1 pound part-skim mozzarella cheese, cut into 48 cubes
24 fresh broccoli florets (about 10 ounces)
1/2 cup Greek vinaigrette
24 slices hard salami
2 jars (7-1/2 ounces each) roasted sweet red peppers, drained and cut into 24 strips

Steps:

  • In a shallow dish, combine cheese, broccoli and vinaigrette. Turn to coat; cover and refrigerate 4 hours or overnight., Drain cheese and broccoli, reserving vinaigrette. On 24 appetizer skewers, alternately thread cheese, salami, broccoli and peppers. Brush with reserved vinaigrette.

Perfect at any backyard barbecue, served with a pilaf and garlic bread. For best results, vegetables should marinate for more than 2 hours, or even overnight. The marinating time in NOT included in the prep or cooking time.

1 small eggplant, about 3/4 lb cut into 2-inch cubes
3 medium carrots, cut into 1/2-inch slices
8 small red potatoes, about 2-3-inch in diameter
3 medium zucchini, sliced lengthwise, then into 1-inch slices
1 large red bell pepper, seeded and cut into 1-inch squares
2 medium onions, cut in wedges (separate wedges into 2-3 layers each)
16 whole mushrooms
3/4 cup olive oil
1/4 cup white vinegar or 1/4 cup lemon juice
2 garlic cloves, minced
1 teaspoon Dijon mustard
1/2 teaspoon oregano
1/2 teaspoon marjoram
1/2 teaspoon rosemary
1/4 teaspoon ground pepper

Steps:

  • Combine all ingedients for the Herb Marinade -- and set aside.
  • Cook eggplant in 1" boiling water for 3 minutes and drain.
  • Cook carrots in 1" boiling water until just tender crisp and drain.
  • Cook unpeeled potatoes in 1" boiling water for approximately 15-20 minutes. Drain and cut in half.
  • Place eggplant, carrots, potatoes, zucchini, peppers, onions and mushrooms in a large plastic bag. Add marinade, seal bag well.
  • Refigerate for 2 hours or overnight.
  • Drain veggies and reserve marinade.
  • Using 8 metal skewers, thread veggies, alternating varieties.
  • Place on lightly greased grill, over low heat.
  • Cook, turning often, basting with the reserved marinade for 10-15 minutes, or until veggies are tender.
  • Sprinkle lightly with salt before serving.
  • Remaining marinade can be used again. It can be refrigerated for up to 2 weeks.
  • Makes 8 skewers; 2 skewers per person.
  • NOTE: If wooden skewers are used, soak them in water for 15-20 minutes before using. This prevents the wood from burning.

1 yellow squash or zucchini, cut into half moons
8 ounces baby bella mushrooms, trimmed
1 cup grape tomatoes
6 ounces brussels sprouts, halved,
1 medium onion, cut into chunks
3-4 garlic cloves, minced
1/2 cup chopped fresh parsley
kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon Aleppo pepper ((or 1/2 to 1 teaspoon red pepperflakes))
1/3 cup extra virgin olive oil
juice of two lemons

Steps:

  • Prepare 8 to 10 skewers (if using bamboo or wooden skewers, soak them in water for at least 30 minutes).
  • Chop the vegetables and garlic and place them in a large mixing bowl. Add the parsley and season with Kosher salt, oregano and pepper flakes. Add the olive oil and lemon juice. Toss to combine.
  • Set the vegetables aside for 20 minutes while you heat the grill (Or you can marinate them in the fridge for a few hours until you are ready).

500 g beef rump, trimmed and cut into 2 . 5 cm (1 inch cubes)
8 teaspoons olive oil (2 tablespoons)
1/4 cup red wine
1 tablespoon lemon juice (4 teaspoons)
1 lemon, zest of one lemon
1 small onion, finely chopped
2 garlic cloves, crushed
1 tablespoon dried oregano (4 teaspoons)
2 bay leaves
1 red onion, cut into six wedges and separated
1 red capsicum, cut into 2 . 5cm (bell pepper)
1 green capsicum, cut into 2 . 5 cm pieces
16 button mushrooms, halved if large

Steps:

  • soak 8 bamboo skewers in water for 30 minutes, or alternatively you can use metal skewers.
  • Combine all of the marinade ingredients in a ceramic or stainless steel bowl.

1/4 cup lemon juice
1/4 cup honey
2 tablespoons balsamic vinegar

2 pounds pork tenderloin, cut into 1-1/2-inch cubes

Refrigerated tzatziki sauce, optional

Steps:

  • In a small bowl, whisk the first 10 ingredients until blended. Pour 1/2 cup marinade into a shallow dish; stir in ouzo. Add pork; turn to coat. Refrigerate 8 hours or overnight. 8 tablespoons purchased Greek-style vinaigrette
2 tablespoons minced fresh mint
1/2 cup orzo (rice-shaped pasta)
1 red bell pepper, cut into 1-inch square pieces
3 Japanese eggplants
2 medium zucchini, cut into 1/2-inch-thick rounds
1/2 cup crumbled feta cheese

Steps:

  • Prepare barbecue (medium-high heat). Blend vinaigrette and mint in small bowl for dressing. Cook orzo in medium saucepan of boiling salted water until just tender but still firm to bite; drain. Return orzo to same pan. Mix in 3 tablespoons dressing. Season with salt and pepper.
  • Thread bell pepper, eggplant and zucchini onto 4 metal skewers; brush with dressing. Grill vegetables until tender and just charred, turning and brushing often with dressing, about 12 minutes.
