This is a fantastic salad from the Houston Junior League Cookbook, Stop and Smell the Rosemary. It is great as a meatless dinner, or served at a brunch or dinner party. Enjoy!

1 head iceberg lettuce, torn
2 heads red leaf lettuce, torn
15 green olives, sliced
1 (14 ounce) can hearts of palm, drained and sliced into rounds
2 avocados, pitted,peeled and sliced
4 -6 ounces crumbled feta cheese (about 1 to 1 1/2 cups)
1 large lemon, juiced
1 tablespoon fresh minced fines herbes (equal parts chervil, chives, parsley and tarragon)
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 cloves garlic, minced
1 1/4 cups olive oil (extra virgin)

Steps:

  • Combine lemon juice, herbs, mustard, Worcestershire, salt, pepper and garlic in a small bowl.
  • Whisk in olive oil and set aside.
  • Toss all lettuce in a large salad bowl.
  • Add olives, hearts of palm, avocado and feta.
  • Pour dressing over salad and toss to coat.

Creamy avocado adds a really nice touch to all the tanginess found in traditional Greek salads. I make this using recipe #448742 for the feta cheese. Inspired from a recipe I saw on Chuck's Day Off (Cooking Channel)

2 large tomatoes, cubed
2 lebanese cucumbers, cubed
1 red onion, thinly sliced
1 cup kalamata olive, pitted and halved
1 avocado, halved, pitted, peeled and cubed
4 cups romaine lettuce
1/2 cup fresh dill, finely chopped (oregano is nice too)
1/4 cup extra virgin olive oil
1 teaspoon red wine vinegar
1 lemon, juiced
1 cup tofu, crumbled, marinated in the style of feta cheese (Marinated Tofu - (In the Style of Feta Cheese))

Steps:

  • Mix the tomatoes, cucumbers, red onion, olives, avocado and lettuce in a large bowl with the dill, olive oil, red wine vinegar, and lemon juice.
  • Add salt and pepper to taste, toss.
  • Top with marinated tofu feta (recipe #448742).

⅔ cup quinoa
1 ⅓ cups water
1 bunch kale, torn into bite-sized pieces
½ avocado - peeled, pitted, and diced
½ cup chopped cucumber
⅓ cup chopped red bell pepper
2 tablespoons chopped red onion
1 tablespoon crumbled feta cheese
¼ cup olive oil
2 tablespoons lemon juice
1 ½ tablespoons Dijon mustard
¾ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Bring the quinoa and 1 1/3 cup water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
  • Place kale in a steamer basket over 1 inch of boiling water in a saucepan. Cover saucepan with a lid and steam kale until hot, about 45 seconds; transfer to a large plate. Top kale with quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese.
  • Whisk olive oil, lemon juice, Dijon mustard, sea salt, and black pepper together in a bowl until the oil emulsifies into the dressing; pour over the salad.
