2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

1 cup medium-grain white rice
2 cups milk
2 tablespoons heavy cream
1 tablespoon salted butter
Pinch of kosher salt
One 8-ounce can sweetened condensed milk
1 tablespoon vanilla extract
Zest of 1 1/2 lemons plus juice of 1/2 lemon, plus extra lemon zest, for serving
1 large egg, beaten

Steps:

  • Pour the rice into a medium saucepan (nonstick works well). Add the milk, cream, butter, salt and 2 cups of water and stir to combine. Bring the mixture to a gentle boil over medium-high heat, then cover the pan, reduce the heat to low and simmer, stirring twice as it cooks, until all the liquid is absorbed and the mixture is creamy, 20 to 25 minutes.
  • Turn off the heat, add the sweetened condensed milk, vanilla and lemon zest and juice and stir. Return to the heat and cook for 5 more minutes, then turn off the heat again. Mix in the egg, stirring constantly.
  • Let the mixture sit in the pan for an additional couple of minutes, then serve it nice and warm with some grated lemon zest over the top.

1 cup uncooked white rice
1 tablespoon butter
1/2 teaspoon salt
2 eggs, well beaten
1/3 cup brown sugar
1/4 teaspoon grated lemon, rind of
2 tablespoons lemon juice
1/2 teaspoon vanilla
cinnamon

Steps:

  • Combine 1-2/3 cups water with rice, butter and salt in a small saucepan.
  • Bring to a boil and lower the heat to a mild simmer.
  • Cover and cook until rice is tender, approximately 20 minutes.
  • Remove from stove and beat in the eggs.
  • Continue to beat 1-2 minutes.
  • Stir in sugar, lemon juice and peel, and vanilla.
  • Transfer to a serving bowl.
  • Sprinkle top generously with cinnamon.
  • Cool to room temperature.
  • Cover tightly and refrigerate until cold.

2 cups water
½ cup uncooked short-grain white rice
2 cups whole milk
4 tablespoons white sugar
½ cup whole milk
4 tablespoons cornstarch
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon, or more to taste

Steps:

  • Bring water and rice to a boil in a saucepan. Immediately reduce heat to medium-low. Simmer uncovered very slowly, stirring occasionally, until most of the water has been absorbed and rice is soft, about 30 minutes.
  • Pour 2 cups milk and sugar into the saucepan and increase heat to high.
  • Meanwhile, stir together 1/2 cup milk and cornstarch in a bowl.
  • Once rice-milk mixture is boiling, add cornstarch mixture and vanilla extract. Stir until well combined. Remove from heat.
  • Ladle rice pudding into individual serving dishes and sprinkle with cinnamon. Allow to cool to room temperature. Refrigerate until well chilled, at least 4 hours.

1/2 cup short grain white rice (a starchy rice, like arborio)
3 cups whole milk
peel of 1 lemon, removed in one long strip
1/3 cup white sugar, plus
2 tablespoons white sugar
2 egg yolks, slightly beaten
1 1/2 teaspoons cornflour (cornstarch is the same thing)
1/2 teaspoon vanilla extract (optional)

Steps:

  • Place milk, sugar and lemon peel (just the peel - none of the pith) in a heavy saucepan. Bring mixture to a boil, stirring constantly until sugar melts. Reduce heat to low and add the rice.
  • Cover the pan and cook until the rice/milk mixture has gone thick and creamy (about 30-35 minutes).
  • Turn off heat. Remove lemon peel and discard.
  • Whisk together egg yolks with corn flour.
  • Quickly whisk egg yolks into the rice mixture, stirring well. (If you want to, at this point you can also add a 1/2 tsp of vanilla extract). Keep stirring to make sure yolks are incorporated and won't curdle.
  • Spoon pudding into four serving dishes and cool. Top with a sprinkling of cinnamon.

PERIYALI'S GREEK RICE PUDDING



Periyali's Greek Rice Pudding image

This dish is called rizogalo, or Greek rice pudding. Though it is a simple dessert that is usually served cold, rizogalo is actually cooked the same way as risotto: the rice is simmered slowly and must be stirred constantly to massage the starch out of the grains and to attain a creamy, toothsome consistency. And though New Yorkers don't carry on about it, it has been with them for many years, all over the city. It is a mainstay on sophisticated menus at Molyvos in midtown and Periyali in the Flatiron district, where it is mounded in a bowl and splashed with cinnamon.

4 cups whole milk
1 2-inch piece lemon peel
1/3 cup Carolina long-grain rice
1 egg yolk
1/4 cup sugar
1/3 cup heavy cream
1/2 teaspoon vanilla extract
Ground cinnamon, for sprinkling

Steps:

  • In a heavy 4-quart saucepan, combine the milk, lemon peel and rice. Bring to a boil; reduce heat and simmer, stirring frequently, until the rice is soft to the bite but still retains its shape, about 45 minutes. Remove rice from heat.
  • In a small bowl, stir together the egg yolk and sugar. Rapidly stir a spoonful of the rice mixture into the yolk mixture. Stir the yolk mixture into the pan of rice, mixing steadily to prevent the yolk from curdling. Reduce the heat to low, and cook, stirring constantly, 1 minute.
  • Add the cream, and cook, stirring, until the mixture is steaming. Remove from heat, and discard lemon peel. Stir in vanilla. Continue to stir until the mixture has cooled slightly; then press a piece of plastic wrap directly onto the surface of the rice to prevent a skin from forming. Serve warm or at room temperature, spooned into bowls and sprinkled with cinnamon.
