This is another great tasting family favorite, that my daughter Briana loves to make when ever she is home visiting. We love the addition of parmesan cheese. It is a great side dish any time of the year.

2 can(s) 15 1/2 oz. cut green beans or french style green beans, drained
1 can(s) cream of mushroom soup
1/2 c grated parmesan cheese, ( i like to use fresh grated)
1/8 tsp black pepper
1 tsp worcestershire sauce
3/4 c evaporated milk
1 1/2 c french fried onion rings

Steps:

  • 1. Combine soup, parmesan cheese, milk pepper and worcestershire sauce in a medium size bowl. Mix well. Add drained green beans to soup mixture, and 1 cup of onion rings and stir gently to mix.
  • 2. Pour into a 2 quart casserole dish. Bake in preheated 350 degree F. oven for 25 minutes. Then top with remaining onion rings and bake an additional 5 minutes.
  • 3. We make this casserole all year round, we don't wait just for the holidays.

From Betty's Soul Food Collection... Give those green beans a little razzle-dazzle with a sprinkle of Parmesan cheese, some garlic and only 15 minutes of prep time!

4 cups frozen whole green beans
2 tablespoons butter
1 small clove garlic, finely chopped
1 tablespoon grated Parmesan cheese

Steps:

  • Cook green beans as directed on bag to desired doneness--except do not season to taste; drain.
  • Meanwhile, in 1-quart saucepan, melt butter over medium-low heat. Add garlic; cook 2 to 3 minutes, stirring frequently, until garlic is tender.
  • Pour garlic butter over cooked green beans; stir to coat. Sprinkle with cheese; toss gently.

If you're the kind of person who likes some crispy with your creamy, this is the dish for you. Forget the old-school canned soup: This version uses a homemade base with hen of the woods mushrooms, though any kind of mushroom you like - oyster, cremini, even button - will work. Whether you make it for a crowd or for just a few people, everyone will be coming back for seconds.

Nonstick cooking spray
2 1/2 pounds haricots verts or French green beans, trimmed and cut into 1-inch pieces
1 pound hen of the woods mushrooms (or cremini, oyster or other mushroom), cut into bite-size pieces
2 large shallots, halved lengthwise and thinly sliced into half-moons
4 garlic cloves, minced
2 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 quart heavy cream or half-and-half
1 teaspoon Cajun seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chicken base concentrate (or 1/2 bouillon cube)
1/4 teaspoon ground nutmeg
1 3/4 cups shredded or grated Parmesan
1 cup panko bread crumbs
2 cups store-bought or homemade fried shallots or onions

Steps:

  • Heat oven to 400 degrees. Coat a 9-by-13 baking dish with nonstick cooking spray. On a rimmed sheet pan lined with parchment paper, toss together green beans, mushrooms, sliced shallots, garlic and olive oil; season with salt and pepper to taste then spread evenly on the pan. Roast until the vegetables brown in spots and soften, about 30 minutes, tossing halfway through. (Alternatively, if you want the green beans extra soft, set them on an unlined sheet pan, add 3 tablespoons water, cover with aluminum foil, and cook until the vegetables are slightly firmer than you want in the end result, about 30 to 45 minutes.)
  • Meanwhile, in a large saucepan over medium-low heat, melt the butter, then add the flour. Cook for about 1 to 2 minutes, whisking constantly until it comes together and begins to turn golden in color.
  • Add heavy cream and whisk until it starts to thicken, 6 to 8 minutes. Add the Cajun seasoning, onion and garlic powders, chicken base, nutmeg and 1/2 teaspoon pepper. Whisk to combine, then add 1 1/2 cups Parmesan until melted. Taste and adjust seasonings.
  • When the green beans are cooked, add them to the saucepan, and toss to coat until mixture is thoroughly heated. Transfer green bean mixture to the baking dish.
  • In a medium bowl, combine bread crumbs, fried shallots and the remaining 1/4 cup Parmesan. Spread evenly over the top of the casserole.
  • Set the broiler to high, and broil until brown and bubbly (don't walk away!), about 1 to 2 minutes. Serve hot.

This recipe is a new version of green bean casserole. It uses fresh green beans that are topped with delicious caramelized onions, Parmesan cheese, and grape tomatoes.

1 ½ pounds fresh green beans, trimmed
4 cups sliced onions
2 tablespoons balsamic vinegar, or more if needed
3 cloves garlic, chopped
2 teaspoons white sugar
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup shredded Parmesan cheese, or to taste
halved grape tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil; cook green beans at a boil until tender yet firm to the bite, 5 to 10 minutes; drain and transfer to a 9x13-inch dish.
  • Cook and stir onions, vinegar, garlic, sugar, basil, and oregano in a skillet over medium heat until onions are softened and translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until onions are very tender and dark brown, 15 to 20 minutes more.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread onion mixture over green beans and top with Parmesan cheese. Arrange tomatoes, cut sides down, atop Parmesan cheese layer.
  • Bake in the preheated oven until cheese is melted and bubbling, about 35 minutes.
