2 slices thick-cut bacon (diced)
1/2 yellow onion (cut into thin slices)
1 (12 ounce) package fresh green beans (trimmed and cut in half)
1 (28 ounce) can whole fire-roasted tomatoes (drained)
3 1/2 cups unsalted chicken broth
1 1/4 teaspoon Kosher salt
3/4 teaspoon garlic powder
1/2 teaspoon black pepper
1/4 teaspoon soy sauce
Pinch red pepper flakes

Steps:

  • Add the bacon to a large saucepan or Dutch oven over medium-high heat. Sauté for about 3 minutes, then add the onion and continue to sauté. Stir often, for another 3-4 minutes or until the onion is translucent.
  • Add the prepared green beans, along with the fire-roasted tomatoes. Use the back of a wooden spoon and crush/break apart the tomatoes.
  • Stir in remaining ingredients and allow to come to a boil. Cover and reduce the heat to maintain a slow simmer. Simmer for 50 minutes, lifting the lid to stir occasionally. Serve and enjoy.

1 package (14 ounces) thick-sliced bacon strips, chopped
1 large red onion, chopped
2 packages (16 ounces each) frozen cut green beans
1 can (28 ounces) petite diced tomatoes, undrained
1/4 cup packed brown sugar
1 tablespoon seasoned pepper
1/2 teaspoon seasoned salt
1 can (16 ounces) red beans, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. Add onion to drippings; cook and stir over medium-high heat until tender., In a 4- or 5-qt. slow cooker, combine green beans, tomatoes, brown sugar, pepper, salt, bacon and onion. Cook, covered, on low 4 hours. Stir in red beans. Cook until heated through, about 30 minutes longer.

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

1 mounded tablespoon tomato paste
Three 14.5-ounce cans whole tomatoes

Steps:

  • Add the bacon and onion to a large skillet over medium heat. Cook, stirring, until the bacon is beginning to crisp and the onions are golden, 5 to 7 minutes.
  • Increase the heat to medium high and add the green beans and tomato paste. Stir and allow to cook for a minute or two. Add the tomatoes, crushing them with your hands as you add them. 3 (15 ounce) cans French style green beans, well drained
4 slices bacon
2 (14 ounce) cans stewed tomatoes
1 onion, chopped
1/8 teaspoon salt
1 dash fresh ground pepper

Steps:

  • Cut bacon into small pieces. Sauté bacon in skillet until crisp; remove bacon and place on paper towels. Leave 1 T. bacon fat in sauté pan.
  • Chop onion and sauté over low heat in reserved 1 T. bacon fat. Salt the onion (brings out the moisture) and cook about 5-8 minutes until onion is soft and translucent.
  • Place tomatoes and their juices in a large pot - break up large pieces of tomato. Add drained green beans and sautéed onions. Cover and simmer 20 minutes. Add crumbled bacon and fresh ground pepper; stir and serve.
  • Hint - if you don't have Stewed Tomatoes, you can use Petite Diced Tomatoes, Italian Style, and add 1-2 t. sugar.

1 lb green beans, cut into 2 inch pieces
4 slices bacon, chopped (uncooked, reserve 1 Tbsp. of fat after cooking)
1/2 cup chopped onion
1 medium tomatoes, seeded and chopped (roma is great)
1 garlic clove, minced
1/2 teaspoon dried oregano (or 1 teaspoon fresh oregano, chopped)
1/4 teaspoon salt
2 tablespoons lemon juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper) or 2 tablespoons lime juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper)

Steps:

  • In a 2 quart saucepan, add green beans in enough water just to cover them, and bring to a boil, reduce heat and simmer, uncovered about 15 minutes or until crisp tender.
  • Drain and immediately rinse with cool water to stop cooking. Drain and set aside.
  • In a large skillet, cook bacon over medium-high heat until crisp. Stirring frequently.
  • Reserve 1 tablespoons of bacon fat and drain off the rest and place bacon on plate covered with paper towels.
  • In the same skillet add onion and 1 tablespoons bacon fat and cook over medium heat, stirring occasionally, until tender.
  • Stir in tomato, garlic, oregano, salt and pepper into onions and simmer about 5 minutes.
  • Stir in green beans and heat through.
  • Add bacon and stir to blend.
  • Transfer mixture to serving dish and drizzle with lemon or lime juice.
