3 tablespoons lemon juice
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon salt
4 pounds frozen chicken wingettes, thawed
CUCUMBER SAUCE:
1/2 cup plain yogurt
1/2 cup chopped peeled cucumber
1/2 cup crumbled feta cheese
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1 garlic clove, peeled
Dash salt

Steps:

  • In a large resealable plastic bag, combine the lemon juice, oil, honey, oregano, garlic and salt. Add chicken wings; seal bag and toss to coat. Refrigerate overnight., In a blender, combine the sauce ingredients; cover and process until smooth. Transfer to a small bowl; cover and refrigerate until serving., Drain and discard marinade. Place wings on a rack in a greased 15x10x1-in. baking pan. Bake, uncovered, at 400° for 35-40 minutes or until juices run clear, turning once. Serve with cucumber sauce.

I adapted an old recipe for whole grilled chickens into a wing version for tailgating parties. You can marinade the chicken pieces ahead of time and transport to cooking site.

3 lbs chicken wings, prepared frozen pieces, thawed, rinsed and dried
1/4 cup olive oil
2 lemons, juice only
1/4 cup oregano, fresh, leaves only
3 garlic cloves, minced
1 1/2 teaspoons kosher salt
1/4 teaspoon black pepper, coarsely ground

Steps:

  • Place thawed chicken wings into gallon size zip top bag.
  • Combine olive oil, lemon juice, oregano, garlic, salt and pepper in a small mixing bowl. Pour over chicken pieces and seal bag. Refrigerate chicken pieces for at least two hours, turning over at least once during this time.
  • Preheat gas grill on high for five minutes.
  • Remove chicken pieces from marinade and place onto baking sheet lined with paper towels. Discard excess marinade.
  • Turn inside burners to medium low while leaving outside burners on high. Place chicken pieces on middle of grill skin side up. Cover and cook for 7 minutes. Turn pieces over and cook for another 5-7 minutes or until meat thermometer indicates 170 degrees F.
  • Serve while hot and juicy! Enjoy!

1 container (6 oz) Liberté® Méditerranée lemon yogurt
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
2 cloves garlic, finely chopped
1 tablespoon chopped fresh or 1 teaspoon dried dill weed
1 teaspoon salt
1/4 teaspoon pepper
24 chicken wing drummettes (about 2 lb)
1/4 cup sour cream
1/4 cup chopped cucumber
2 tablespoons chopped red onion
1 tablespoon chopped fresh or 1 teaspoon dried dill weed
1/4 teaspoon salt
1 teaspoon lemon juice

Steps:

  • In large resealable food-storage plastic bag, mix 2 tablespoons of the yogurt, the oil, 2 tablespoons lemon juice, the garlic, 1 tablespoon dill weed, 1 teaspoon salt and the pepper. Add chicken. Tightly seal bag; turn several times to coat chicken. Refrigerate 2 to 3 hours, turning occasionally.
  • Meanwhile, in small bowl, mix remaining yogurt and sauce ingredients until well blended. Cover; refrigerate until serving time.
  • Heat oven to 425°F. Line 15x10x1-inch pan with foil. Remove chicken from marinade; discard marinade. Arrange chicken in pan.
  • Bake 50 to 55 minutes, turning once, until chicken is no longer pink in center. Serve with sauce.

Marinated in wine, lemon juice and herbs, these juicy chicken wings are grilled until lightly charred and tender. A cooling yogurt sauce flecked with dill and garlic brightens them up.

Juice of 4 lemons (about 1/2 cup), plus more lemon wedges for serving
1 head of garlic, cloves separated and peeled
Kosher salt
2/3 cup extra-virgin olive oil
2/3 cup dry white wine
3 tablespoons dried mint
3 tablespoons dried oregano
4 pounds whole chicken wings
Freshly ground black pepper
1 cup plain full-fat Greek yogurt
3 tablespoons finely chopped fresh dill
Vegetable oil, for oiling the grill grates
Crumbled feta

Steps:

  • Combine the lemon juice, garlic and 2 tablespoons salt in a blender and blend on low until smooth. Transfer 2 tablespoons of the mixture to a medium bowl and reserve for the yogurt sauce. To the remaining garlic-lemon mixture still in the blender, add the olive oil, wine, mint and oregano and blend until evenly combined. Pour the marinade into a large bowl and add the chicken wings. Sprinkle with some pepper and toss to coat evenly, then cover with plastic wrap and refrigerate for at least 1 hour or up to overnight.
  • Meanwhile, make the yogurt sauce: Add the yogurt and dill to the bowl containing the reserved garlic-lemon mixture, season with pepper and stir until smooth. Transfer the sauce to a serving bowl, cover with plastic wrap and refrigerate until ready to serve.
  • Preheat a grill to medium heat. Lightly brush the grill grates with vegetable oil, then grill the chicken wings, turning often to prevent burning, until golden brown, lightly charred at the edges and cooked through, about 25 minutes.
  • Transfer the wings to a serving platter and season with salt. Drizzle with yogurt sauce and sprinkle with crumbled feta. Serve immediately with lemon wedges on the side.

2/3 c olive oil
2 Tbsp fresh lemon juice
2 Tbsp chopped fresh garlic
2 tsp dried oregano
2 tsp salt
1/2 tsp coarse ground pepper
1/2 tsp crushed red pepper
3 lb frozen chicken wing drummettes thawed (48 oz)
CUCUMBER DIPPING SAUCE
1 c yogurt, plain
1 c sour cream
1 small cucumber
1 Tbsp lemon juice
1 Tbsp dill weed, dried
1/2 tsp salt
1/4 tsp fresh ground black pepper, course

Steps:

  • 1. Combine all marinade ingredients, then pour over chicken in large zip lock bag. Coat chicken well with mixture. Refrigerate, turning occasionally for 3 hours or overnight.
  • 2. Heat oven to 400 degrees. Remove chicken from marinade and discard marinade. Arrange chicken on aluminum foil-lined 15x10x1 pan. Bake for 45 - 50 minutes, turning once.
  • 3. Cucumber Sauce needs to be combined and refrigerated for at least 2 hours but is best if made a day ahead. Peel, seed, and shred cucumber then combine all ingredients in small bowl.
