GREEK CORNBREAD WITH FETA CHEESE
This moist cornbread is full of creamy feta, herbs, and veggies. It's not just for Thanksgiving! SErve this quickbread alongside any main course and it might become the star of the table. Enjoy!

Steps:
- Preheat the oven to 400 °F, 200° C.
- Combine the dry ingredients in a bowl and whisk together to combine.
- Combine the wet ingredients in another bowl and whisk together until combined.
- Add the dry ingredients to the wet ingredients and whisk until combined.
- Fold in the shredded zucchini, feta cheese, and red pepper.
- Grease a cast-iron skillet (or a 9-10-inch springform baking pan) with butter. Spread the batter in the prepared baking pan.
- Bake approximately 35-45 minutes or until a toothpick that is inserted in the center comes out clean.
- Set aside to come to room temperature and serve!
GRILLED CORN WITH FETA CHEESE

- Preheat the grill to medium-high heat.
- Rub the corn with olive oil and season with seasoning salt, to taste. Grill the corn until it's charred, on all sides, rotating for about 10 minutes.
- Meanwhile, mix the mayonnaise, chili powder, cayenne, lime juice and salt and pepper, to taste, together in a small bowl. Remove the corn from the grill and brush the hot corn with the mayonnaise mixture. Arrange on a platter and sprinkle with the feta cheese. Serve with lime wedges on the side.
SANTORINI WARM COUNTRY FETA
Steps:
- Thaw the frozen phyllo pastry sheets in the refrigerator overnight, and then bring these to room temperature prior to use for easier handling.
- Drain the feta cheese from the brine. Cut the block of feta using a thin, sharp knife into 6 slices, approximately 2 by 4 inches and 1/2-inch thick. Set the slices on a clean kitchen towel to dry.
- Lay the phyllo sheets on a flat surface and cut with kitchen scissors or a small sharp knife to size. They should be cut into rectangles, approximately 8 by 12 inches. Use a ruler if needed.
- Lay 1 cut piece of phyllo in front of you like a sheet of wrapping paper - the 12-inch length top to bottom. Place a slice of feta at the top end of the sheet slightly below the edge and wrap it up as you would a small package. Fold the top end of the sheet over the feta and then fold the left and right sides over. Flip the partly wrapped feta down the sheet towards you until it is fully wrapped. If needed, a little water can be used to seal the last edge of the sheet onto itself.
- Set aside with the sealed edge on the bottom of the package so the weight keeps the phyllo closed. Do not stack packages on top of each other. Continue to wrap all the pieces of feta.
- Heat the oil to 350 degrees F in a deep sided skillet using sufficient oil to float the package, about 3 to 5 inches of oil. Fry to a golden brown, about 5 minutes on each side. The pastry should puff up slightly. Remove with tongs or a slotted spoon and drain on a paper-towel lined plate.
- Serve each package on an individual plate or, if on a serving platter, do not stack the packages. Drizzle each package with about 2 tablespoons of honey and sprinkle with a teaspoon of black sesame seeds. Top with cut pieces of candied fig or a teaspoon of chunky fig jam.
MEDITERRANEAN CORN SALAD
A simple salad best served at room temperature, so it's perfect for summer BBQs and potlucks. I think some marinated artichokes and some sundried tomatoes would be good additions to this recipe as well. I also throw in about 1/2 tsp of Greek seasoning in mine. - Mix together corn, beans, peppers, feta, and onion.
- Mix oil, vinegar and garlic, then pour over the corn mixture.
- Gently stir to blend and chill several hours or overnight. Add salt and pepper to taste.
- Sprinkle top of salad with fresh basil just before serving. Tastes best at room temperature.

- Cook the corn cobs in a large pan of boiling water for 5 mins. Remove the pan from the heat and leave the corn in the water until ready to grill.
- Heat a griddle barbecue using direct heat. Just before serving, remove the cobs from the water, pat dry and brush all over with mayonnaise and chilli flakes. Season to taste, then cook for 5 mins, turning regularly until grill marks appear. Sprinkle the cobs with feta and coriander, then serve immediately with lime wedges to squeeze over when eating.

CORN SALAD WITH TOMATOES, FETA AND MINT
Fresh raw corn shucked from the cob is ideal here. The juice from the tomatoes delivers just the right amount of acidity, so there's no need for vinegar. Eat this as is, by the bowl, or toss it with cooked rice or beans for a more filling meal - you'll want to add oil and vinegar accordingly. In midsummer, with peak-season produce, there is nothing better.

- Grease and flour a 9x13x2-inch pan.
- Mix cornmeal, baking powder and sugar.
- In another bowl, combine squash, eggs, cottage cheese, feta cheese and milk.
- Add cornmeal mixture to wet ingredients and blend well.
- Pour into pan, Dot the top with butter.
- Bake until browned on top, about 1 hour.
