A friend in Germany convinced me that Brats were born for the grill, however, this stove top method rocks for brats. I recently bought some butcher-stuffed brats in Chicago along with some fine beer and we had some brats that rock.

1 lb bratwurst (uncooked is fine)
8 ounces beer (good quality, not light)
1 medium onion (sliced)
4 hot dog buns (I used brat rolls)
good mustard

Steps:

  • Slice onion and place in 9 to 10 inch skillet.
  • pour in bottle of beer.
  • add brats and simmer until onion is tender and brats are firm and cooked through (160 F internal temp).
  • When beer has evaporated, allow brats and onions to brown while turning frequently, adding a little oil if the pan needs it.
  • When the onions turn golden, remove.
  • When the brats are browned on all sides, plate them.
  • Wrap the buns in paper towels and microwave on high for about 30 seconds until soft and warm.
  • Serve with baked beans and or chips.

4 bratwursts (pre cooked beer brats, any kind, no holes poked in them)
4 sausage buns
2 tbsp mustard (dijon)
2 tbsp ketchup

Steps:

  • Preheat grill to 350 degrees F. (This grill temperature is crucial for maintaining the juiciness and flavor and keeps you from having to poke holes in the brats).
  • Place pre cooked brats directly on grill grates over the heat and cook for 20 minutes (up to 30 minutes), flipping them about every 5 minutes. When grilled brats temperature reaches 160°F, as measured with an internal meat thermometer, then they are ready to come off the grill.
  • Remove brats from the grill and rest on a cutting board for about 10 minutes. During this time, prepare condiments so they are ready to serve.
  • Toast your beer brat sandwich buns if desired. We like to toast sausage buns on the grill for 1-2 minutes, until a lite char is formed on the outside. Or, we just pop the buns in the air fryer at around 350 degrees F for 3 minutes to lightly brown.
  • Assemble grilled brats sandwiches by placing each brat into a bun and topping with dijon mustard and ketchup, or your favorite condiments. Enjoy!

Everyone knows that boiling bratwurst in beer is a great way to prepare them, but what if you don't have or can't use beer? Try this substitute recipe that makes delicious bratwurst.

2 onions, cut into 6 pieces
10 garlic cloves, minced
2 liters ginger ale
1 (16 ounce) jar sauerkraut with liquid
ground black pepper to taste
6 fresh bratwurst sausages

Steps:

  • Combine the onions, garlic, ginger ale, sauerkraut with liquid, and pepper in a large pot; bring to a boil. Reduce heat to low and simmer another 7 to 10 minutes. Add the bratwurst and simmer until the sausages are cooked through, about 15 minutes. Drain, and serve with sauerkraut.

SHEBOYGAN GRILLED BRATS



Sheboygan Grilled Brats image

Growing up on a lake in the Sheboygan area, this was a standard way that the German folks would grill their brats. We always served them on the old-fashioned hard rolls. By finishing them in the beer sauce they just get better and better. Though it's expensive, on special occasions I use a dark beer which is not German at all: Guinness Irish Stout. Around our house, we eat them with ketchup and mustard, and the cooked onions from the brat sauce.

¼ cup butter
2 medium onions, thinly sliced
3 cloves garlic, chopped
4 (12 ounce) bottles dark beer
2 pounds fresh bratwurst
10 hot dog buns

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Melt butter in a large skillet over medium heat, cook and stir the sliced onions for 5 to 10 minutes, or until tender and translucent. Add the chopped garlic and cook, stirring, for an additional 2 minutes. Add the beer and let simmer while the bratwursts are cooking on the grill.
  • Grill the bratwursts for 30 to 35 minutes, turning often. Be careful not to poke holes in the casing. Remove the bratwursts from the grill and simmer in the beer sauce for an additional 10 to 15 minutes. Serve hot with onions on the rolls.
