CHERRY TOMATO SOUP (GARY RHODES)

Another fantastic Gary Rhodes recipe. Light and delicious! Perfect for a starter course but fantastic for a summer lunch as well. I have made this several times when cherry tomato season comes around. I have also frozen this with great results. NOTE: A basic passata is a sauce made of tomatoes, basil, water, preservative, however some types have more herbs and spices in them, so make sure you like what is in your passata as it will be a main flavour in your soup. You can substitute tomato sauce (not ketchup!) or canned tomatoes (put through the food processor). Sometimes I don't have passata on hand so I put a can of chopped tomatoes in the food processor (enough to equal the recipe equivalent) and add a bit of basil to it to taste. I don't add water because the canned tomatoes are already in liquid. I hope you enjoy this soup as much as I do.

2 tablespoons olive oil
2 medium red onions, sliced
2 garlic cloves, crushed
2 tablespoons red wine vinegar
1 lb cherry tomatoes, halved (500 grams)
10 fluid ounces passata (see note above)
16 fluid ounces vegetable stock
coarse sea salt (to taste)
pepper (to taste)

Steps:

  • Heat up the olive oil in a frying pan.
  • Add the red onions to the pan over medium heat until the start to colour and become softened; about 3-4 minutes.
  • When the onions begin to soften add the garlic and slowly cook both together until softened about a minute or so. (The garlic is added second to prevent it from burning and tasting bitter.).
  • Add the red wine vinegar to the pan and bring to a boil. Cook until only a bit of liquid is left. (Be careful not to reduce too much or it will give your soup a soury taste.).
  • Add the cherry tomato halves to the pan and fry for 10 minutes, making sure to stir occasionally so they don't burn.
  • Stir in the passata (see note in description of recipe above) and vegetable stock to the tomato mixture, bring to a low boil, reduce heat and simmer for 10 minutes more.
  • Taste the broth then sprinkle sea salt and pepper over soup to your taste.
  • Serving: you can serve with torn fresh basil leaves over top.

ROASTED CHERRY TOMATO SOUP

Creamy, healthy and easy, this homemade roasted cherry tomato soup is fantastic all year long! And is seriously delicious served with plenty of crusty bread and fresh basil. Dairy free, gluten free and vegan.

1 medium onion, sliced
2 pints cherry tomatoes
2 cloves garlic
2 tablespoons olive oil
¼ teaspoon fine sea salt
¼ teaspoon pepper
1 cup low sodium vegetable broth
1 tablespoon tomato paste
½ teaspoon dried oregano
½ cup canned full-fat coconut milk
¼ teaspoon fine sea salt
plenty of chopped fresh basil, for serving
your favorite bread (or croutons!), for serving

Steps:

  • Preheat the oven to 400ºF.
  • Add the onion, tomatoes and garlic (leave the cloves whole!) to a large rimmed baking sheet. Drizzle with the olive oil, then sprinkle with the salt and pepper. Toss to coat and spread in an even layer.
  • Bake for about 30 minutes, stirring halfway through, until the tomatoes have shriveled and started to char.
  • Remove from the oven and let cool for about 5 minutes.
  • Add the roasted veggie mixture to a blender, along with the broth, tomato paste, oregano, coconut milk and salt. Process until smooth. Transfer the mixture to a medium saucepan.
  • Set the pan over medium low / low heat and cook for about 10 minutes, stirring occasionally, until warmed through and the flavors have had a chance to meld. Taste and season with additional salt / pepper as needed.
  • Serve topped with plenty of fresh basil and bread on the side for dipping!

2 tablespoons extra-virgin olive oil
2 oz thinly sliced Black Forest ham, chopped (1/2 cup)
1 1/2 cups thinly sliced scallions (from 1 bunch)
1 tablespoon chopped garlic (2 cloves)
1 Turkish or 1/2 California bay leaf
2 lb green unripe tomatoes, chopped
1 cup low-sodium chicken broth
2 cups water
1/2 teaspoon salt
1/4 teaspoon black pepper
Garnish: sour cream (optional)

Steps:

  • Heat oil in a 3-quart heavy saucepan over moderate heat until hot but not smoking, then cook ham, stirring occasionally, until beginning to brown, 1 to 2 minutes. Add scallions, garlic, and bay leaf and cook, stirring occasionally, until scallions are tender and lightly browned, 6 to 8 minutes.
  • Add tomatoes, broth, water, salt, and pepper and simmer, partially covered, until tomatoes are tender, 15 to 20 minutes. Discard bay leaf and season soup with salt and pepper.

A rich, flavorful, surprising soup. Warm and soothing in the winter. By the second day the sauteed apples have really infused the soup and it is so tasty! Could be wonderful with mozzarella cheese grated on top just before serving.

5 slices bacon
1 tablespoon olive oil
½ white onion, chopped
2 teaspoons garlic, minced
2 cups beef stock
1 (15.5 ounce) can pinto beans
1 (14.5 ounce) can Italian-style stewed tomatoes
2 stalks celery, chopped
1 bay leaf
1 medium apple, thinly sliced
½ cup red wine
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, coarsely chop, and set aside.
  • Heat olive oil in a large saucepan over medium heat, and saute white onion and garlic 3 to 5 minutes, or until tender. Stir in beef stock, pinto beans, tomatoes, celery, and bay leaf. Bring the mixture to a boil. Reduce heat, and simmer.
  • In a small saucepan over medium heat, cook and stir the apple in the red wine until soft.
  • Mix bacon, apple, and remaining red wine into the soup mixture. Season with salt and pepper. Continue to simmer, stirring occasionally until well blended.

1 large green apple,cored and sliced
1 medium red apple,peeled,cored,sliced
2 small carrots,grated
1 tablespoon(s) onion powder+2
1 teaspoon(s) seasoned salt+2
1/8 tablespoon(s) cinnamon+2
1/8 teaspoon(s) dried celery leaves+2
2 teaspoon(s) splenda[optional]

  • start night before.... in lg soup pot put tomatoes,apples,carrots and 1/2 all the spices...add 1 qt water... bring to boil reduce heat cook 45 min stir often so it does not stick to bottom of pan and burn taste... add spenda if needed[i did] put in food processor[i did in 2 batches] processe til smooth
  • put back in pan add rest of spices and milk... cover and put in fridge overnight....i ya waant cook bacon and mix in before servin but ya don't have too...i served with dollap of sour cream......

I garden. At the end of the year I had a lot of green tomatoes whose blossom end had not blushed, thus they will never ripen. This is a recipe I created to use green tomatoes. This year I'll make a lot more and freeze it.

3 tablespoons grapeseed oil
1 cup onion, chopped
1 teaspoon gingerroot, crushed and minced
2 cloves garlic, minced
1 teaspoon coriander seed, ground
2 teaspoons cumin seeds, ground
1 1/2 lbs green tomatoes, seeded and chopped
1 medium green bell pepper, seeded and chopped
1 red chili pepper, seeded and chopped
1/2 lb potato, peeled and chopped
2 cups chicken stock
1 tablespoon palm sugar or 1 tablespoon light brown sugar
1/2 cup skim milk
1/2 teaspoon salt
1/4 cup nonfat yogurt
1/4 cup dry-roasted cashews, unsalted
1 tablespoon cilantro leaf, whole

Steps:

  • Heat the oil in a large heavy pot over medium heat.
  • Add the onions, garlic, ginger, coriander and cumin and cook, stirring, until the onions are soft and translucent, about 5 minutes.
  • Add the tomatoes, pepper, potatoes, broth, chili pepper and sugar.
  • Bring to a boil, reduce heat to low, and simmer, covered, for 30 minutes.
  • Purée the soup in batches in a blender or food processor (the blender will give you a smoother purée).
  • Return the soup to a pot and add the milk and salt.
  • Heat to a simmer.
  • Serve garnished with a dollop of yogurt, cashews, and cilantro leaves.
