1/4 cup lemon juice
1 1/2 tablespoons balsamic vinegar
1 teaspoon dried oregano
1 1/2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
4 (4 ounce) flounder fillets
vegetable oil cooking spray
3 tablespoons chopped fresh parsley

Steps:

  • Combine first 6 ingredients in a small bowl.
  • Place fish in a 13 x 9 x 2-inch baking dish coated with cooking spray; pour lemon juice mixture over fish.
  • Bake at 350 degrees for 13 to 15 minutes or until fish flakes easily when tested with a fork.
  • Sprinkle with parsley.

4 (6 ounce) flounder fillets
2 tablespoons lemon juice
1 tablespoon olive oil
1 -2 teaspoon all purpose Greek seasoning
1/8 teaspoon pepper
1/4 cup ripe olives, sliced
2 ounces feta cheese, crumbled

Steps:

  • Drizzle fish with lemon juice, oil, seasoning and pepper.
  • Preheat grill to medium.
  • Grill with the grill lid down (covered) for 7-8 minutes on each side so that fish flakes with fork. I would check sooner to make sure it isn't overcooking (thickness is key).
  • Sprinkle with olives and feta. Garnish with parsley and lemon.

flounder, fillets
1 thinly sliced medium red onion
1 cup thickly sliced yellow pepper, strips
1/4 cup sliced kalamata olive
1/3 cup dry white wine
1/2 teaspoon dried oregano
1/8 teaspoon salt
1/4 teaspoon ground pepper
1/2 cup crumbled feta cheese

Steps:

  • Heat oven to 450 degrees. Coat a 9x13 inch baking dish with cooking spray. Arrange fillets in baking dish; tuck under thin ends for more even cooking. Top with onion, bell pepper and olives. In a small bowl, combine wine, oregano, salt and pepper; drizzle over fillets. Sprinkle with feta. Cover and bake 15 minutes.
