1 cup cherry tomatoes, halved
1/2 cup crumbled reduced-fat feta cheese
1 small red onion, thinly sliced
1/4 cup pitted kalamata olive
1 tablespoon extra virgin olive oil
1 tablespoon red wine vinegar
salt
pepper
4 small whole wheat tortillas (6 inch)

Steps:

  • Combine all ingredients in large bowl with exception of tortillas.
  • Divide among 4 tortillas. Wrap burrito style.

2 large sweet potatoes, sliced into 1/4-inch thick half moons
2 teaspoons extra virgin olive oil
1 tablespoon italian seasoning

Steps:

  • Heat oven to 400.
  • In a large bowl, toss potatoes with oil and seasonings. Spread in a single layer on two large baking sheets and bake for 10 mintues.
  • With a spatula, turn slices over and continue baking until chips are golden, about 7 minutes longer.

1 tortilla (10-inch whatever type you like)
2 -3 tablespoons sun-dried tomatoes (the oil-packed type, easier if you can find pre-sliced)
1 -2 tablespoon kalamata olive (pitted and sliced)
1 tablespoon light cream cheese with roasted garlic
3 tablespoons roasted red peppers (the sliced kind in a jar)
1/4 cup cucumber (about 1/6 of a long english, cut in strips)
10 spinach leaves
2 tablespoons reduced-fat feta cheese

Steps:

  • spread the cream cheese on the tortilla in a line, leave some room at one end and use it to stick the olives and feta to it, pile everything else on top of your line.
  • fold the end with nothing on it in, one side of the line over top, and roll up.

1 small onion, finely chopped
2 stalks celery, diced
1 teaspoon dried thyme, crumbled
1 pinch salt
1 pinch fresh ground pepper
2 tablespoons whole wheat flour
3 1/2 cups low sodium chicken broth
1/2 cup tomato puree
1/4 cup dry sherry
1 lb lobster tail, shelled, cut into 1 inch pieces
1 1/4 cups 1% low-fat milk
1 chopped plum tomato
2 tablespoons chopped parsley, thinly sliced
1 teaspoon paprika
1/4 teaspoon hot pepper sauce

Steps:

  • In a large saucepan, heat oil over medium heat. Add onion, celery, thyme, salt and pepper; cook until softened about 7 minutes.
  • Stir in whole wheat flour; cook stirring occasionally until lightly browned, about 3 minutes.

1 lb mushroom, sliced
3 cups low-sodium low-fat chicken broth
1/4 cup reduced-fat sour cream

Steps:

  • In a large saucepan, heat oil over medium heat. Add leeks, garlic, thyme and salt and cayenne. Cook, stirring occasionally until softened, about 7 minutes.

8 ounces sweet reduced-fat Italian sausage (either chicken or turkey)
1 tablespoon extra virgin olive oil
1 medium onion, finely chopped
1/2 teaspoon dried rosemary, crumbled
salt
1 garlic clove, minced
12 ounces head escarole, cut into cross-wise strips, washed, and spun dry
3 3/4 cups low sodium chicken broth

Steps:

  • Lightly coat a heavy bottomed nonstick saucepan with cooking spray and heat over medium-high heat. Add sausages and reduce heat to medium; cook, stirring occasionally, until browned on all sides., 8 to 10 mintues. Transfer to a cuttting board.
  • Add oil to the pan and heat over medium heat. Add onion, rosemary, and a generous pinch of salt and cook, stirring occasionally until onion is softened, about 6 minutes. Stir in garlic and cook 2 minutes longer.
  • Meanwhile, cut sausages in half lengthwise, the cut widthwise into 1/2 inches pieces.
