Number Of Ingredients 6

1 cup flour
1 teaspoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 tablespoon shortening
1/3 cup milk

Steps:

  • Mix dry ingredients in large bowl. Blend in shortening with pastry blender. Stir in milk with a fork until soft dough is formed.
  • On lightly floured surface, knead dough 2 or 3 times. Cut into fourths, form each piece into a circle. Roll to 1/2 inch thickness.
  • Place two at a time into the deep fat fryer, turning to brown evenly on both sides. Cook for 4-5 minutes. Drain on paper towels.

Grebbel is deep-fried dough, something like a doughnut, which is fried and then served with powdered sugar sprinkled on it, while still warm. It is often eaten at breakfast and is very popular during Oktoberfest. This is an untried recipe (for me) but I've eaten these myself in Germany and they are very tasty. Recipe found on the Volga Germans in Portland, Oregon website, from the "Zion Daughter Cookbook", (Portland, Oregon) by Mrs. Peter Klaus. NOTE: Prep time includes 1-hour rise time for dough. Posted for ZWT6.

1/2 cup soft butter (no substitute)
1/2 pint sour cream (do not use fat free or low fat)
4 eggs, beaten
4 cups flour
1/4 teaspoon baking soda
2 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
canola oil or vegetable oil, for frying

Steps:

  • Sift dry ingredients together.
  • Combine butter, sour cream and eggs; blend together well. Add dry ingredients and mix together. (Makes a soft dough.)
  • Let dough rest at room temperature for 1 hour - it will rise.
  • Knead down and roll out on lightly floured board to about 1/8" thick.
  • Cut into desired shape (3" X 5" strips) and cut center slits (2).
  • Push dough through slits (this creates a twist) and drop into 350 degree hot oil.
  • Watch closely and turn over and fry to lightly browned.
  • Drain on paper towels, shake on powdered sugar and enjoy!

1 cup heavy sweet cream or 1 cup sour cream
1/2 teaspoon baking soda (If sour cream is used)
4 eggs, seperated
2 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
3 cups unsifted flour

Steps:

  • Beat egg yolks with sugar until lemon colored.
  • Beat whites in bowl.
  • Whip cream slightly.
  • Combine yolks, whites, and cream.
  • Sift flour with baking powder (and soda if used).
  • Mixed flour with creamed mixture.
  • Put dough on floured board and work in 1/2 cup flour.
  • Set aside in a covered bowl for 2 hours.
  • Roll dough to 1/4 inch thick.
  • Cut into strips about 3" x 5" and cut 2 slits in each strip.
  • Pull dough through slits.
  • Heat cooking oil, and fry on both sides until brown.
  • Remove and drain on paper towels.
  • Sprinkle with sugar or powder sugar.
