  • 8. Fold the three corners of the dough up over the mixture. It will not cover completely, but that's ok.
  • 9. Place, folded side down, into the baking dish.
  • 10. Make 12 "dumplings".
  • 11. Mix 3 can of soup in the bowl with any leftover chicken mixture and add 1/2 cup liquid and stir well. Spoon the soup/chicken mixture over the dumplings.
  • 12. Cut the remaining strips of dough into strips and place on top of the "dumplings".
  • 13. Spray with a little cookiing spray. Bake for @ 1 hr at 350 F

10 large shiitake mushroom caps, minced
2 teaspoons minced ginger
2/3 bunch scallion, chopped fine
1 tablespoon cilantro, minced
to taste salt and pepper
1 (340 g) package dumpling wrappers
4 savoyed cabbage leaves, blanched
1/4 cup balsamic vinegar
1/4 cup soy sauce
1/4 cup mushroom soy sauce
1 tablespoon grated ginger
1 fluid ounce Worcestershire sauce

Steps:

  • make the dipping sauce:.
  • Combine all ingredients and allow to stand for 30 minutes.
  • make the dumplings:.
  • Remove the stems from the mushrooms and dice the caps very small. Saute in a drop of olive oil and season with salt and pepper. After the mushrooms are cool, combine the remaining ingredients in a bowl and mix until the mixture becomes sticky.
  • Lay the wrappers on a clean work surface and spoon one heaping teaspoon of the filling onto the center of the wrapper. Spread the filling out to the edges then pick the wrapper up and fold the edges in toward each other. Push the dumpling down onto the work surface to flatten the bottom. Repeat for all wrappers. (they have an open top).
  • Place the dumplings into a steamer, the kind that goes over a wok works well, on a cabbage leaf to prevent them from sticking. and steam for six minutes or until the chicken is fully cooked. Serve on a platter with the dipping sauce in a small bowl.

6 tablespoons plus 2 cups all-purpose flour
3 3/4 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons vegetable oil
2 bottles (12 oz. each) ale
2 large onions, thinly sliced
8 ounces mushrooms, trimmed and quartered
3 large carrots, peeled, halved lengthwise, and cut into 1-in. lengths
1/2 cup thinly sliced green onions (green part only)
1/2 teaspoon baking soda
4 1/2 tablespoons cold butter, cut into small pieces
About 3/4 cup buttermilk
1 egg

Steps:

  • 1. In a large bowl, toss beef with 3 tbsp. flour, 1 tsp. salt, and pepper. In a large pot over medium-high heat, heat 1 tbsp. vegetable oil. Add enough beef to pot to form a single layer (about 1/3 of beef), being careful not to overcrowd pot. Brown meat on all sides, about 7 minutes total per batch. Transfer to a large bowl and brown remaining beef in 2 batches. If meat or pan juices start to scorch, reduce heat. 2. Add 1 bottle ale to pot, scraping up brown bits with a wooden spoon. Pour ale over reserved beef and return empty pot to medium-high heat. 3. Add remaining tbsp. oil to pot. Add onions and 2 tsp. salt. Cook, stirring often, 2 minutes. Cover pot and reduce heat to low. Cook, stirring occasionally, until onions have a hint of gold color, about 20 minutes. Remove lid, raise heat to medium-high, stir in 3 tbsp. flour, and cook, stirring often, 3 minutes. Add mushrooms, reserved beef and ale, remaining bottle of ale, and carrots. Bring to a boil. Cover and lower heat to a gentle simmer. Cook, stirring occasionally, until beef is tender, about 3 hours. 4. About 40 minutes before serving, make dumplings: In a medium bowl, stir together remaining 2 cups flour, green onions, remaining 3/4 tsp. salt, and baking soda. Using a pastry blender or your fingers, work cold butter into flour mixture until it resembles cornmeal with some pea-size pieces. In another bowl, whisk together buttermilk and egg. Gently fold wet ingredients into dry, mixing until a very shaggy dough forms. If more liquid is needed, add additional buttermilk 1 tbsp. at a time. Gently form dough into 12 equal balls and drop into stew. Cover pot and cook 20 to 30 minutes, or until dumplings are fluffy and cooked through. Let sit 15 minutes before serving; stew will thicken as it cools.

AUSHAK (AFGHANI GREEN ONION DUMPLINGS)

1 bay leaf
1 shallot, minced
2 onions, chopped
3 garlic cloves, minced
1 lb ground beef
2 1/2 teaspoons cilantro leaves, ground into paste
1 tablespoon fresh ginger, minced
2 cups water, divided
5 tablespoons tomato paste
1 leek, well cleaned halved minced
1 bunch green onion, chiffonade (reserve some for garnish)
1 jalapeno pepper, minced
1 garlic clove, finely minced
1 teaspoon red pepper flakes
salt and pepper, to taste
1 (14 ounce) package wonton wrappers
1 (16 ounce) container yogurt (garnish)

Steps:

  • In a large skillet, melt butter over medium high heat. Add bay leaf, onions, shallot, then garlic. Saute for 3 minutes.
  • Add beef to the onion mixture and brown until mostly cooked through and in small pieces. Add coriander paste and ginger, stirring well, and let simmer a few minutes.
  • Add water and the tomato paste then reduce to low heat. Keep simmering until ready to plate.
  • Put on a large pot of water to cook dumplings. While it is rising to a boil, clean and mince/chiffonade the leeks and green onions. Reserve some green onions for garnish and combine the rest in a bowl with jalapeno, garlic, red pepper flakes, salt and pepper. Mix well.
  • Lay out the wonton sheets. Brush a little warm water around edges of each wrapper, portion out a teaspoon of filling per dumpling and then place another wrapper on top of each, excluding as much air as possible as you press tightly to seal. Lay out on a baking sheet.
  • Salt water when it has reached the boiling point then gently drop in dumplings. Cook for about 2 minutes each and then remove and drain.
  • Spoon a light swirl of sauce in the center of each plate then lay 2 or 3 dumplings on top. Dress with sauce. Season yogurt with salt and pepper. Place a dollop on center of each plate over dumplings. Garnish with green onions and eat.

2 tablespoons Sichuan peppercorns, toasted
1 small zucchini, grated
1 pound ground lamb
3 scallions, finely chopped, white and green parts
2 tablespoons sherry cooking wine
1 tablespoon freshly grated ginger
1 tablespoon soy sauce
1 tablespoon kosher salt
24 Panfried Dumpling Wrappers
2 tablespoons all-purpose flour
2 tablespoons white vinegar
1 teaspoon vegetable oil

Steps:

  • In a small bowl, soak the peppercorns in ⅓ cup of lukewarm water for at least 1 hour, then strain out and discard the peppercorns. Wrap the zucchini in a clean cheesecloth or tea towel and squeeze to wring out excess moisture.
  • In a medium bowl, add the lamb and slowly pour in the peppercorn-infused water, a few drops at a time, and use your hands to mix it in well until the water is fully absorbed. Add the scallions, wine, ginger, soy sauce, and salt, and mix well until fully incorporated. Gently fold in the zucchini and mix until well combined.
  • Holding a wrapper in your palm, use a fork to add about 1 tablespoon of the filling to the center of the wrapper, then lightly pat down the filling with the fork to get rid of any air bubbles.
  • Fold the dumpling into a half-moon, pinching it shut with your thumbs and index fingers, then press the center of the dumpling while pulling on the corners to push out any air bubbles and shape it into a curved crescent. Inspect the dumpling for any holes and pinch them shut. Repeat with the rest of the wrappers to make 24 dumplings.
  • In a small bowl, whisk together the flour, vinegar, and 1 cup of water until combined to make a slurry. Brush the oil in a medium cast-iron or nonstick skillet and heat over medium-high heat until the oil starts to shimmer. Add 6 dumplings with the sealed edges lying flat in the pan, spacing them 1 inch apart, then slowly pour in just enough of the slurry to come one-third of the way up the dumplings. Partially cover the pan, leaving a small gap for steam to escape.
  • Increase the heat to high and cook for 2 minutes for cast iron (1 minute for nonstick). Lower the heat to medium for 2 minutes for cast iron (3 minutes for nonstick). Then lower the heat to low for 2 to 3 minutes for cast iron (3 minutes for nonstick).
  • Cook until the water has evaporated, leaving a paper-thin disk of golden-brown starch on the bottom of the pan. Remove from the heat and slide a thin, flexible spatula around the rim of the pan to loosen the edges of the starch disk, then carefully slide the spatula underneath and flip the disk onto a plate in one piece, crispy side up. Serve immediately, then clean the skillet and repeat with the remaining dumplings.

1 (3 lb) whole chickens, cut up
1 (16 ounce) jar green chili salsa
1 (10 1/2 ounce) can chicken broth
1/2 lb fresh corn masa dough
1/4 cup chopped cilantro
1/8 cup grated parmesan cheese

Steps:

  • Cook bacon in 6-quart stockpot on medium heat 5 to 8 minutes or until crisp, stirring occasionally. Remove bacon from pan; drain on paper towels. Remove drippings from pan, reserving 1 tablespoon drippings for later use.
  • Add chicken, in batches; cook 3 minutes on each side or until browned on both sides. Return all chicken to pan. Stir in salsa and broth. Bring to boil; cover. Simmer on medium-low heat 15 minutes. Meanwhile, mix masa dough, cheese and reserved bacon drippings; shape into 18 balls, using about 1 tablespoon of the dough for each.
  • Add dough balls to chicken mixture; cook 5 to 8 minutes or until dumplings and chicken are done (165°F). Remove from heat. Stir in bacon and cilantro.
  • KITCHEN TIPS:.
  • Serving Suggestions: Serve with a crisp green salad tossed with your favorite salad dressing to round out the meal.
  • Substitute: Dry corn masa is a great substitute for the fresh masa in this tasty recipe. Just mix 3/4 cup dry masa with enough water (about 1/2 cup) to make soft dough.

Ricotta Dumplings with Asparagus and Green Garlic image

2 cups whole-milk ricotta
1 cup finely grated Grana Padano, plus more (for serving)
1 piece large egg, room temperature
1 piece egg yolk, room temperature
2 1/4 teaspoons kosher salt, plus more
1/4 cup all-purpose flour, plus more
8 ounces asparagus, trimmed, cut into 1-inch pieces
2 cups chicken stock or low-sodium chicken broth
1 stalk green garlic stalk, pale green and white parts, thinly sliced crosswise
3 tablespoons unsalted butter, cut into pieces
2 tablespoons chopped chives
2 teaspoons fresh lemon juice
1 pinches Kosher salt, freshly ground pepper
1 dashes Olive oil (for drizzling)

Steps:

  • Check the wetness of the ricotta before preparing dumplings. If the ricotta is sold in an individual drained basket, then all you need to do is pat dry and adjust the quantity to 1½ cups. For ricotta that's not drained, you'll need to press it to drain any excess liquid. Line a colander with cheesecloth and set inside a large bowl (to catch the liquid draining from the ricotta). Spoon ricotta onto cheesecloth and put a paper towel on top. Weigh ricotta down using cans or other heavy pantry items; chill for at least 4 hours and up to 24. The ricotta should be dry and crumbly. Measure out 1½ cups.
  • Pulse ricotta, Grana Padano, egg, egg yolk, and salt in a food processor just until smooth. Sprinkle flour over ricotta mixture and pulse again until just combined. Transfer dumpling batter to a medium bowl.
  • Dust a parchment-lined rimmed baking sheet generously with flour. Using a metal spoon, scoop out 2-3 tsp. dumpling batter and scrape spoon against side of bowl at a 45° angle to smooth batter. Using your finger tip, push batter off spoon and let drop onto baking sheet (this may take a few tries). The dumpling will slightly curve at each ends. Dust tops with more flour. (You should have about 65 dumplings.)
  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook until almost tender, 2-3 minutes. Transfer to a bowl of ice water; drain and pat dry. Reserve pot.
  • Meanwhile, bring chicken stock to a simmer in a large skillet over medium heat.
  • Return pot of water to a gentle simmer and add dumplings (one by one so they don't crush each other), stirring occasionally, until they're almost double in size and cooked through and tender, about 4 minutes (dumplings will quickly float to surface).
  • Transfer dumplings to pan; add butter and green garlic. Cook, tossing often, until sauce has thickened and garlic has slightly softened, about 3 minutes. Flour dumplings combined with chopped wilted beet tops. The dumplings are boiled chilled and then heated up with chopped bacon and onion that has been browned. This is a dish we had in the fall every year at the time beets are harvested. It's not an exact recipe as there never has been one and the dumpling texture will vary each time. This is a comfort food favorite of mine every fall. They can be as a side dish, or I like them as a meal.

3 cups flour
1 -1 1/2 teaspoon baking powder
3 eggs
3/4-1 cup milk
salt
2 bunches beets, tops washed, chopped and stemmed
1 1/2 lbs bacon
1 large sweet onion

Steps:

  • Clean, stem and chop beet tops. Wilt in a small amount of water in pan. Mix dry indgredients, adding eggs and milk, work in the cooled, chopped beet tops, this requires mixing with hands and it is quite messy.
  • You are looking for a medium to medium firm dumpling so if mixture is too wet and sticky add flour, if too dry add milk.
  • Once you mix, form into dumplings about 4x1 inch, drop into salted boiling water and boil until dumplings rise and are firm.
  • Drain and chill.
  • Chop bacon and onion into bite size pieces, brown, add dumplings to heat through and serve.

6 slices OSCAR MAYER Bacon, chopped
1 whole chicken (3 lb.), cut up
1 jar (16 oz.) green salsa
1 can (10.5 oz.) chicken broth
1/2 lb. prepared corn masa dough
1/2 cup KRAFT Shredded Cheddar Cheese
1/4 cup chopped fresh cilantro

Steps:

  • Cook and stir bacon in Dutch oven or large deep skillet on medium heat until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Remove drippings from pan; reserve 1 Tbsp. drippings for later use.
  • Add chicken, in batches, to pan; cook 3 min. on each side or until browned on both sides. Return all chicken to pan. Stir in salsa and broth. Bring to boil; cover. Simmer on medium-low heat 15 min. Meanwhile, mix masa dough, cheese and reserved bacon drippings; shape into 18 balls, using about 1 Tbsp. dough for each.
  • Add dough balls to chicken mixture; cook 5 to 8 min. or until dumplings and chicken are done (165ºF). Remove from heat. Stir in bacon and cilantro.

2 cups whole-milk ricotta
1 cup finely grated Grana Padano, plus more (for serving)
1 large egg, room temperature
1 egg yolk, room temperature
2 1/4 teaspoons kosher salt, plus more
1/4 cup all-purpose flour, plus more
8 ounces asparagus, trimmed, cut into 1-inch pieces
2 cups chicken stock or low-sodium chicken broth
1 green garlic stalk, pale green and white parts, thinly sliced crosswise
3 tablespoons unsalted butter, cut into pieces
2 tablespoons chopped chives
2 teaspoons fresh lemon juice
Kosher salt, freshly ground pepper
Olive oil (for drizzling)

Steps:

  • Dumplings
  • Check the wetness of the ricotta before preparing dumplings. If the ricotta is sold in an individual drained basket, then all you need to do is pat dry and adjust the quantity to 1½ cups. For ricotta that's not drained, you'll need to press it to drain any excess liquid. Line a colander with cheesecloth and set inside a large bowl (to catch the liquid draining from the ricotta). Spoon ricotta onto cheesecloth and put a paper towel on top. Weigh ricotta down using cans or other heavy pantry items; chill for at least 4 hours and up to 24. The ricotta should be dry and crumbly. Measure out 1½ cups.
  • Pulse ricotta, Grana Padano, egg, egg yolk, and salt in a food processor just until smooth. Sprinkle flour over ricotta mixture and pulse again until just combined. Transfer dumpling batter to a medium bowl.
  • Dust a parchment-lined rimmed baking sheet generously with flour. Using a metal spoon, scoop out 2-3 tsp. dumpling batter and scrape spoon against side of bowl at a 45° angle to smooth batter. Using your finger tip, push batter off spoon and let drop onto baking sheet (this may take a few tries). The dumpling will slightly curve at each ends. Dust tops with more flour. (You should have about 65 dumplings.)
  • Asparagus and Assembly
  • Bring a large pot of lightly salted water to a boil. Add asparagus and cook until almost tender, 2-3 minutes. Transfer to a bowl of ice water; drain and pat dry. Reserve pot.
  • Meanwhile, bring chicken stock to a simmer in a large skillet over medium heat.
  • Return pot of water to a gentle simmer and add dumplings (one by one so they don't crush each other), stirring occasionally, until they're almost double in size and cooked through and tender, about 4 minutes (dumplings will quickly float to surface).
  • Transfer dumplings to pan; add butter and green garlic. Cook, tossing often, until sauce has thickened and garlic has slightly softened, about 3 minutes. Add asparagus, chives, and lemon juice and toss to warm asparagus; season with salt and pepper. Serve dumplings with more cheese and drizzle with olive oil.
