These Healthy Greek Yogurt Brownies are lightened up but still irresistibly fudgy and decadent!

¼ cup almond flour (or oat flour*)
¼ cup unsweetened cocoa powder
¼ tsp sea salt
½ cup bittersweet chocolate, chopped ((4 oz))
2 TBS butter (or coconut oil, melted)
½ cup granulated sugar
¾ cup Vanilla Greek yogurt**
2 large eggs
1 tsp vanilla extract
¼ to ½ cup chocolate chips (to mix in)
½ cup 4 ounces bittersweet chocolate, chopped
½ cup heavy cream (or coconut cream, or half & half)
½ tsp vanilla extract

Steps:

  • Preheat oven to 350 degrees grease a 9x9" baking pan and set aside.
  • Mix almond flour, cocoa powder and sea salt in a small bowl; set aside.
  • Melt chocolate & coconut oil/butter together in the microwave. Mix until completely melted.
  • Mix in sugar, Greek yogurt and vanilla.
  • Mix in eggs, one at a time until the batter is completely smooth.
  • Add dry ingredients, whisk until just incorporated.
  • Add chocolate chips!
  • Pour batter into prepared pan and bake for 20 to 25 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. (20 = gooier brownies)
  • When brownies are finished baking, place the pan on a wire rack and cool.

2/3 Cup Non-fat vanilla Greek yogurt
1/4 Cup Coconut sugar
2 Large eggs
5 Oz Dark chocolate, (divided)
2 Tbsp Coconut oil
1/2 Cup Cocoa powder ((42g))
1 Tbsp Cornstarch ((9g))
1/2 tsp Baking soda
1/4 tsp Salt

Steps:

  • Heat your oven to 325 degrees and line an 8x8 inch pan with parchment paper.
  • In a large bowl, whisk together the yogurt, sugar and eggs.
  • Place 4oz of the chocolate, and the oil, into a small, microwave safe bowl and microwave until smooth and melted, about 1 minute. Whisk into the egg mixture
  • Whisk in the cocoa powder, cornstarch, soda and salt. Then, roughly chop the remaining chocolate and stir it in.
  • Spread into the pan and bake until a toothpick inserted in the center comes out clean, about 22-23 minutes. DO NOT OVERBAKE.
  • Immediately transfer into the fridge (I put them on a cooling pad) for 15 minutes. Then, remove and finish cooling on the counter completely.
  • Slice and DEVOUR!

½ cup unsalted butter
¼ cup unsweetened baking chocolate
¼ cup semi-sweet chocolate chips
1 cup cane sugar
2 eggs (room temperature)
2 teaspoons vanilla extract
⅔ cup all purpose flour
⅛ teaspoon salt
½ cup Stonyfield Greek yogurt

Steps:

  • Preheat the oven to 350°F. Spray an 8 x 8-inch baking pan with nonstick cooking spray and line it with parchment paper.
  • Place the butter and chocolate in a large microwave safe bowl and microwave in 30 second bursts until melted. Whisk in the sugar until dissolved, then whisk in the eggs and vanilla.
  • Add the flour, salt and Greek yogurt and stir until there are no more streaks of flour. Fold in the chocolate.
  • Transfer the batter to the prepared pan and spread evenly. Bake in the preheated oven for 25 to 30 minutes, being careful not to overcook them. Allow to cool completely before cutting and serving.
