MOM'S GREAT GREEN BEANS



Mom's Great Green Beans image

2 (15 ounce) cans green beans
1 cube beef bouillon cube
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 tablespoon butter
⅛ teaspoon garlic pepper seasoning

Steps:

  • Drain the green beans, reserving 1/2 of the liquid. Dissolve the bouillon cube in the reserved liquid.
  • Place green beans and liquid in a saucepan. Add Worcestershire sauce, soy sauce, butter or margarine and garlic pepper seasoning to taste. Simmer gently for 15 minutes.
  • Remove to serving bowl leaving beans sitting in their liquid. Use a slotted spoon to serve.

A long-time family favorite. I've always brought home an empty dish when this is on the table. If you're tired of themushrooms, cream sauces, canned onions, and cheese, this is for you. No oven needed here; a big plus. Using an electric skillet frees up your stove top as well. Fresh is always best, but beans of quality may be hard to find this time of year. Canned or frozen instead will make a good dish. The optional use of yellow wax beans is an eye-pleaser and provides an interesting taste variation. Bump up a like amount of green beans if yellow beans are not used.

4 slices smoked bacon, or more to taste
½ cup chopped yellow onion
2 pinches ground black pepper
2 cloves garlic, diced
3 ½ tablespoons chopped fresh parsley, divided
4 (15 ounce) cans green beans, drained
2 (14.5 ounce) cans yellow wax beans, drained
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat until evenly browned, about 10 minutes. Transfer bacon slices to paper towels to drain.
  • Cook and stir onion and 2 pinches black pepper in hot bacon drippings until translucent, 4 to 6 minutes.
  • Stir garlic into onion mixture; cook and stir until onion begins to brown along the edges, 4 to 6 minutes. Add 1 tablespoon parsley to garlic and onion; cook and stir until parsley begins to wilt, 1 minute.
  • Pour green beans, yellow beans, and 1 1/2 tablespoons parsley into onion mixture; gently turn beans to coat with bacon drippings. Reduce heat to low, partially cover skillet, and simmer until beans are heated through, 5 to 10 minutes.
  • Season beans with salt and black pepper to taste, partially cover the skillet and continue simmering, turning occasionally, until beans are hot, 20 minutes. Garnish with bacon and remaining 1 tablespoon parsley.

1/2 cup chopped onion
1 clove garlic, minced
2 tablespoons olive oil
1 (28 ounce) can diced tomatoes
1/4 cup sliced black olives
1 teaspoon dried oregano, crushed
1 (16 ounce) package frozen French-cut green beans, thawed
1/2 cup crumbled feta cheese (2 oz)

Steps:

  • In a large skillet cook onion and garlic in hot olive oil about 5 minutes or until tender.
  • Add undrained tomatoes, olives, and oregano.
  • Bring to a boil; reduce heat.
  • Boil gently, uncovered for 10 minutes.
  • Add beans.
  • Return to boiling.
  • Boil gently, uncovered, about 8 minutes or until desired consistency and beans are tender.
  • Transfer to a serving bowl; sprinkle with feta cheese.
  • If desired, serve with a slotted spoon.

1 lb fresh green beans
3 garlic cloves, crushed and easy chopped
1 tablespoon canola oil
1/2 teaspoon red pepper flakes
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1 tablespoon honey (pref. raw-thick type)
1/8 teaspoon cornstarch
1/4 teaspoon pepper
1/4 teaspoon toasted sesame oil
1/4 teaspoon ground ginger
1/8 teaspoon Lawry's Seasoned Salt
1 pinch cinnamon
1/2 teaspoon sesame seeds

Steps:

  • Wash and cut ends off your beans and place them in a large skillet with 4 cups of water. Bring to a boil, then boil beans for 5 minutes.
  • After boiling, pour beans into a collander and dump the water.
  • In a small bowl; mix together rice vinegar, honey, Lawry's, cornstarch, soy sauce, pepper, red pepper flakes, toasted sesame oil, ginger, and cinnamon.
  • Heat the canola oil on med-high in your skillet and add the garlic. Saute garlic for 1 minute then add back your beans and the marinade. Stir fast.
  • Saute beans on med heat for 8 minutes, stirring often.
  • Remove skillet from burner and let beans continue to sizzle just from the heat of the pan.
  • When sizzling stops, sprinkle sesame seeds on top and serve.

2 cups cut fresh green beans
1 cup chicken broth
1 garlic clove, minced
2 tablespoons butter
2 tablespoons minced fresh parsley
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1/8 teaspoon garlic salt
1 tablespoon shredded Parmesan cheese

Steps:

  • In a small saucepan, bring the beans and broth to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until crisp-tender. , In a small skillet, saute garlic in butter until tender. Stir in the parsley, rosemary and garlic salt. Drain beans; drizzle with butter mixture and toss to coat. Sprinkle with Parmesan cheese.

Every year, Mom cans green beans from our garden. I love them, but I get tired of the plain old "heat 'em up with bacon grease" beans. So...this recipe came out of the desire to eat green beans a different way. It's easy enough for a weeknight, nice enough for company. Since not everyone has access to canned green beans, I made them with canned green beans to get the measurements exact for posting.

1/2 cup fresh mushrooms, sliced
1 garlic clove, diced
2 (15 1/2 ounce) cans green beans

  • Cook until browned, stirring occasionally.
  • Add the mushrooms and garlic, and reduce the heat to medium-low.

This recipe is for green beans and potatoes that is so yummy. Now it could be made better with more butter, bacon grease, etc but to keep it at 3 pts for Weight Watchers it needs to be as written. It is super good. My mother in law is very picky and she liked it a lot. My kids who won't eat garlic usually had seconds. The secret ingredient is the sugar as small as it is so don't leave it out. Tastes good with yukon gold small potatoes also. This recipe came from an internet site a while back and the original creator was unknown then. It has been a favorite. Enjoy! ChefDLH

water, to cover both the potatoes and beans
1 tablespoon kosher salt
1 teaspoon sugar (don't skip even on a diet, it really makes the difference)
1 lb very small red potato, washed well, skins on
1 lb fresh green beans, stem ends snapped off, broken in half
1 tablespoon garlic, in a jar, to taste or
2 -3 fresh garlic cloves, minced very tiny
2 tablespoons unsalted butter
additional salt

Steps:

  • Start the water, salt and sugar to a boil while prepping the potatoes.
  • Add the potatoes as soon as they're prepped, cover and let cook until nearly done. (Actual time will vary based on the size and density of the potatoes. The tiny potatoes took only about 20 minutes, others longer.)
  • Add the beans, return to a boil and cook for about 7 minutes or until the beans are well-cooked but still bright green.
  • Drain.
  • Return to the hot pot and toss with garlic and butter. Add salt if needed.
