2 cups store-bought tzatziki

1 1/2 cups crumbled feta
1 pint yellow cherry tomatoes, quartered
Juice of 1 lemon
1/4 cup chopped fresh parsley
8 pitas, cut into wedges

Steps:

  • In a shallow glass bowl or baking dish, begin layering in the ingredients in the following order: hummus, roasted red bell peppers, tzatziki, diced cucumbers, olives, feta and cherry tomatoes.
  • Squeeze over the lemon juice and garnish with the parsley.
  • Serve with the pita wedges.

1/2 lb ground lamb
1/2 cup finely chopped red onion
1/2 cup chopped seeded cucumber
1/2 cup chopped seeded tomatoes
1 cup tzatziki (Greek yogurt dip)
1/4 cup chopped kalamata olive
1/4 teaspoon of fresh mint, finely chopped

Steps:

  • Spread hummus on platter. I usually use a pretty garlicky kind, stir in some olive oil and lemon zest, a little cayenne.
  • Brown lamb - can use beef or turkey- in skillet with garlic and some oregano and marjoram. Drain well. I usually brown my meet, drain and rinse it with boiling water and then add some spices. Layer meat on top of hummus.
  • Layer onion, cucumbers, tomatoes and tzaziki (greek yogurt dip). The amounts I gave are approximate, use more or less to your preference.
  • Scatter olives and mint over top. Serve with fresh-baked pita chips and watch it dissappear!

Steps:

  • Shred the cucumber on a box grater, toss with a large pinch of salt and let drain in a strainer for 10 minutes. Squeeze out any remaining liquid. Mix the drained cucumber with the yogurt, olive oil, garlic and mint in a medium bowl.
  • Toss together the parsley, olives, lemon zest and scallions in a small bowl. Place the artichokes in a piece of cheesecloth or in a strainer and squeeze dry. Repeat with the peppers.

2 pkg roasted red pepper hummus (10 oz each)
1 jar(s) Litehouse Opa Feta and Dill Greek Yogurt Dressing (11.25 oz)
1 jar(s) artichoke hearts (12 oz)
1 jar(s) julienned sun-dried tomatoes (8.5 oz)
1 whole bulb of garlic
1 bunch green onions
1 large cucumber, peeled and seeded
1 jar(s) Kalamata (Greek) olives pitted
1 container of blue cheese or feta cheese
1 large avocado

Steps:

  • 1. Roast one whole bulb of garlic in the oven at 400 degrees until each clove is golden brown and tender. (To roast garlic peel off the loose outer skin, chop off about 1/4 inch of the top of the bulb, rub with olive oil, wrap in foil or place in garlic roaster and bake for 30-35 minutes). While the garlic is roasting chop all the vegetables, sundried tomatoes, avocado, olives, and artichokes and place in prep dishes.
  • 2. Remove the individual garlic cloves from the garlic bulb. Mix the roasted garlic with the OPA Feta and Dill Greek Yogurt Dressing and set aside. You can also make this a day or two ahead before adding to dip to enhance the flavor even more.
  • 3. Layer all the ingredients in a festive dish or container of your choice beginning with the roasted red pepper hummus.
  • 4. Then follow with the OPA Feta and Dill Greek Yogurt Dressing infused with the roasted garlic.
  • 5. Then layer the remaining ingredients in any manner you wish.
  • 6. I like alternating the colors. This can be served right away or made the night before and refrigerated. Making it the night before really allows all the flavors to meld together. You can serve this with pita bread, pita crackers or flatbread crackers.

2/3 cup plain yogurt
1 (19 ounce) can chickpeas, drained and rinced
2 garlic cloves, peeled
1 teaspoon oregano
1/8 teaspoon black pepper
5 kalamata olives, pits removed and diced
1/2 green pepper, diced
1 tomatoes, diced
1/4 cup feta cheese, crumbled

Steps:

  • Place the yogurt, chickpeas and garlic in the bowl of a food processor or blender and process until completely smooth and creamy.
  • Spread the mixture in a large flat circle on a dinner plate or serving dish.
  • Sprinkle the tomatoes and green pepper evenly over the top of the mixture.
  • Sprinkle with black pepper and oregano and top with the feta cheese and olives.
  • Refrigerate for 30 minutes to allow the flavors to mingle.
  • Serve with plenty of tortilla chips, toasted pita triangles or crackers.
