Coarse salt and ground pepper
2 pounds green beans, stem ends removed
2 garlic cloves, peeled
1/3 cup olive oil
3 tablespoons cider vinegar
2 tablespoons Dijon mustard

Steps:

  • Set a steamer basket in a pot. Fill with enough salted water to come just below basket; bring to a boil. Prepare a large bowl of ice water.
  • Place green beans in basket; top with garlic. Cover, and steam until green beans are crisp-tender, 4 to 6 minutes. Reserve garlic. Transfer green beans to ice water; let stand until cool. Drain; pat dry.
  • Make vinaigrette: Using the flat side of the blade of a chef's knife, mash reserved garlic into a paste. Place in a small bowl; whisk in oil, vinegar, and mustard. Season with salt and pepper. Toss green beans with vinaigrette, and serve.

I prepared this for Thanksgiving dinner in place of the traditional but heavy green bean casserole. It has a delicious, faintly sweet flavor.

1 (16 ounce) package frozen green beans
½ cup apple cider
½ teaspoon olive oil
2 tablespoons real bacon bits
½ cup chopped onion
salt and ground black pepper to taste

Steps:

  • Combine green beans and cider in a microwave-safe bowl; cover with plastic wrap. Cook in microwave on high for 5 minutes; stir beans. Return to oven and cook until tender, 5 more minutes. Remove beans with a slotted spoon and transfer to a serving bowl; reserve cider.
  • Heat olive oil in a small skillet over medium heat; cook and stir bacon bits and onion in the hot oil until onion is tender, 5 to 10 minutes. Pour cider from green beans into the skillet; simmer until liquid is reduced, 5 minutes.
  • Spoon bacon mixture over green beans. Season with salt and black pepper.

2 (16-ounce) bags whole frozen green beans
Extra-virgin olive oil
1 small yellow skinned onion, finely chopped
3/4 cup apple cider
Salt and pepper

Steps:

  • Put the beans in a large microwave safe bowl, loosely cover bowl with plastic food storage wrap and microwave on high 5 minutes. Uncover and stir the beans, then cover and microwave on high 4 to 7 minutes more, until desired doneness, from still-crisp to tender, but with a bite.
  • Heat a small skillet over medium low heat. Add a drizzle of extra-virgin olive oil and the onions and cook until beginning to caramelize, about 10 minutes, stirring frequently. Add the cider, raise the heat to medium high and cook until liquid is reduced and syrupy, about 5 minutes.
  • Remove the beans from microwave. Season the beans with salt and pepper, to taste, and add to the pan with the onions and cider. Toss evenly to coat the beans and keep warm until ready to serve.

I really liked the cider sauce and tend to double it. You could also use fresh green beans. I tried this on a whim b/c I love apple cider and at Thanksgiving even the veggie haters seemed to like this. If you sub apple juice the sauce will probably be OK, just without the "tang" of the cider.

1 (12 ounce) bag frozen green beans
1 -2 tablespoon extra virgin olive oil
1/2 large yellow onion, finely chopped
1/2-3/4 cup good apple cider
3 slices thick bacon, crisp and crumbled
salt and pepper
1 dash Accent seasoning (optional)

Steps:

  • Cook greenbeans according to package directions to desired doneness.
  • Caramelize onions in olive oil. Add cider and raise the heat to deglaze the pan. Salt sparingly and pepper, add Accent if you like. Reduce heat to a simmer and reduce until syrupy. If the sauce isn't sweet enough at this time add a bit of sugar to your taste, adjust salt and pepper as well.
  • Add green beans to the sauce, toss to coat and heat through.
  • Remove to a serving dish and top with bacon crumbles.

A different twist to the usual green bean casserole. Given to me years ago by my ex-mother-in-law, this is a tasty, fresh, sweet and tangy new way to serve green beans and it's sure to become a family favorite! Prepare the night before and marinate overnight for the best results. Enjoy!

12 slices bacon, cut in half
2 pounds fresh green beans, trimmed and snapped
1 ½ medium onions, chopped
6 tablespoons apple cider vinegar
6 tablespoons white sugar
½ cup blanched slivered almonds

Steps:

  • In a large deep skillet, cook bacon over medium-high heat until evenly browned. Remove bacon to paper towels, and reserve drippings in the skillet.
  • Place fresh green beans in a large saucepan, and add enough water to cover the bottom by 1 inch. Cover, and bring to a boil over medium-high heat. Cook for 8 to 10 minutes, until bright green and tender. Drain.
  • Place the green beans into a 2 quart casserole dish. Spread the onions in a layer over the green beans. Place bacon strips in a layer over the onions. Sprinkle almonds over the top. Heat the reserved drippings in the skillet over medium heat. Stir in vinegar and sugar, heating just until sugar is dissolved; drizzle over everything in the dish. Cover, and chill for at least one hour, but overnight is best.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake uncovered, for 45 minutes, until the onions are tender, and the almonds are toasted. Check after 30 minutes, and cover if necessary.
