MY MOM'S GREEK LEMON RICE



My Mom's Greek Lemon Rice image

This was the Greek lemon rice that I grew up on. It's simple and flavorful. I hope you all enjoy it.

½ stick butter
2 cups converted long-grain white rice
1 (32 fluid ounce) container chicken broth
½ lemon, juiced
1 teaspoon salt
3 bay leaves

Steps:

  • Melt butter in a pot over low heat. Pour in rice and stir to coat in butter. Let simmer on low heat, stirring occasionally, until toasted but not burnt, about 10 minutes.
  • Pour chicken broth, lemon juice, salt, and bay leaves into rice mixture. Bring to a rapid boil; continue to boil for 5 minutes. Reduce heat to a simmer, cover, and let simmer for 20 minutes.
  • Remove from heat and let sit, covered, for 10 minutes. Fluff with a fork and serve.

My husband is of Greek decent, so I'm always interested in Greek recipes. This dish goes together easily and cooks quickly, plus it costs less than packages rice mixes.

Number Of Ingredients 7

1/2 cup uncooked long grain rice
1 cup plus 2 tablespoons water
1-1/2 teaspoons butter
1 teaspoon chicken bouillon granules
1 teaspoon minced fresh mint or 1/4 teaspoon dried mint
1 teaspoon lemon juice
1/8 teaspoon garlic powder

Steps:

  • In a small saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until rice is tender and liquid is absorbed.

Another favorite from "Culinary Journey to the Mediterranean" cookbook. Very flavorful rice dish. The feta melts and makes it nice and moist.

Number Of Ingredients 8

3 tablespoons extra virgin olive oil
1/3 cup finely chopped onion
1 1/2 cups long grain rice, uncooked
1 (13 3/4 ounce) can chicken broth or 1 (13 3/4 ounce) can vegetable broth
3/4 cup water
6 ounces feta cheese, crumbled
1/2-1 tablespoon freshly grated pepper
2 teaspoons dried oregano or 2 teaspoons of fresh mint

Steps:

  • Heat oil in medium saucepan. Add onion; cook and stir 3 to 4 minutes or until tender. Add rice; cook and stir 1 minute.
  • Stir in broth and water. Bring to a boil. Reduce heat to low; cover. Simmer 15 minutes or until liquid is absorbed.
  • While rice is cooking, mix pepper in with the feta cheese.
  • Stir cheese and oregano into the rice. Garnish with fresh herbs, if desired.
