Comforting Green Moong Dal made with mung beans, onions, tomatoes and spices! Pair with rice for a hearty meal.

Number Of Ingredients 19

1 tablespoon oil (15 ml, I used avocado oil)
3/4 teaspoon cumin seeds
1 medium onion (chopped)
1 inch ginger (chopped)
1 green chili (chopped, I used thai chili)
2 medium tomatoes (chopped)
1/4 teaspoon turmeric
1 teaspoon coriander powder
1/2 teaspoon garam masala
3/4 teaspoon salt (or to taste)
1 cup whole green mung beans (sabut moong dal, 210 grams)
3 cups water (24 oz)
1 tablespoon chopped cilantro (plus more to garnish)
1/2 lemon (juice of)
2 teaspoons ghee (10 ml)
1/4 teaspoon cumin seeds
1/4 teaspoon hing (asafoetida)
2 large garlic cloves (thinly sliced)
1/4 teaspoon Kashmiri red chili powder (for color (it's not very hot))

Steps:

  • Before you start soak the moong dal for 3 to 4 hours in 2 to 3 cups water. Press the saute button on the Instant Pot. Once it displays hot add the oil and then add the cumin seeds and let them sizzle for few seconds.
  • Then add the chopped onion, ginger and green chili and cook for 2 minutes until onions are softened.
  • Add the chopped tomatoes and stir and then add the spices- turmeric, coriander powder and garam masala. Also, add the salt and mix everything.
  • Drain the water in which the dal was soaked and then add the dal to the Instant Pot.Add 3 cups water now and mix.
  • Close the Instant Pot with lid and press the manual or pressure cook button. Cook on high pressure for 15 minutes with the pressure valve in the sealing position. This will result in a very soft dal.If you don't like the dal to be very soft, then cook for 10 minutes only. If you haven't soaked the dal, then pressure cook for 20 minutes. Let the pressure release naturally.
  • Open the lid and give the dal a stir. Add in the chopped cilantro and squeeze in lemon juice.
  • For the tadka, heat 2 teaspoons ghee in a small pan. Once the ghee is hot, add 1/4 teaspoon cumin seeds and let them sizzle and then add hing.
  • Add sliced garlic and cook until the garlic starts changing color. Add kashmiri red chili powder, mix with a spoon and then remove pan from heat.
  • Pour tadka over dal and serve green moong dal with rice or quinoa.

Sabut moong dal or green gram curry recipe - homely recipe of dal made with whole green moong beans.

½ cup sabut moong dal ((whole moong beans) - soaked in water for an hour or two hours or overnight)
2 tablespoon oil
1 medium tej patta ((indian bay leaf))
½ teaspoon cumin seeds
1 medium onion, (chopped or ⅓ cup chopped onions)
1 large tomato, (finely chopped or ½ cup finely chopped tomatoes)
1 teaspoon Ginger Garlic Paste (or ½ inch ginger + 3 to 4 medium garlic - crushed to a paste in mortar-pestle)
¼ teaspoon turmeric powder
¼ teaspoon red chili powder
½ teaspoon Coriander Powder ((ground coriander))
¼ teaspoon Garam Masala
2.5 to 3 cups water
2 tablespoon chopped coriander leaves ((cilantro leaves))
salt as required
1 tablespoon oil
½ teaspoon cumin seeds
1 pinch asafoetida ((hing))
¼ teaspoon red chili powder

Steps:

  • Rinse 1/2 cup green moong beans for a couple of times and then soak in enough water for an hour. You can also soak them for a couple of hours or overnight. If soaking overnight, then the pressure cooking time will reduce.
  • Chop 1 medium onion, 1 large tomato and 1 to 2 green chilies. Crush the ginger and garlic to a paste in the mortar-pestle.
  • Heat 2 tbsp oil in a pressure cooker.
  • Add the whole spices - 1 medium tej patta/indian bay leaf and 1/2 tsp cumin seeds. Saute till the cumin seeds splutter.
  • Then add the chopped onions. Saute the onions till light golden.
  • Add 1 tsp ginger-garlic paste and chopped green chilies. Stir and saute till the raw aroma of ginger-garlic goes away.
  • Now add the chopped tomatoes and 1/4 tsp turmeric powder, 1/4 tsp red chili powder, 1/2 tsp coriander powder and 1/4 tsp garam masala powder.
  • Stir and saute till the tomatoes soften, become pulpy and you see oil releasing from the sides.
  • Drain and add the moong beans. Stir very well.
  • Add 2.5 to 3 cups water and salt as per taste. Stir very well.
  • Cover and pressure cook sabut moong dal for 10 to 12 whistles or 15 to 17 minutes on a medium to high flame till the moong beans are softened thoroughly.
  • When the pressure settles down on its own, open the lid and check the moong beans. If they still have slight bite to them, then add some water and pressure cook for some more whistles.
  • If the mixture looks dry, then you can add more water. Keep the cooker on the stove top and simmer the moong dal for 5 to 6 minutes, stirring at intervals.
  • The consistency of the dal should not be watery. While cooking you can mash a few lentils with the back of the spoon.
  • Heat 1 tbsp oil in a small pan or tadka pan. Splutter 1/2 tsp cumin seeds first.
  • Switch off the flame and then add a pinch of asafoetida and 1/4 tsp red chili powder. Stir.
  • Add this tempering to the dal. Stir well.
  • Add 3 tbsp chopped coriander leaves. Stir again.
  • Serve green moong dal with steamed rice or chapatis.
  • While serving this green gram curry, you can garnish with a few coriander leaves if you want.

BUTTERY MOONG DAL WITH GARLIC AND CUMIN



Buttery Moong Dal With Garlic and Cumin image

This a basic mung bean dal, meant to be a simple everyday Indian meal with rice and chapati, or a side dish as part of a larger meal. The wonderful buttery flavor is obtained from the technique called tarka, which means spices sizzled in ghee, added to the pot at the end of the cooking process. Whirl the dal in a blender for a velvet-smooth texture. You could serve it as is, with the texture of a thick vegetable purée, or thin it with a little water and serve it as a soup. Other legumes such as red lentils or yellow split peas may be used instead.

1 cup moong dal (split mung beans), soaked 2 hours in cold water, drained and rinsed
1/2 teaspoon turmeric
1 teaspoon salt
3 tablespoons ghee, clarified butter or vegetable oil
1/2 teaspoon cumin
1 green chile, slit lengthwise
4 garlic cloves, minced
1 large shallot, diced
Garam masala or red chile powder (optional)
Plain basmati rice, freshly cooked, for serving (optional)

Steps:

  • Put dal, turmeric and salt in a large soup pot, add 7 cups water and bring to a gentle boil, stirring.
  • Turn heat very low and cover pot with lid slightly ajar. Check pot and stir frequently, as the dal has a tendency to boil over in the beginning. Skim off and discard any foam that rises. Cook for about 45 minutes, until quite soft. Taste and adjust salt. For a smooth, velvety consistency, purée dal in a blender, then return to pot. If you prefer some texture, just beat with a whisk for a minute or two. (If dal is very thick, thin with a little water.)
  • Make the tarka: Heat ghee in a small skillet over medium-high heat. Add cumin, chile and garlic and cook until cumin is fragrant and garlic is lightly colored, about 1 minute. Add shallot and continue cooking until shallot is softened, about 1 minute more. Pour contents of skillet into pot and stir into the dal.
  • Transfer to a serving bowl or individual soup bowls. Sprinkle with a pinch of garam masala or red chile powder and/or serve with basmati rice, if desired. Dal may be made in advance, refrigerated and reheated (it will solidify when chilled and need thinning). Cool to room temperature before refrigerating. It will keep 2 to 3 days.

2 ½ cups moong dal (split husked mung beans)
2 ½ cups water
1 ½ teaspoons salt
½ teaspoon grated fresh ginger root
1 teaspoon diced jalapeno chile pepper
½ cup diced tomatoes
3 teaspoons lemon juice
½ teaspoon ground turmeric
2 teaspoons vegetable oil
1 teaspoon cumin seed
½ dried red chile pepper
1 pinch Asafoetida
2 cloves garlic, finely chopped
¼ cup chopped fresh cilantro

Steps:

  • Rinse the dal, checking for any debris; add to saucepan with 2 1/2 cups water. Allow to soak for 30 minutes.
  • Bring dal, water, and salt to a boil. Reduce heat to medium-low and cook until beans are very tender and mixture has thickened, 15 to 20 minutes. Add more water, if necessary, to prevent drying out. Stir in ginger, jalapeno pepper, tomato, lemon juice, and turmeric.
  • Heat oil in a small saucepan and add cumin seed and red chile pepper. When pepper is heated, add Asafoetida powder and garlic. Stir mixture into split peas and add cilantro; mix well.

1 cup moong dal (split husked mung beans)
3 cups water
1 teaspoon coriander
1 teaspoon salt
1 teaspoon garam masala
½ teaspoon cayenne pepper
1 pinch ground turmeric
1 tablespoon lemon juice
1 tablespoon chopped cilantro

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat olive oil; add onions, garlic, ginger, and cumin. Cook until tender, about 2 minutes. Combine moong dal lentils, water, coriander, salt, garam masala, cayenne pepper, and turmeric in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
