20 wooden skewers
10 small whole calamari, cleaned, tentacles removed
1/2 cup extra-virgin olive oil, plus more for grilling
1/4 cup red wine vinegar
4 garlic cloves, chopped
1 tablespoon dried oregano
1 tablespoon fresh oregano
1 tablespoon fresh thyme leaves
1 lemon, juiced
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
Lemon wedges, for garnish
Fresh oregano leaves, for garnish

Steps:

  • Soak 20 wooden skewers in water for about 20 minutes. Rinse the calamari tubes and pat dry. Split the bodies from top to bottom so you have 2 triangular pieces. Thread a soaked skewer through the length of each piece. Put the skewers on a platter and set aside. To make the vinaigrette, whisk together the oil, vinegar, garlic, dried and fresh oregano, thyme and lemon juice; season with salt and pepper. Pour 1/2 of the vinaigrette over the calamari; set the other 1/2 aside while you make the salad.
  • In a large bowl, add the tomatoes, onion, cucumber, cheese, olives, and romaine. Pour the remaining vinaigrette over the salad and toss to combine. Let marinate while you grill the calamari.
  • Heat the grill or a grill pan and oil it lightly. Grill the calamari for 2 minutes on each side, no longer or they will be tough. To serve, put the salad onto a large platter and top it with the calamari skewers. Garnish with fresh oregano leaves and lemon wedges.

1 pound peeled and deveined large shrimp
2 medium zucchini (1 pound), halved lengthwise
1 red onion, cut into scant 1/2-inch rings
1 teaspoon grated lemon zest and the lemon, halved, plus wedges for serving
1/2 cup extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
3 ounces feta, crumbled (3/4 cup)
3 cups cooked couscous (from 1 cup dried)
1 cup packed fresh herbs, such as dill and parsley, chopped

Steps:

  • Heat grill to medium-high. Thread shrimp onto metal skewers, with tails facing same direction. Brush shrimp, zucchini, onion, and halved lemon with 3 tablespoons oil; season with salt and pepper. Grill, flipping once, until vegetables are softened in spots, shrimp are cooked through, and lemon is lightly charred, 6 to 8 minutes for vegetables, about 3 minutes for shrimp and lemon.
  • Transfer vegetables to a cutting board, shrimp to a plate. Squeeze a grilled lemon half over shrimp. Roughly chop onion and zucchini; toss with lemon zest, 2 tablespoons oil, and feta. Season with salt and pepper. Toss couscous with remaining 3 tablespoons oil, juice from other grilled lemon half, and herbs; season with salt and pepper. Serve shrimp over couscous with zucchini salad, a drizzle of oil, and lemon wedges.

300g brown basmati rice
500g lamb mince
1 tbsp harissa
50g feta cheese
1 large red onion , ½ thinly sliced, ½ grated
large handful parsley , roughly chopped
large handful mint , roughly chopped
85g pitted black kalamata olive , quartered
1 cucumber , diced
300g cherry tomato , halved
1 tbsp olive oil
juice 1 lemon

Steps:

  • Soak 12 wooden skewers in water for 30 mins. Cook the rice following pack instructions, then rinse under cold water and drain thoroughly.
  • Heat the grill. Mix the mince with the harissa, feta, grated onion and seasoning. Form into 12 sausage shapes and thread onto the skewers. Lay on a non-stick baking tray and grill for 6-8 mins, turning until cooked through and slightly browned.
  • Mix the brown rice with the remaining ingredients and some seasoning. Serve alongside the hot skewers.

1 lb feta cheese, cut into small cubes (block, not crumbled)
1 lb kalamata olive, pitted and halved
1 lb ripe cherry tomatoes, halved

Steps:

  • Season the cucumber pieces with salt and pepper.
  • Thread the following onto a cucumber or skewer: cucumber slice, feta, cherry tomato half, olive half. If using toothpicks, this will complete each toothpick. If using skewers, repeat until desired.
