This is a fantastic salad from the Houston Junior League Cookbook, Stop and Smell the Rosemary. It is great as a meatless dinner, or served at a brunch or dinner party. Enjoy!

Steps:
- Combine lemon juice, herbs, mustard, Worcestershire, salt, pepper and garlic in a small bowl.
- Whisk in olive oil and set aside.
- Toss all lettuce in a large salad bowl.
- Add olives, hearts of palm, avocado and feta.
- Pour dressing over salad and toss to coat.

Creamy avocado adds a really nice touch to all the tanginess found in traditional Greek salads. I make this using recipe #448742 for the feta cheese. Inspired from a recipe I saw on Chuck's Day Off (Cooking Channel)

- Mix the tomatoes, cucumbers, red onion, olives, avocado and lettuce in a large bowl with the dill, olive oil, red wine vinegar, and lemon juice.
- Add salt and pepper to taste, toss.

Steps:
- Bring the quinoa and 1 1/3 cup water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
- Place kale in a steamer basket over 1 inch of boiling water in a saucepan. Cover saucepan with a lid and steam kale until hot, about 45 seconds; transfer to a large plate. Top kale with quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese.
- Whisk olive oil, lemon juice, Dijon mustard, sea salt, and black pepper together in a bowl until the oil emulsifies into the dressing; pour over the salad.
