Greek Baked Fish With Tomatoes and Onions image

The robust flavors in the tomato sauce work well with a variety of white fishes. If you have traveled in the Greek Islands, chances are you have had this fish. Use a white-fleshed fish that will stand up to the robust flavors in the tomato sauce. From the Monterey Bay Aquarium's list of best choices I recommend Pacific cod or halibut, black cod or striped bass. From the "Good Alternatives" list I recommend Mahi Mahi from United States waters.

2 pounds boneless fish fillets or steaks, halibut (Pacific US), black cod (Alaska and Canada), porgy, striped bass or mahi mahi (United States)
Salt and freshly ground pepper
Juice of 1 large lemon
2 tablespoons extra virgin olive oil
1 pound onions, cut in half lengthwise and then sliced thinly across the grain
2 large garlic cloves, minced or puréed
1 28-ounce can chopped tomatoes with juice (in summer use 2 pounds grated or peeled seeded ripe tomatoes)
1/8 teaspoon sugar
1 teaspoon sweet paprika
1/8 teaspoon cinnamon
1 tablespoon tomato paste dissolved in 1/4 cup water
1/2 cup dry white wine or red wine
Leaves from 1 bunch flat-leaf parsley, chopped (about 1/2 cup)

Steps:

  • Pat the fish dry and season to taste with salt and pepper. Oil one or two baking dishes large enough to accommodate the fish in one layer. Lay the fish in the dish and pour on the lemon juice. Refrigerate for 30 to 60 minutes while you prepare the remaining ingredients.
  • Preheat the oven to 375 degrees. Heat the oil over medium heat in a large, heavy skillet and add the onions. Cook, stirring often, until they have softened and begun to color slightly, 8 to 10 minutes. Add a generous pinch of salt and the garlic and cook, stirring, until the garlic is fragrant, 30 seconds to a minute. Stir in the tomatoes, sugar, paprika, cinnamon, dissolved tomato paste, wine, half the parsley and more salt and pepper to taste and bring to a simmer. Simmer uncovered, stirring often, until the sauce has cooked down a bit and is very fragrant, about 15 minutes. Remove from the heat and pour over the fish. Sprinkle on the remaining parsley.
  • Place in the oven and bake until the fish is opaque and pulls apart easily with a fork, about 30 minutes. Baste the fish every 10 minutes if it is not submerged in the sauce. Serve hot or warm, with rice, bulgur, or potatoes.

5 tablespoons olive oil, plus extra
olive oil, for oiling
2 onions, finely chopped
2 carrots, thinly sliced
2 celery ribs, thinly sliced
2/3 cup dry white wine
1 (14 ounce) can tomatoes with juice
1 pinch sugar
1 large lemon, thinly sliced
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon chopped fresh marjoram
1 (2 -2 1/2 lb) tilapia fillets or 1 (2 -2 1/2 lb) red snapper, fat whole fish cleaned and scaled
salt and pepper

Steps:

  • Preheat the oven to 350°. Oil a shallow ovenproof dish. Heat 4 tbsp of the oil preheated in a pan over medium heat. Add the onions and garlic. Cook for 5 minutes. Add carrots and celery. Cook, stirring frequently, for 8-10 minutes or until slightly softened.
  • Remove pan from heat and pour the wine into the pan. Return to the stove and bring to a boil. Add the tomatoes with the juice, sugar, lemon slices, and salt and pepper to taste. Simmer for 20 minutes then stir in the herbs.
  • Put the fish in the oiled baking dish. Pour the vegetables around the fish. Arrange the lemon slices on top of the fish. Sprinkle with the remaining oil and season to taste.
  • Bake, uncovered, for 45-60 minutes depending on the thickness of the fish. Serve immediately.

In summer I want a dish that tampers with the tomato-fish formula as little as possible. So instead of cooking the tomatoes, I marinate them, and instead of braising the fish, I grill or roast it. Neither fish nor tomatoes need much help.

2 cups cherry tomatoes, preferably Sun Gold, halved
1/4 cup olive oil, or more as needed
2 tablespoons white wine vinegar
1 tablespoon minced fresh hot chili, like jalapeño, or more to taste
1 tablespoon chopped fresh oregano, or 1 teaspoon dried
4 cloves garlic, sliced, or more to taste
Salt
freshly ground black pepper
1 large whole fish or 2 smaller ones (2 to 3 pounds total), like striped bass, rockfish or trout; preferably butterflied and boned, or simply gutted
1 lemon, sliced
4 to 6 sprigs fresh thyme

Steps:

  • Heat oven to 450 degrees or prepare grill; heat should be medium-high and rack about 4 inches from fire. Combine tomatoes, 2 tablespoons olive oil, vinegar, chili, oregano, a few slices of garlic, and a sprinkle of salt and pepper in a large bowl; let sit at room temperature for 20 to 30 minutes.
  • Meanwhile, using a sharp knife, make three or four diagonal, parallel slashes on each side of fish, just about down to the bone. Sprinkle inside of fish with salt and pepper, then stuff with remaining garlic, a layer of lemon slices and thyme sprigs. Rub outside of fish with remaining 2 tablespoons oil and sprinkle with salt and pepper.
  • To roast, put fish in roasting pan and cook for about 20 minutes (cooking time will depend on fish size). If grilling, cook until firm enough to turn, 5 to 8 minutes. Turn and cook second side for 5 to 8 minutes. Whether roasting or grilling, fish is done when exterior is crisp and a thin-bladed knife passes easily through the flesh.
  • Taste tomato mixture and adjust seasoning, adding more oil if needed. Serve fish topped with tomatoes and their liquid.

4 whole branzini, or other small Mediterranean fish, 14 to 16 ounces each, gutted, scaled and bones removed but head, skin and fillets left intact (should be about 8 ounces each after processing)
Salt and freshly ground black pepper
3/4 cup olive oil, plus more if necessary
1/4 cup lemon juice
1 1/2 teaspoons chopped fresh parsley leaves
1 tablespoon chopped fresh oregano leaves

Steps:

  • Preheat a grill to medium-high.
  • Rinse the fish well under cold running water and pat dry with paper towels. Season the fish all over inside and out with salt and freshly ground black pepper. Brush each fish generously with 1/2 tablespoon of the olive oil and place directly on the grill. Cook, turning occasionally and coating with more olive oil if necessary, until flesh flakes easily and fish is cooked through, about 6 minutes per side. Place fish on a platter. Meanwhile, in a small bowl combine remaining olive oil with the lemon juice, parsley, and oregano. Season, to taste, with salt and pepper. Serve fish drizzled with the olive oil-lemon mixture.

2 lbs fresh black grouper fillets, cut into approximately 1 1/2 inch pieces (or other fillet of your choice)
2 (16 ounce) cans crushed tomatoes, juices drained
1 large onion, coarsely chopped
1 cup kalamata olive, pitted and halved
1/2 cup fresh parsley, minced
1 1/2 tablespoons small capers, drained
4 garlic cloves, minced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
1 cup crumbled feta cheese
1/2 cup white wine
1/2-3/4 cup olive oil

Steps:

  • Preheat oven to 375°F.
  • Place the fish pieces in a metal baking pan.
  • Season lightly with salt.
  • Combine all the remaining ingredients, except the wine and olive oil, season, and distribute on top of fish.
  • Pour the wine and olive oil over and bake for about 35-40 minutes, or until the fish flakes.

GREEK GRILLED FISH

Great for summer grilling and one of our favorite recipes. For variety you may make this using a variety of Greek herbs and spices - I do! Like adding a grating of black pepper just before it's done. Note ... I have never used the optional bay leaves - when using my fresh from the garden thyme or the organic packet of fresh herbs from the market - I let it dry before using and have added - "but dry it first!"to the ingredient list.

2 lbs fish fillets (I use salmon)
3 sprigs dried thyme (I use fresh when available ... but dry it first)
5 fresh rosemary sprigs (to taste)
8 large bay leaves (I have never used the bay leaves) (optional)
2 tablespoons lemon juice (freshly squeezed)
2 tablespoons olive oil
salt (to taste)
coarsely ground thyme (to taste, may sub with oregano)
olive oil, to brush grill
aluminum foil

Steps:

  • Rinse and pat dry.
  • Lightly salt both sides, set in a colander over a bowl refrigerate until ready to grill.
  • Fire up the grill - brush grill with olive oil to prevent sticking (a hand held grid makes turning easier).
  • If you wish to lay aluminium foil on the grill poke several holes through foil or make the base with the dried thyme, rosemary branches and bay leaves directly on grill, be sure to overlap so they cover a slightly bigger area then the fish.
  • In a small bowl combine the lemon juice and olive oil, brush fish with the mixture, sprinkle lightly with the coarse thyme or oregano - baste frequently with the lemon/olive oil mixture.
  • Cover the fish loosely with aluminium foil to keep moist.
  • Cook about 20 minutes or until fish flakes readily when prodded with a fork in the thickest part.

GREEK-STYLE FETA AND OLIVE SPREAD (FOR BURGERS, STEAKS AND FISH)



Greek-Style Feta and Olive Spread (For Burgers, Steaks and Fish) image

This spread is so good on grilled steaks, pork and turkey burgers, I use it all the time topped on my salmon patties (recipe #155183) in between a bun. You can use it on just about anything! All the ingredients should be adjusted to taste. Plan ahead this needs to chill for a minimum of 5 hours, overnight is even better, this get stronger with chilling time, so be careful with the fresh garlic, it can be too overpowering in this spread if you make the mistake of adding in to much while making it... start with adding in a small amount and chill for about 3 hours if you feel that you want more garlic flavor then mix in more. You can add in salt, but the feta and olives are very salty.

4 medium onions, thinly sliced
3 tablespoons olive oil
2 tomatoes
1/2 cup fresh parsley, finely chopped
2 garlic cloves, minced
1 1/3 lbs white fish fillets (turbot, sole, etc.)
2 tablespoons lemon juice
salt and pepper
1 lemon, thinly sliced

Steps:

  • In a large skillet, saute onions in oil until golden brown and almost caramelized.
  • Peel and chop 1 tomato. Add to onions, along with parsley and garlic. Simmer for a few minutes longer.
  • Place fish fillets in a lightly buttered crockpot. Sprinkle with lemon juice, salt and pepper.
  • Spoon sauteed vegetables over fish.
  • Slice remaining tomato and place on vegetables.
  • Top with lemon slices.

500 g salt cod
2 medium red onions, grated
4-5 spring onions, finely chopped
1/2 bunch of dill, finely chopped
1/2 bunch of parsley, finely chopped
1 can(s) beer
250 g self-rising flour
lots of freshly ground pepper
1 egg

Steps:

  • 1. Prepare the cod, in order to soak the salt out. Place it in a bowl filled with water and leave for 48h. Remember to change the water frequently.
  • 2. Then flake the cod, removing the skin, and place it in a large bowl. Add the rest of the ingredients leaving the flour for last. (In case you're in a hurry or just don't want to add the egg, you can omit it). Mix well, cover and leave the mixture to rest and the different flavours to mingle for 20 minutes.
  • 3. Wet a spoon in water, take a spoonful of the mix and carefully place in frying oil. Saute'/ fry for a couple of minutes until golden and crispy. Remove and place on kitchen paper to soak up any excess oil. Serve with garlic sauce.

2 teaspoons coriander seeds
1 teaspoon salt
12 ounces cod fish fillets
1 tablespoon olive oil
1 tablespoon white wine vinegar

Steps:

  • Preheat the oven to 375°F.
  • Place the coriander seeds in a baking pan and bake them for 10 minutes. Let them cool for 5 minutes.
  • Mash them with mortar & pestle together with the salt.
  • In small bowl, whisk together olive oil and vinegar.
  • Dredge cod fillets in oil mixture.
  • Toss fillets with the coriander mixture and place them in a baking pan.
  • Cover the pan and place it in the oven. Bake the fish for 20 - 25 minutes.
  • Remove from the oven, sprinkle with vinegar and serve hot.

If you think fish is difficult to make, then this is the recipe for you. Nothing could be easier. I serve this with wilted,garlic spinach and new potatoes.

2 lbs fish fillets (grouper,orange roughy, monk fish,cod, or any firm fleshed fish)
1 medium red onions or 1 medium Spanish onion, thinly sliced
1 -2 tablespoon fresh dill or 1 1/2 teaspoons dried dill
2 tablespoons chopped fresh parsley
1/4 cup fresh squeezed lemon juice
1 tomatoes, chopped
salt and pepper
1/2 cup feta cheese

Steps:

  • Preheat oven to 350.
  • Place the fish in an oiled casserole dish.
  • Top the fillets with the onion rounds and sprinkle them with the dill, pepper, parsley, lemon juice, chopped tomato, and feta cheese.
  • Bake for 20 minutes or until the fish flakes easily.
  • Baking time will depend on the thickness of the fish fillets.

1⁄4 cup olive oil
3 medium yellow onions, peeled and chopped
2 garlic cloves, chopped fine
2 (1 lb) cans peeled tomatoes, coarsely chopped
4 celery ribs, chopped
2 teaspoons salt
1⁄8 teaspoon cayenne pepper
1 bay leaf
1⁄2 cup dry red wine
4 cups water
1 lb whitefish boneless fillets
YOUR CHOICE - PICK 1/2 LB OF SEAFOOD
clam, rinsed
mussels, scrubbed clean and rinsed
crab
scallops
shrimp
squid, cleaned and cut into 1/2-inch circles

Steps:

  • 1. Heat a 6 quart heavy stockpot and add the oil, onion, and garlic. Saute until they are clear, about 5 minutes.
  • 2. Add the remaining ingredients, except the seafood, and simmer, uncovered, until the sauce is rich and full-flavored, about 1/2 hour.
  • 3. Add the fish and shellfish in the order given. This allows the ingredients time to cook. The clams will take longer than the squid.

4 tilapia fillets (4 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons plain yogurt
1 tablespoon butter, softened
1-1/2 teaspoons lime juice
1/2 small red onion, finely chopped
1/4 cup pitted Greek olives
1/2 teaspoon dill weed
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/4 cup crumbled feta cheese

Steps:

  • Sprinkle tilapia with salt and pepper. Place on a broiler pan coated with cooking spray., Combine the yogurt, butter and lime juice. Stir in the onion, olives and seasonings. Spread down the middle of each fillet; sprinkle with feta cheese., Broil 3-4 in. from the heat for 6-9 minutes or until fish flakes easily with a fork.
