1 lb fresh green beans, cut into 1-inch pieces
4 slices bacon, cut up
1 medium onion, chopped (1/2 cup)
1 medium tomato, chopped (3/4 cup)
1 clove garlic, finely chopped
1 teaspoon chopped fresh or 1/2 teaspoon dried oregano leaves
1/2 teaspoon salt
Dash of pepper
2 tablespoons lemon or lime juice

  • Stir tomato, garlic, oregano, salt and pepper into onion. Simmer uncovered 5 minutes. Stir in green beans; heat through. Drizzle with lemon juice; sprinkle with bacon.
